Ultra-processed food intake and risk of type 2 diabetes: a pooled analysis of three prospective cohorts of Korean adults and an updated meta-analysis.

Studies suggest a positive association between ultra-processed food (UPF) intake and type 2 diabetes risk. However, studies were primarily conducted in Western populations with diets and disease profiles different from populations living elsewhere. In addition, the dose-response relationship needs to be further elucidated. We conducted an individual-level pooled analysis of three Korean prospective cohorts (n = 72,776). UPF intake (in the percentage of g/d as the main UPF unit) was assessed using validated food frequency questionnaires and categorized according to Nova classification. Cox prop

Development of a simple and reliable LC-MS/MS method to simultaneously detect walnut and almond as specified in food allergen labelling regulations in processed foods.

We developed a simple and reliable analytical method using high-performance liquid chromatography-tandem mass spectrometry (LC-MS/MS) to simultaneously detect walnut and almond as specified in regulations for food allergen labelling in processed foods. Five specific target peptides derived from walnut 2S albumin and 7S globulin and three target peptides from almond 11S globulin were selected by analysing several varieties of walnut and almond, eight kinds of other nuts, and ten kinds of major allergen ingredients or cereals. The limit of detection for the walnut 2S albumin peptide GEEMEEMVQSAR

The "pro-inflammatory imprint" of ultra-processed food exposure: a review of mechanisms affecting child and adolescent health and development via the gut microbiome-inflammation axis.

The prevalence of ultra-processed food (UPF) consumption in pediatric diets has raised significant concerns regarding long-term health. This review examines evidence for a proposed 'pro-inflammatory imprint' involving the gut microbiome-inflammation axis. Using a structured narrative synthesis of pediatric observational evidence, adult intervention studies, preclinical research, multi-omics data, and public health evaluations, we examine associations between UPF exposure and metabolic, inflammatory, cognitive, and neurodevelopmental outcomes while distinguishing direct from indirect evidence.

A unified theory of restrictive and addictive eating: a life course model integrating generational transmission, neurodevelopmental risk, and ultra-processed food use disorder-a theoretical review.

BACKGROUND: Eating disorders (EDs) and ultra-processed food use disorder (UPFUD) have traditionally been examined as separate entities, resulting in ongoing tension between two primary perspectives: (1) dietary restraint as the main driver of loss-of-control eating pathology, and (2) the influence of the contemporary food environment, combined with stressors, as the driver of addiction-like food consumption. Both perspectives acknowledge developmental trauma as a key predisposing factor. METHODS: Drawing from relevant articles in the PubMed, Scopus, PsycINFO, and Google Scholar databases, thi

Effects of ultra-processed food reduction intervention on postprandial glucose and glycaemic variability in Korean young adults: study protocol for the ULTRA-CGM randomised controlled trial.

INTRODUCTION: High intake of ultra-processed foods (UPFs) is associated with an increased risk of type 2 diabetes. However, evidence from randomised controlled trials evaluating the effect of UPF reduction on postprandial glucose responses and glycaemic variability in young adults is limited. The Ultra-Processed Food Reduction Intervention and Continuous Glucose Monitoring (ULTRA-CGM) trial aims to evaluate the effects of a UPF-reducing dietary intervention on postprandial glucose responses and glycaemic variability in healthy Korean young adults. METHODS AND ANALYSIS: This is a parallel, two

Impact of dietary ultra-processed food restriction on withdrawal symptoms in individuals with obesity undergoing a weight loss diet: Secondary analysis of a randomized clinical trial.

BACKGROUND & AIMS: Ultra-processed foods (UPF) are typically hyperpalatable and prone to induce cravings and loss-of-control eating, particularly among individuals with obesity undergoing weight loss. This study evaluated whether restricting UPF intake leads to withdrawal symptoms in individuals with obesity and examined its associations with anxiety and food addiction (FA). METHODS: Secondary analysis of a randomized clinical trial in which individuals were assigned to either a generic energy restriction (ER-G) or an energy restriction combined with UPF restriction (ER-UPF). Dietary intake,

First do no harm: the impact of assessing for ultra-processed food addiction on dietary restraint in patients with and without eating disorders during residential treatment.

