Cost Associated with Adherence to the EAT-Lancet Score in Brazil.

BACKGROUND/OBJECTIVES: Food prices are a crucial factor in food choices, especially for more vulnerable populations. To estimate the association between diet cost and quality, as measured by the EAT-Lancet score, across demographic groups in Brazil. METHODS: Data from the 2017/18 Household Budget Survey were used to calculate the EAT-Lancet score, comprising 14 components. Scores ranged from 0 (low adherence) to 42 (high adherence), with emphasized components (e.g., vegetables, fruits, legumes) and limited components (e.g., red meat, sugar, eggs). Results were stratified by per capita income,

No evidence that prefrontal HD-tDCS influences cue-induced food craving.

This study investigated whether the application of high definition transcranial DC stimulation (HD-tDCS) to the dorsolateral prefrontal cortex reduces cue-induced food craving when combined with food-specific inhibitory control training. Using a within-subjects design, participants (N = 55) received both active and sham HD-tDCS across 2 sessions while completing a Go/No-Go task in which foods were either associated with response inhibition or response execution. Food craving was measured pre and post stimulation using a standardized questionnaire as well as desire to eat ratings for foods asso

An event-related potential study of consumers' responses to food bundles.

We conducted two event-related potentials (ERP) experiments to investigate consumers' responses to different types of food bundles. In Experiment 1, the participants were instructed to indicate their wanting of a three-yogurt bundle when their neural activity was recorded. The results of self-report wanting scores revealed that the participants wanted bundles consisting of their favorite yogurt products more than those of disliked products. Such a difference in self-report scores was also indexed by the N2 in frontal brain and the P1 in the left hemisphere. By contrast, bundles consisting of t

Barriers and facilitators to cooking from 'scratch' using basic or raw ingredients: A qualitative interview study.

BACKGROUND: Previous research has highlighted an ambiguity in understanding cooking related terminology and a number of barriers and facilitators to home meal preparation. However, meals prepared in the home still include convenience products (typically high in sugars, fats and sodium) which can have negative effects on health. Therefore, this study aimed to qualitatively explore: (1) how individuals define cooking from 'scratch', and (2) their barriers and facilitators to cooking with basic ingredients. METHODS: 27 semi-structured interviews were conducted with participants (aged 18-58 years

Pricing and availability intervention in vending machines at four bus garages.

OBJECTIVE: To evaluate the effects of lowering prices and increasing availability on sales of healthy foods and beverages from 33 vending machines in 4 bus garages as part of a multicomponent worksite obesity prevention intervention. METHODS: Availability of healthy items was increased to 50% and prices were lowered at least 10% in the vending machines in two metropolitan bus garages for an 18-month period. Two control garages offered vending choices at usual availability and prices. Sales data were collected monthly from each of the vending machines at the four garages. RESULTS: Increases i

Acute stress and food-related reward activation in the brain during food choice during eating in the absence of hunger.

BACKGROUND: Stress results in eating in the absence of hunger, possibly related to food reward perception. HYPOTHESIS: Stress decreases food reward perception. AIM: Determine the effect of acute stress on food choice and food choice reward-related brain activity. SUBJECTS: Nine females (BMI = 21.5 + or - 2.2 kg/m(2), age = 24.3 + or - 3.5 years). PROCEDURE: Fasted subjects came twice to randomly complete either a rest or stress condition. Per session, two functional MRI scans were made, wherein the subjects chose the subsequent meal (food images). The rewarding value of the food was measur

Food neophobia in the context of a varied diet induced by a weight reduction program in massively obese adolescents.

Previous studies in humans have shown that short to middle-term pre-exposure to multiple foods can reduce the negative response to novel foods (neophobia). In order to explore the effects of a long-term exposure to varied foods on food neophobia, we studied a population of obese adolescents observed in a longitudinal protocol in which the multiple food experiences are induced by a residential weight reduction program (WRP) that encourages the consumption of a wide variety of foods. Seventy-two massively obese adolescents (22 boys) filled the food neophobia scale (FNS, [Pliner, P., & Hobden, K.

Treatment products and approaches for phenylketonuria: improved palatability and flexibility demonstrate safety, efficacy and acceptance in US clinical trials.

A new amino acid formulation and a variety of treatment products incorporating it were evaluated for long-term safety, efficacy, and acceptance in 25 subjects with phenylketonuria over a period of 5 years. Palatability of the treatment was improved by reducing the required intake of amino acids, reformulating the mixture to have better taste, and providing vitamins and minerals as tablets. The hypotheses were that these strategies would improve compliance and metabolic control and maintain nutritional status in subjects. Compliance with treatment was determined from mean reported intakes (4-da

Exploring customer segmentation for food products with additional health benefits: A case study on iron-biofortified vegetables, functional foods, and dietary supplements.

Iron deficiency is a widespread global health concern affecting women, in particular, but also individuals adhering to vegan or vegetarian diets, as well as athletes. Inadequate iron intake can lead to various diseases, necessitating an iron-rich diet or dietary supplements. In addition to existing iron-enriched functional foods and supplements, the potential emergence of iron-biofortified vegetables, high in vitamin C, could enhance iron absorption in the future. As these vegetables are not established in the German food market, identifying the target group before market launch is crucial. To

Assessment of Novel Proteins Triggering Celiac Disease via Docking-Based Approach.

