Training in tools to develop Quantitative Risk Assessment using Spanish ready-to-eat food examples.

Unsafe food poses global health threats, potentially endangering consumers. The great majority of people will experience a food-borne disease at some point in their lives. Ready-to-eat (RTE) food is the one intended by the producer or the manufacturer for direct human consumption without the need for cooking or other processing effective to eliminate or reduce the concentration of pathogenic microorganisms. Prepared foods are often complex and may contain multiple components that make them vulnerable for growth of pathogenic microorganisms. Among all the pathogenic microorganisms that may be p

Type E botulism.

There are seven known serotypes of botulism, designated A through G; almost all human cases of botulism are caused by types A, B, and E. Botulism type E is the predominant serotype causing disease associated with native Arctic foods. In the circumpolar regions of the world, the coastal soils are rich in botulism type E, and consumption of fish and marine animals in these areas are the sources of clusters of botulism. Unlike spores of type A and B, botulism type E can withstand freezing down to 3.5°C. Alaskan native fermentation of fish heads, fish eggs, and beaver tail allow proper anaerobic c

Microbial fermentation-mediated starch modification: Structural evolution, mechanistic insights, traditional application and future perspectives.

Native starch has intrinsic drawbacks, including retrogradation, syneresis, poor shear stability, weak texture, and low viscosity, which restrict its applications in the food industry worldwide. Fermentation is a mild and sustainable modification method that can reduce retrogradation and syneresis, improve rheological, textural, and thermal properties, and modulate starch digestibility. Unlike previous reviews that mainly summarize fermentation-mediated quality changes, this review integrates predominant microorganisms, fermentation strategies, and traditional food applications, with a core fo

Gut-Liver Axis Dysfunction in Alcohol-Associated Liver Disease and the Potential Role of Sheep Yogurt: A Scoping Review and Mechanistic Framework.

Background/Objectives: Alcohol-associated liver disease (ALD) is driven by gut-liver axis dysfunction, including intestinal barrier disruption, dysbiosis, microbial translocation, inflammation, metabolic dysfunction, and malnutrition. Fermented dairy foods may modulate several of these domains, yet whether sheep yogurt, as an intact fermented dairy matrix, is relevant in ALD is unknown. This scoping review mapped evidence relevant to sheep yogurt, ALD, and gut-liver axis biology. Methods: A PRISMA-ScR-guided scoping review searched PubMed/MEDLINE, Web of Science, Scopus, and Google Scholar fro

Assessment of Antioxidant Functions of Food Using Electron Paramagnetic Resonance Spectrometry: Verification Using Vinegar Samples.

The abilities of food products to quench superoxide (O2 •-) and the hydroxyl radical (•OH) and to directly reduce stable nitroxyl radicals were assessed in the present study using electron paramagnetic resonance (EPR)-based methods. The antioxidant functions of vinegar samples, including 1- and 2-year-fermented black vinegar, were also examined. The abilities of the vinegar products to quench O2 •- were in the order of 2-year-fermented black vinegar ≈ 1-year-fermented black vinegar > standard vinegar. Standard vinegar, 1-year-fermented black vinegar, and 2-year-fermented black vinegar did not

Survival of selenium-enriched lactic acid bacteria in a fermented drink under storage and simulated gastro-intestinal digestion.

Selenium (Se), which is present as SeCys in seleno-proteins, is involved in cancer prevention, thyroid functioning, and pathogen inhibition. Se is incorporated in the diet through Se-containing foods. Some lactic acid bacteria (LAB) can biotransform selenite (toxic) into Se-nanoparticles (SeNPs) and Se-amino acids. To exert their beneficial properties in the host, bacteria should survive the harsh conditions of the gastrointestinal tract and during food storage. We evaluated whether selenization of LAB influenced bacterial growth and survival during gastrointestinal digestion and after storage

Traditional Maori food preparation methods and food safety.

Descriptions were obtained from Maori elders knowledgeable in traditional methods for the processing of Tiroi (mussels and Puha), Kina (sea urchins), Kanga Kopiro (fermented maize) and Titi (muttonbird). Information for a number of variations of each method was transformed into process flow charts, and these charts were analysed using a HACCP-based approach. Two of the processes (Kanga Kopiro and Titi) were found to be likely to produce safe foods as Kanga Kopiro undergoes an acid fermentation and Titi preparation involves significant cooking steps. However, the information regarding Tiroi and

Fermentation-Dependent Cell Wall-Associated Immunostimulation in a Red Pepper-Based Lactiplantibacillus plantarum CJLP243 Fermentate.