OBJECTIVE: Ultra-processed food addiction (UPFA) is increasingly recognized but remains controversial among eating disorder (ED) clinicians, partly due to concerns that introducing food addiction concepts might intensify dietary restraint, a core feature of EDs. This study examined whether integrating UPFA assessment, psychoeducation and treatment into residential treatment (RT) impacts ED symptomatology, particularly dietary restraint. METHODS: Adults (N = 132) admitted to RT completed the Eating Disorder Examination Questionnaire (EDE-Q) and the modified Yale Food Addiction Scale 2.0 (mYFAS

Molecular and environmental indicators of Listeria monocytogenes persistence in food processing facilities: a multi sector approach.

Listeria monocytogenes is a foodborne pathogen capable of persisting in food processing environments. This persistence results from interactions between strain-specific traits and environmental conditions. This study aimed to identify molecular and environmental indicators associated with L. monocytogenes persistence across high-risk food production sectors. Three environmental sampling events were conducted in nine facilities from seafood, vegetable, and pork (n = 3 each) sectors. In total 1097 samples were analysed for the presence of L. monocytogenes, the temperature, and surface characteri

Assessing the role of ultra-processed foods in colorectal cancer incidence: insights from the EPIC cohort.

BACKGROUND: Studies have reported associations between ultra-processed food (UPF) consumption and colorectal cancer (CRC) incidence, yet the magnitude of these associations remains unclear. This study estimated the cohort-associated fraction (CAF), adapted from the population-attributable fraction metric, between UPF consumption and CRC incidence and explored the potential benefits of substituting UPFs with unprocessed or minimally processed foods. METHODS: Using data from 416,081 middle-aged adults in the European Prospective Investigation into Cancer and Nutrition (EPIC) cohort, including 5,

Inhibition of calpain-mediated HMGB1 alleviates cardiac inflammation and dysfunction induced by ultra-processed foods.

Increased consumption of ultra-processed foods (UPFs) is a risk factor for metabolic disorder-associated heart failure (HF). Here, we demonstrate that UPF-induced calpain-1 aggravated oxidative stress, thereby increasing high mobility group box 1-mediated (HMGB1-mediated) myocardial inflammation, which contributes to cardiac dysfunction. After illustrating the dysregulated inflammatory pathways in human and murine hearts upon metabolic stress, we revealed an increase in calpain-1 alongside profound oxidative stress and inflammation in the failing myocardium. Mechanistically, in neonatal rat ca

Unlocking the Bioactivity of Cyperi Rhizoma as a Functional Food: Insights From Culinary Processing and Herb Combinations.

Cyperi Rhizoma (CR), a globally invasive weed threatening major crops, paradoxically represents an underutilized resource for sustainable nutraceutical development. In order to transform this agricultural pest into a viable functional food ingredient, this review explores how culinary-inspired processing (vinegar, wine, salt, etc.) and food-compatible botanical pairings synergistically enhance the bioactivity of CR. We demonstrate that traditional processing deglycosylates flavonoids and modulates volatile oils, boosting bioavailability and analgesic, antidepressant efficacy validated in vivo.

Risk-benefit analysis of sampling plans in food processing facilities using the risk assessment framework.

This study presents a quantitative microbiological risk assessment (QMRA) model to evaluate the public health, economic, and environmental implications of microbiological sampling plans for Salmonella spp. in chicken patties. The farm-to-fork model includes production, processing, storage, cooking, and consumption modules, and incorporates a sampling algorithm that simulates batch-level testing under the current EU microbiological criterion (n = 5, c = 0) as well as alternative sampling intensities. Coupling exposure estimates with a dose-response model allows quantification of expected salmon

Ultra-Processed Foods and Inflammatory Bowel Disease: A Narrative Review of Epidemiology, Mechanisms, and Dietary Implications.

Ultra-processed foods (UPFs), industrial formulations rich in refined substrates and additives, have been increasingly examined as plausible contributors to gut dysbiosis and mucosal inflammation relevant to inflammatory bowel disease (IBD). This narrative review synthesizes epidemiological, mechanistic, and interventional evidence on UPF intake and IBD based on a structured literature search from 2010 to 2025. Large-scale prospective cohorts consistently associate higher UPF intake with increased risk of Crohn's disease (CD), whereas findings for ulcerative colitis (UC) remain weaker or incon
