Microbiological assessment of ready-to-eat foods and drinking water sources as a potential vehicle of bacterial pathogens in northern India.

Foodborne illnesses caused by the consumption of contaminated foods have frequent occurrences in developing countries. The incorporation of contaminated water in food processes, preparation, and serving is directly linked to several gastrointestinal infections. Keeping in view, this study was conducted to assess the microbial quality of both drinking water sources and commonly consumed fresh ready-to-eat (RTE) foods in the region. The drinking water samples from water sources and consumer points, as well as food samples from canteens, cafes, hotels, and restaurants, were collected for the micr

Food noise: definition, measurement, and future research directions.

The term food noise has been recently popularized by individuals managing their weight or adhering to specific diets for health reasons. Anecdotal evidence from patients and clinical observations suggests that food noise involves constant preoccupation with food-related decisions-such as which foods to eat, caloric intake, macronutrient balance, and meal timing-which can become intrusive and unpleasant. Food noise also appears to affect cognitive burden and quality of life, and is being cited as one reason weight-loss attempts fail. The increase in public discourse about food noise has highlig

A Knowledge-based Decision Support System for recommending safe recipes to individuals with dysphagia.

BACKGROUND: Dysphagia is a disorder that can be associated to several pathological conditions, including neuromuscular diseases, with significant impact on quality of life. Dysphagia often leads to malnutrition, as a consequence of the dietary changes made by patients or their caregivers, who may deliberately decide to reduce or avoid specific food consistencies (because they are not perceived as safe), and the lack of knowledge in how to process foods are critics. Such dietary changes often result in unbalanced nutrients intake, which can have significant consequences for frail patients. This

Food protein-induced enterocolitis syndrome: Disease burden for patients and families.

BACKGROUND: The impact of food protein-induced enterocolitis syndrome (FPIES) extends beyond the direct effects after consumption of an inciting food. Although elimination of the trigger food does alleviate the symptoms of FPIES, it does not address the burden of disease among patients and families living with FPIES. When managing FPIES, consideration should be taken with regard to the potential impact and complications attributed to food avoidance. OBJECTIVE: The objective was to review the epidemiology of FPIES and discuss the associated complications of FPIES, such as nutritional deficienc

Implementation of nutrition education and rehabilitation programs (NERPs) in Viet Nam.

Rigorous assessments of program quality are uncommon in developing countries. We evaluated the quality of the two-week, volunteer-facilitated, caregiver-child rehabilitation "hearth," or nutrition education and rehabilitation program (NERP), sessions in Save the Children's integrated nutrition program in Viet Nam. Field workers observed attendance, food contribution, food preparation, meal consumption, health message delivery, hygiene, and weighing at 240 NERP days at 59 NERP centers during seven months of implementation. Participation in cooking NERP meals (75.8%), washing mothers' and childr

Towards citizen science in food chemistry: Nitrite detection in high-fat food by integrating solid-phase extraction and electromembrane extraction on a microfluidic paper-based sensor.

Citizen science-based food quality survey is a new demand in monitoring and management of food quality with development of preventive medicine. In this work, a point-of-care testing (POCT) method was developed specifically for end users to detect nitrite in high-fat food. To avoid the preparation of complex samples in laboratory, a microfluidic paper-based analytical device (μPAD) integrated with solid-phase extraction (SPE) for fat removal and electromembrane extraction (EME) for nitrite separation in high-fat food samples was constructed. For same purpose, a laboratory-free pretreatment meth…

A Technique for Nonmicrobial Freshness Evaluation of Broiler Breast Meat Using a Handheld Electrical Impedance Meter.

This study investigated the applicability of a handheld electrical impedance meter (EIM) for nondestructive evaluation of the freshness of broiler breast meat during refrigerated storage. Impedance ratios (2/100 kHz) were measured on Days 0, 1, 2, 3, 5, 7, and 10 of refrigerated storage and were compared with the K-values obtained through high-performance liquid chromatography (HPLC) analysis of adenosine triphosphate (ATP) degradation products. The impedance ratio decreased consistently over time, with SD decreasing from 0.36 on Day 0 to 0.07 on Day 10. A quadratic regression model showed tha

Evaluation of Antifreeze Activity of Enzyme-Treated Extract from Mushroom Cell Wall.

Ice formation and growth during freezing in processed foods containing water can deteriorate food quality. Naturally derived antifreeze proteins and antifreeze polysaccharides are an attractive solution to this problem. Alkaline extracts from the basidiomycete Flammulina velutipes (enokitake) are known to inhibit ice crystal growth and are expected to maintain frozen food quality. In this study, polysaccharides/oligosaccharides (POS) were obtained from the readily available edible mushrooms F. velutipes, Hypsizygus marmoreus, Pleurotus eryngii, and Grifola frondosa. POS extracts were isolated …

Observations of parent-adolescent interactions relate to food parenting practices and adolescent disordered eating in adolescents at risk for adult obesity.

Adolescent disordered eating and obesity are interrelated and adversely relate to mental and metabolic health. Parental feeding practices have been associated with adolescent disordered eating and obesity. Yet, observable interactions related to food parenting have not been well characterized. To address this gap, N = 30 adolescents (M ± SD 14 ± 2 year) at risk for adult obesity due to above-average body mass index (BMI ≥70th percentile) or parental obesity (BMI ≥30 kg/m2 ) participated in a video-recorded parent-adolescent task to discuss a food/eating-related disagreement. Interactions were

Application of ultrasound-assisted atomized plasma-activated water to improve the quality properties of grapes.

Immersion washing disinfects microorganisms but requires drying before packaging and can detach grapes. Ultrasonic atomization generates mist and addresses these limitations. Plasma-activated water, a novel non-thermal technology, remains unexplored in atomization mode. This study applied atomized PAW to treat grapes, observing quality attributes during storage (day 0-7) at room temperature. Attributes included physicochemical properties (weight loss, decay incidence, firmness, titratable acidity (TA), total soluble solids (TSS)), microbial quality (counts of aerobic mesophilic bacteria (AMC),