Lactic acid bacteria-fermented food materials are promising sources of functional ingredients, but the active components underlying their bioactivity often remain unclear. We localized the macrophage-stimulatory activity of a red pepper-based fermentate prepared with Lactiplantibacillus plantarum CJLP243. Compared with the unfermented matrix and a non-fermented matrix supplemented with freeze-dried CJLP243, the fermentate induced greater IL-6 and TNF-α production in J774A.1 macrophages. Activity was reproducibly concentrated in the pellet-derived lysate-insoluble fraction (PDIF) and remained i

Decoding the aroma landscape of fermented golden pompano: The interplay of ester compounds and symbiotic microbiota as revealed by metagenomics and two-dimensional flavoromics.

Fermented pompano (Trachinotus ovatus) is a traditionally popular fermented seafood throughout Asia. Its distinctive flavor profile is primarily attributed to the microbial metabolic conversion of nutrients, which produces specific volatile compounds. Two-dimensional flavoromics of mature pompano revealed that various volatile flavor compounds accumulate throughout fermentation, with fruity (predominantly esters) and oleogustus (primarily ketones) being key flavor markers. S-curve analysis further demonstrated synergistic and additive interactions between these compounds, which enhance flavor

Species-level understanding of the bacterial community in Daqu based on full-length 16S rRNA gene sequences.

Daqu is used as the fermentation starter of Baijiu and contributes diversified functional microbes for saccharifying grains and converting sugars into ethanol and aroma components in Baijiu products. Daqu is mainly classified into three types, namely low (LTD), medium (MTD) and high (HTD) temperature Daqu, according to the highest temperatures reached in their fermentation processes. In this study, we used the PacBio small-molecule real-time (SMRT) sequencing technology to determine the full-length 16 S rRNA gene sequences from the metagenomes of 296 samples of different types of Daqu collecte

Serum and Urine Metabolites in Healthy Men after Consumption of Acidified Milk and Yogurt.

The identification of molecular biomarkers that can be used to quantitatively link dietary intake to phenotypic traits in humans is a key theme in modern nutritional research. Although dairy products (with and without fermentation) represent a major food group, the identification of markers of their intake lags behind that of other food groups. Here, we report the results from an analysis of the metabolites in postprandial serum and urine samples from a randomized crossover study with 14 healthy men who ingested acidified milk, yogurt, and a non-dairy meal. Our study confirms the potential of

Influence of different processing method on lignan content of selected Malaysian plant-based foods.

This research assessed the influence of pickling, fermentation, germination, and tea brewing on lignan content of a variety of food highly consumed in Malaysia. Lignans have been measured by a validated LC-MS/MS method. Secoisolariciresinol (SECO) was the most abundant compound in fermented and germinated samples. Pickling significantly decreased larisiresinol content by approximately 86 %. Fermentation increased lignan content in a mixture of flaxseed and mung beans (799.9 ± 67.4 mg/100 g DW) compared to the unfermented counterpart (501.4 ± 134.6 mg/100 g DW), whereas the fermentation of soyb

Market potential for probiotics.

"Functional foods" as a marketing term was initiated in Japan in the late 1980s and is used to describe foods fortified with ingredients capable of producing health benefits. This concept is becoming increasingly popular with consumers because of a heightened awareness of the link between health, nutrition, and diet. Food manufacturers are enthusiastic about developing such products because the added ingredients give increased value to food. The global market for functional foods in the coming years is predicted to grow rapidly. Although Japan currently accounts for about one-half of this mark

Aroma-oriented starter culture selection reveals strain-dependent flavor formation in fermented chili peppers.

Yeasts play a crucial role in aroma formation during chili pepper fermentation, but strain-dependent insights into yeast-driven flavor formation remain limited. In this study, aroma-producing yeasts were isolated from aged fermented chili peppers and screened using an aroma-oriented strategy. Five representative yeasts were selected and characterized for phenotypic and metabolic traits, esterase activity, and safety. During fermentation, yeast inoculation had limited effects on acidification but significantly influenced sugar utilization, capsaicinoid transformation, taste attributes, and vola