Human leukocyte antigens (HLAs) are pivotal in antigen processing, presenting to CD4+ T cells, and are linked to autoimmune disease susceptibility. In celiac disease, HLA-DQ2.5 and HLA-DQ8.1 bind gluten peptides on APCs, some recognized by CD4+ T cells, prompting inflammation and tissue damage. While extensively studied experimentally, these alleles lack comprehensive in silico analysis. To explore peptide-HLA preferences, we used molecular docking on peptide libraries, deriving quantitative matrices (QMs) for evaluating amino acids at nine-residue peptide binding cores. Our findings tie speci

Considerations for the optimal use of immunoglobulin.

Immunoglobulins are large Y-shaped proteins produced by B-cells and plasma cells that are used by the immune system to identify and neutralize foreign objects such as bacteria and viruses. Immunoglobulin G (IgG) preparations are approved by the US Food and Drug Administration for the treatment of primary immunodeficiency disease, idiopathic thrombocytopenic purpura, Kawasaki disease, chronic lymphocytic leukemia with frequent infections, bone marrow transplantation, to prevent infection in pediatric human immunodeficiency virus, and chronic inflammatory demyelinating polyneuropathy. Food conscientiousness as a buffer against college students' weight gain.

INTRODUCTION: A variety of psychological factors may influence weight gain among undergraduates. As one of the psychological factors that might influence such weight gain, this research introduces food conscientiousness, a behavioral tendency toward making healthier food choices. METHODS: In Phase 1 of the study, we developed a food conscientiousness scale. In Phase 2, we examined whether undergraduates demonstrated weight gain and whether it was smaller among those high in food conscientiousness. RESULTS: The results indicated that college students demonstrated weight gain (2 lbs, on averag

Negative and positive interpretations of emotionally neutral situations modulate the desire to eat personally craved foods.

Emotions play an important role in modulating food craving. Previous studies demonstrated that exposure to negative or positive stimuli can subsequently influence the desire to eat. However, in many daily situations, individuals self-generate their emotions, for example, by interpreting emotionally-neutral situations as positive or negative. So far, no studies have examined if and how positive and negative interpretations of emotionally-neutral situations modulate food craving. In this study, 65 healthy participants were asked to interpret emotionally-neutral images negatively or positively or

Everyone deserves quiche: French school lunch programmes and national culture in a globalized world.

Globalization poses many challenges for national cultural unity, especially in Europe. Some doubt whether national cultures will be able to survive, but there are many counter-trends pushing to maintain national cultural unity. I analyse the dual trends of global diversity and maintaining unity through an everyday manifestation of French culture: elementary school lunches. French school lunch programmes are part of the nation-building process because they are designed to teach students how to eat, which is especially important in France where the art of gastronomy is a key source of identity a

Culinary efficacy: an exploratory study of skills, confidence, and healthy cooking competencies among university students.

AIMS: This study was conducted to determine whether a group of college-age students in New Jersey, USA, had the requisite culinary skills, knowledge, and confidence to take personal control of their meal planning and production. The long-term threat to the public health systems posed by high rates of obesity among young adults in higher education institutions has garnered widespread attention across the world. Studies have shown that assuming personal responsibility over preparing and consuming food can play a key role in addressing the problem of poor nutrient intakes. METHODS: Focus groups

A selective role for right insula--basal ganglia circuits in appetitive stimulus processing.

Hemispheric lateralization of hedonic evaluation ('liking') and incentive motivation ('wanting') in neural networks connecting the basal ganglia and insula (BG-I) in humans was examined. Participants with brain damage restricted to the BG-I of the right (n = 5) or left (n = 5) hemisphere, and 26 healthy participants matched on age, sex and intelligence quotient were tested on positively and negatively valenced pictures drawn from varied stimulus categories (Vijayaraghavan et al., 2008). Liking was assessed with explicit ratings of pleasantness using a nine-point Likert scale. Wanting was quant

Effects of cyanogenic plants on fitness in two host strains of the fall armyworm (Spodoptera frugiperda).

The generalist moth, Spodoptera frugiperda (J. E. Smith) consists of two genetic subgroups (host strains) that differ in their distribution among host plant species. The corn strain prefers crop plants such as corn, sorghum, and cotton, while the rice strain is found in small grasses such as Cynodon spp. and rice. Little is known about the physiological factors that drive this host preference. Here, we report a feeding study with natural host plants and an artificial diet containing cyanide. We found that corn, two Cynodon spp. (bermudagrass C. dactylon (L.) Persoon, 'NuMex Sahara', and stargr

Does previous protein feeding affect the response of sheep towards foods that differ in their rumen availability, but not content, of nitrogen?

The objective of the experiment was threefold: (1) to test whether an 'unlearned appetite' for dietary protein exists in sheep, (2) whether such an appetite and subsequent diet selection depend on the degree of previous protein deprivation, and (3) whether the N-source in the foods offered as choice influences diet selection. Differences in protein deprivation were achieved by feeding sheep with food either with high (HP) or low (LP) protein. Sheep were fed on Food LP, either for the same period of time as sheep on Food HP or until they reached the same live-weight (LW) as sheep on Food HP. Fo
