[Micromycetes, mycotoxins and human health].

Mycotoxins are toxic metabolites produced by certain toxigenic microscopic fungi (moulds) in and on foods. Consequently mycotoxin-containing foods have been found all over the world: Africa, Asia, North and South America, Australia and Europe. The extent of the problem is greater in some parts of the world than in others because their climatic conditions are more favourable for mould growth and thus synthesis of mycotoxins. These toxins have been associated with various diseases-mycotoxicoses in humans throughout the world (ergotism, alimentary toxic aleukia, aflatoxicosis, balkan nephropathy,

Titanium: a promising new material for food contact. A study of titanium resistance to some aggressive food simulants.

It is well known that titanium is one of the most rugged metals; therefore it has been extensively used in many critical fields. However, the lowering of price and an increased availability of titanium has made this material suitable to be used in other industrial fields, such as the food industry. The present paper reports the results of an assessment that concludes that titanium could be regarded as a candidate food-grade material.

Clostridium botulinum and Acid Foods 1, 2.

Outbreaks of botulism involving acid foods are rare. Of the 722 total botulism outbreaks reported from 1899 to 1975, only 34 (4.7%) involved acid foods. Home-canned acid foods were implicated in 34 of the 35 acid food outbreaks. Clostridium botulinum cannot grow at a pH of ⩽ 4.6; therefore, for a botulism hazard to exist in an acid food, a contamination with other microorganisms due to a process delivery failure and/or post-process contamination, (c) favorable composition of the food and storage conditions which are particularly conducive to C. botulinum growth and toxin production, and (d) me

Imidazolium polymerized ionic liquid-based membranes for the early warning detection of aflatoxins in fermented foods.

This study uses porous ionic liquid gel membranes (PILs) for early-warning detection of aflatoxins (AFTs) in fermented foods. We prepared a stable, cross-linked membrane by embedding imidazolium-based ILs into hydroxyethyl cellulose‑sodium polyacrylate. Its mild, tunable adsorption captures unstable AFT precursors and enables accurate, nondestructive quantification in complex food matrices. [AVIM]Br membranes selectively bind coumarin-type AFTs via amine groups (91.7-99.3% recovery); [BVIM]Br membranes bind anthraquinone-type precursors via phenylboronic acid (73.1-99.4% recovery). Coupled wit

Aflatoxins mitigation in peanut meals: From single treatments to integrated strategies.

As a protein-rich by-product of peanut oil extraction, peanut meal is widely used in animal feed. It is also becoming more widely acknowledged as a viable source of protein for food products. However, it is highly vulnerable to contamination by aflatoxins (AFTs), particularly aflatoxin B1, which has been designated as a class I carcinogen by the World Health Organization. AFTs in peanut meal pose serious hazards to food and feed safety. It may cause large financial losses, which limit its use. Currently, physical, chemical, or biological strategies are employed, each presenting significant pra

Comprehensive Screening of Per- and Polyfluoroalkyl Substances (PFAS) in Food Contact Materials: Utilizing Combustion Ion Chromatography for Total Organic Fluorine (TOF) Analysis.

BACKGROUND: Per- and polyfluoroalkyl substances (PFAS) comprise thousands of fluorinated chemicals. They are of growing concern because many PFAS compounds are persistent and toxic. Food contact materials (FCMs) containing PFAS pose multiple exposure pathways to humans, prompting 12 states to enact laws banning FCMs with PFAS levels exceeding 100 ppm total organic fluorine (TOF). OBJECTIVE: While LC-MS is often used to measure targeted PFAS compounds, much of the total PFAS content in the sample may be missed. To understand organic fluorine content in samples more comprehensively, we develope

Advances in fluorine-containing materials for sample preparation in the food field.

Because food contaminants pose a serious threat to food safety, their accurate detection is particularly crucial. Sample preparation plays an increasingly important role in the analysis and detection of contaminants. The enrichment efficiency of the target analyte and the removal effect of the sample matrix are highly dependent on the adsorption material. Some emerging materials, such as covalent organic frameworks (COFs), metal-organic frameworks (MOFs) and other porous materials used as adsorbents, have attracted increasing research interest in sample preparation because they enhance the ana

Listeria monocytogenes-Can We Reduce or Eliminate It From Food Commodities?

Listeria monocytogenes is a highly virulent foodborne pathogen responsible for listeriosis, a severe infection threatening vulnerable populations such as pregnant women, newborns, the elderly, and immunocompromised individuals. Its resilience, surviving low pH, reduced water activity, and refrigeration, makes it a formidable contaminant in food systems. Traditional control methods include heat treatment, high-pressure processing, irradiation, and acidification, all aimed at reducing bacterial load in ready-to-eat foods. WHO and FAO guidelines emphasize minimizing contamination and growth. Emer

Acrylamide in commercial foods and intake by infants in Estonia.

Acrylamide is formed when certain foods with low moisture are prepared at above 120 ºC, especially those foods containing asparagine and reducing sugars such as glucose and fructose. Acrylamide is a probable carcinogen, and from animal evidence the margins of exposure indicate a concern for neoplastic effects. On a body weight basis infants´ acrylamide intakes are often higher than those of adults. The aim of the study was to determine acrylamide levels in different commercially-available foods and to assess dietary acrylamide intakes by infants. The acrylamide content in samples ranged widely

Molecular aspects of milk allergens and their role in clinical events.

Milk allergy is the most frequent food allergy in childhood. Even though cases of newly developed milk allergy in adulthood are known, this allergy is less frequent in adults since it is normally outgrown by children during the first years of life. One of the reasons why allergy to cow's milk shows its highest prevalence in children is its early introduction into the diets of babies when breast feeding is not possible. The major allergens are caseins and beta-lactoglobulin, but allergies to other minor proteins (immunoglobulins, bovine serum albumin) have also been reported. Milk allergenicity

The levels of cadmium, nickel, manganese lead, zinc, iron, tin, copper and arsenic in the brined canned Jordanian cheese.

The levels of cadmium, nickel, manganese, lead, zinc, iron, tin, copper and arsenic in fresh sheep's milk, white brined cheese preserved in glass jars and in tin containers and their corresponding brines, salt and tin plates were determined by atomic absorption spectrophotometry. The results have been compared with those reported in recent years. Although metal levels were comparable with other investigators' data, our data shows that white brined cheese picked-up metals from tin containers and from the naturally contaminated salt, on the contrary brined cheese in preserved glass jars showed l

Electron Beam Irradiation: A Non-Thermal Technology for Food Safety and Quality Control.

Electron beam irradiation (EBI) is a promising technology for food safety and quality control. It uses high-energy EBs to treat food products, inhibiting pests and pathogen growth and extending shelf life. EBI doesn't significantly alter food's sensory or nutritional properties, making it effective in eliminating harmful pathogens and offering an alternative to chemical fumigation. EBI also plays a crucial role in quality control and preservation, minimizing spoilage microorganisms and toxins, especially for fruits, vegetables, and meat products, ensuring consumer satisfaction. Modeling transfer of Listeria monocytogenes from slicer to deli meat during mechanical slicing.

Listeria monocytogenes has been implicated in several listeriosis outbreaks linked to the consumption of presliced ready-to-eat (RTE) deli meats. The possible contamination of sliced RTE meats by L. monocytogenes during the slicing process has become a public health concern. The objectives of this study were to investigate the transfer phenomena of L. monocytogenes between a meat slicer and ham slices, and to develop empirical models to describe the transfer during slicing. A six-strain cocktail of L. monocytogenes was inoculated onto a slicer blade to an initial level of approximately 3, 6, o
