Betalain, a nitrogen-containing pigment traditionally employed as a food colorant, is harnessing interest for smart food packaging applications due to its exceptional antioxidant capacity and distinct halochromic behavior. However, there are key limitations associated with the inefficient extraction processes requiring substantial solvent use or long processing durations, and rapid degradation that compromises functional (e.g., antibacterial and antioxidant) and pH-responsive properties, curtailing the successful industrial translation of betalain in freshness monitoring of protein-rich foods.

In an ever-growing perspective of circular economy, the development of conscious, sustainable and environmental-friendly strategies to recycle the waste products is the key point. The scope of this work was to validate the waste bentonite from the grape processing industries as a precious matrix to extract polyphenols by applying a waste-to-market approach aimed at producing novel functional excipients. The waste bentonite was recovered after the fining process and opportunely pre-treated. Subsequently, both the freeze dried and the so-called "wet" bentonites were subjected to maceration. PEG2

The production of ammonium molybdate generates large amounts of industrial ammonia leaching residue (IALR), from which conventional ammonia leaching gives a low molybdenum recovery. Quantitative phase analysis identified MoO2 in IALR, which must be oxidized before it can dissolve in ammonia. Depth-resolved XPS detected only Mo(VI) before etching, while the Mo(IV) signal increased with etching depth. In the one-step process, H2O2 is rapidly consumed in an alkaline ammonia solution. This study therefore proposes an ultrasound-assisted two-step process, in which oxidation and leaching are separat

The potential toxicants in food are derived from natural or industrial sources. Compounds like lectins and glycoalkaloids that are toxic to man are naturally present in some vegetables like potatoes or legumes. A wide variety of marine toxins mostly produced by dinoflagellates occurring secondarily in molluscs and mussels are usually ingested by human beings causing poisoning. On the other hand, toxic compounds find their way into food during manufacture, storage, or transportation. These include largely the industrial contaminants, persistent organic pollutants (POP), pesticides, heavy metals
