Thermal fogging with disinfectants and antifreezes enables effective industrial disinfection in subzero cold-chain environment.

AIM: During several local COVID-19 outbreaks in China in 2020, SARS-CoV-2 or its RNA was isolated or detected from frozen food or packages, revealing the lack of effective disinfection measures in the frozen food chain and risk of transmission. We explored the possibility that disinfectant plus antifreeze could be delivered as thermal fog to realize effective disinfection at subzero temperatures. METHODS AND RESULTS: We selected two disinfectant-antifreeze combinations, didecyl dimethyl ammonium bromide (DDAB) - propylene glycol (PPG) and peracetic acid (PAA) - triethylene glycol (TEG), and e

Ultrasound-assisted production of alcoholic beverages: From fermentation and sterilization to extraction and aging.

Ultrasound is sound waves above 20 kHz that can be used as a nonthermal ''green'' technology for agri-food processing. It has a cavitation effect, causing bubbles to form and collapse rapidly as they travel through the medium during ultrasonication. Therefore, it inactivates microorganisms and enzymes through cell membrane disruption with physicochemical and sterilization effects on foods or beverages. This emerging technology has been explored in wineries to improve wine color, taste, aroma, and phenolic profile. This paper aims to comprehensively review the research on ultrasound application

Effect of changes in salt content and food thickness on electromagnetic heating of rice, mashed potatoes and peas in 915 MHz single mode microwave cavity.

A mathematical model for predicting electromagnetic power dissipation within a rectangular dielectric slab heated by equal intensity 915 MHz plane waves from top and bottom was developed. A dimensionless parameter (J-T number) which is a combination of the loss factor (εr″), dielectric constant (εr') and food thickness (L) was proposed. This unique number provided direct insight into the relationship between food dielectric properties, thickness, product temperature, and thermal lethality. For the validation tests, mashed potatoes, peas and rice samples with 0-2% salt content were processed in

Listeria monocytogenes in Foods.

Listeria monocytogenes causes listeriosis, a rare foodborne disease with a mortality rate of 20%-30%. The elderly and immunocompromised are particularly susceptible to listeriosis. L. monocytogenes is ubiquitous in nature and can contaminate food-processing environments, posing a threat to the food chain. This is particularly important for ready-to-eat foods as there is no heat treatment or other antimicrobial step between production and consumption. Thus, occurrence and control of L. monocytogenes are important for industry and public health. Advances in whole-genome sequence technology are f

Chitosan nanoplatforms in agriculture for multi-potential applications - Adsorption/removal, sustained release, sensing of pollutants & delivering their alternatives - A comprehensive review.

An increase in the global population has led to an increment in the food consumption, which has demanded high food production. To meet the production demands, different techniques and technologies are adopted in agriculture the past 70 years, where utilization of the industry-manufactured/synthetic pesticides (SPTCs - e.g., herbicides, insecticides, fungicides, bactericides, nematicides, acaricides, avicides, and so on) is one of them. However, it has been later revealed that the usage of SPTCs has negatively impacted the environment - especially water and soil, and also agricultural products

Closing the micronutrient loop: recovering and redirecting trace elements from food supply chains for a circular and nutrition-secure future.

Micronutrient deficiencies remain a major issue in the lives of billions of people worldwide. Meanwhile, significant losses occur along the food chain for many important micronutrient trace elements, which further compounds this global nutrition problem. The micronutrient stream of iron, zinc, selenium, copper and others are lost in agriculture residues, food processing by-products, retail waste, wastewater and post-consumer organic wastes. These deficiencies do not only lower nutritional efficiency, but also lead to environmental degradation and resource depletion. In response, approaches to

Recent advances in dysphagia management.

The literal definition of dysphagia is "disturbed eating". However, it is more accurately described in clinical practice as a sensation of food or liquid being stuck in the esophagus or chest. If this sensation is associated with pain, it is labeled odynophagia, and if it is associated with persistent obstruction and bolus retention, it is categorized as a food impaction. Through research and technological advances, we continue to expand our understanding of the etiologies and underlying pathophysiology relating to this complaint. However, for now, our clinical algorithms focus on endoscopy an

Impact of Different Application Parameters of Cold Atmospheric Plasma on Foodborne Pathogen Inactivation.

Foodborne pathogens are a major public health concern, causing millions of illnesses and deaths yearly. Traditional thermal processing methods, such as cooking and pasteurization, are effective at killing pathogens, but they can also damage food quality. Cold atmospheric plasma (CAP) can inactivate foodborne pathogens without damaging food quality. CAP has several advantages over traditional thermal processing methods. It is a non-thermal process, meaning that it does not heat food. This can help to preserve the nutritional and sensory quality of food. CAP can be targeted to specific areas of
