Screening, fermentation performance and biotransformation potential of maltose-negative yeasts for aroma enhancement in non-alcoholic beer production.

The global non-alcoholic beer (NAB) market is experiencing unprecedented growth due to a general trend in reduced alcohol consumption. Despite this growth, NABs often do not match their alcoholic counterparts in sensory quality, particularly in aroma complexity and "worty" notes. Yeasts can contribute to aroma not only by producing ethanol, esters, and higher alcohols, but also through biotransformation of bound hop- and malt-derived precursors, releasing low-threshold volatile thiols such as 3-mercaptohexan-1-ol (3MH), 3-sulfanyl-4-methylpentan-1-ol (3S4MP) and 4-mercapto-4-methylpentan-2-one…

Stability and Biotransformation of 6:2 Fluorotelomer Sulfonic Acid, Sulfonamide Amine Oxide, and Sulfonamide Alkylbetaine in Aerobic Sludge.

The 6:2 fluorotelomer sulfonamide (6:2 FTSAm)-based compounds signify a prominent group of per- and polyfluoroalkyl substances (PFAS) widely used in contemporary aqueous film-forming foam (AFFF) formulations. Despite their widespread presence, the biotransformation behavior of these compounds in wastewater treatment plants remains uncertain. This study investigated the biotransformation of 6:2 FTSAm-based amine oxide (6:2 FTNO), alkylbetaine (6:2 FTAB), and 6:2 fluorotelomer sulfonic acid (6:2 FTSA) in aerobic sludge over a 100-day incubation period. The biotransformation of 6:2 fluorotelomer …

Biotransformation of 2-keto-4-hydroxybutyrate via aldol condensation using an efficient and thermostable carboligase from Deinococcus radiodurans.

The bioconversion of 4-hydroxy-2-keto acid derivatives via aldol condensation of formaldehyde and pyruvate has received substantial attention as potential source of chemicals for production of amino acids, hydroxy carboxylic acids, and chiral aldehydes. We developed an environmentally friendly biocatalyst consisting of a novel thermostable class II pyruvate aldolase from Deinococcus radiodurans with maltose-binding protein (MBP-DrADL), which has specific activity of 46.3 µmol min-1 mg-1. Surprisingly, MBP-DrADL maintained over 60% of enzyme activity for 4 days at 50 to 65 °C, we used MBP-DrADL

Efficient sulfamethoxazole biotransformation and detoxification by newly isolated strain Hydrogenophaga sp. SNF1 via a ring ortho-hydroxylation pathway.

Sulfonamides are frequently detected with high concentrations in various environments and was regarded as a serious environmental risk by fostering the dissemination of antibiotic resistance genes. This study for the first time reported a strain SNF1 affiliated with Hydrogenophaga can efficiently degrade sulfamethoxazole (SMX). Strain SNF1 prefers growing under extra carbon sources and neutral condition, and could degrade 500 mg/L SMX completely within 16 h. Under the conditions optimized by response surface method (3.11 g/L NaAc, 0.77 g/L (NH4)2SO4, pH = 7.53, and T = 34.38 ℃), a high removal

Aerobic BTEX biodegradation increases yield of perfluoroalkyl carboxylic acids from biotransformation of a polyfluoroalkyl surfactant, 6:2 FtTAoS.

Aqueous film-forming foams (AFFFs) are important sources of per- and polyfluoroalkyl substances (PFASs) in soil, groundwater, and surface water. Soil microorganisms can convert polyfluorinated substances into persistent perfluoroalkyl acids, but the understanding of co-contaminant stimulation or inhibition of PFASs biotransformation is limited. In this study, we investigate how aerobic biotransformation of polyfluorinated substances was affected by common AFFF co-contaminants, such as gasoline aromatics: benzene, toluene, ethylbenzene, and o-xylene (BTEX). We performed aerobic microcosm studie…

Biotransformation enzyme activities and phase I metabolites analysis in Litopenaeus vannamei following intramuscular administration of T-2 toxin.

T-2 toxin (T-2) is a type-A trichothecene produced by Fusarium that causes toxicity to animals. T-2 contamination of grain-based aquatic feed is a concern for the industries related to edible aquatic crustacean species such as the shrimp industry because it can lead to serious food safety issues. T-2, its metabolites, and selected phase I (EROD, CarE) and phase II (GST, UGT, SULT) detoxification enzymes in hemolymph and tissues were monitored at 0, 5, 10 15, 30, 45, and 60 min following T-2 intramuscular administration (3 mg/kg bw) in shrimp (Litopenaeus vannamei). Marked increases of EROD act

Biotransformation of halothane, enflurane, isoflurane, and desflurane to trifluoroacetylated liver proteins: association between protein acylation and hepatic injury.

In susceptible patients, halothane, enflurane, isoflurane, and desflurane can produce severe hepatic injury by an immune response directed against reactive anesthetic metabolites covalently bound to hepatic proteins. The incidence of hepatotoxicity appears to directly correlate with anesthetic metabolism catalyzed by cytochrome P450 2E1 to trifluoroacetylated hepatic proteins. In the present study, we examined whether the extent of acylation of hepatic proteins in rats by halothane, enflurane, isoflurane, and desflurane correlated with reported relative rates of metabolism. After pretreatment

Biotransformation of phenolic compounds in Saccharina japonica by Monascus purpureus fermentation: Impact on composition, antioxidant profile, and in vitro bioaccessibility.

Phenolic compounds of Saccharina japonica (SJ) have low bioaccessibility due to macromolecule-bound forms. This study demonstrated that fermenting SJ with Monascus purpureus enhanced the phenolic bioaccessibility by converting bound macromolecular forms into free, low-molecular-weight forms. Fermentation increased both free and bound phenolics by 43% and 263%, respectively, with a corresponding increase in antioxidant activities. UHPLC-Q-Exactive Orbitrap-MS/MS detailed microbial biotransformation mechanisms, where complex phlorotannins and phenolic acids converted to salicylic acid, protocate…

Biotransformation: a novel approach for the production of 6-hydroxyluteolin 7-O-methylglucuronide compound with antioxidant and anti-inflammatory potential.

This study employed the predicted data mining approach (PDMA) to guide the biotransformation of scutellarin methyl ester by Bacillus megaterium tyrosinase (BmTYR). While the enzymatic conversion yielded 6-hydroxyluteolin 7-O-methylglucuronide, a known derivative, this study highlights the ability of PDMA to predict and synthesise single products with high specificity. This approach presents a valuable alternative to the extraction of bioactive compounds from traditional medicinal herbs, which inherently contain a complex mixture of secondary metabolites. It facilitates the efficient production…

The cyanobacterium Synechocystis sp. PUPCCC 62: a potential candidate for biotransformation of Cr(VI) to Cr(III) in the presence of sulphate.

The cyanobacterium Synechocystis sp., an isolate from polluted water of Satluj river, India, was found resistant to chromium(VI) up to 200 nmol mL(-1). In this study, it has been demonstrated that this organism takes up Cr(VI) through a phosphate transporter. The organism removed 250 nmol Cr(VI), 210 nmol phosphate and 180 nmol sulphate mg(-1) protein from a buffer solution in 8 h. Cr(VI) uptake by the organism decreased to 135 nmol Cr(VI) removed per milligram protein in the presence of 200 nmol phosphate mL(-1), but the same concentration of sulphate did not affect the Cr(VI) uptake. Similar
