This study evaluated the fermentation kinetics and properties of kefir beverages produced from whole milk using milk kefir grains (MKGs) or water kefir grains (WKGs) over 48 h. MKGs showed higher initial microbial loads and promoted rapid acidification, with pH decreasing from 6.70 to 4.99 and significant production of lactic acid (10.58 g/L) and ethanol (5.17 g/L), compared with WKGs (final pH 6.20, <0.5 g/L lactic acid, and <0.3 g/L ethanol). However, the final concentration of acetic acid in WKG fermentation (1.93 g/L) was comparable to that in MKG fermentation (2.02 g/L). Microbial populat

The trend of traditionally fermented beverages (TFBs) is gaining importance because of their health benefits and high nutritional value. Post-era of COVID-19 pandemic and increase in consumer awareness on health has taken U-turn for consumption of naturally fermented foods for gut health and immune homeostasis. Consumption of fresh vegetables and fruits is attributed with numerous health benefits. Nevertheless, limited information is available how natural fermentation of fruits can alter the microbial diversity, nutritional value, and distinct flavor. Therefore, we wanted to compare four diffe

This study developed a fermented beverage from germinated brown rice and chickpea using Lactobacillus plantarum. The results showed that the 36 h-fermented product exhibited strong antioxidant capacity (DPPH: 81.16 %; ABTS: 76.37 %; FRAP: 3.44 μmol/L) and significant inhibitory effects on α-amylase (69.94 %) and α-glucosidase (70.84 %), highlighting its potential antidiabetic properties. Although simulated in vitro digestion led to a reduction in biological activities of FGCB, its substantial antioxidant and antidiabetic activities were retained. Importantly, fermentation converted undesirable

Ethanol (EtOH) is the main risk factor for alcoholic liver disease. However, fermented alcoholic beverages contain not only ethanol but also various volatile compounds. Currently, the effects of volatile compounds in ethanol-containing fermented beverages on gut microbiota and host metabolism are largely unclear. To fill this gap, we constructed an 8-week mice model using three types of Baijiu (a traditional fermented alcoholic beverage), sterile water and ethanol as controls. Results revealed that three types of Baijiu contain various volatiles, mainly belonging to esters, alcohols, and acids

Isolation, selection and aroma characterization of native non-Saccharomyces yeasts are key for developing novel-flavored low-alcohol beverages. To screen non-Saccharomyces yeasts for alcohol reduction and aroma enhancement in low-alcohol yellow peach beverages, 327 yeast strains were isolated from the spontaneous fermentation processes in various fruits. Following colorimetric alcohol assays and the olfactory method, nine Hanseniaspora uvarum (H. uvarum) with low-alcohol and high-aroma phenotypes were selected for co-fermentation with Saccharomyces cerevisiae (S. cerevisiae). The alcohol conte

Does fermentation enhance the safety of beverages? This study investigates kombucha's resilience to microbial invasion from human hands. Kombucha, an ancient fermented tea, relies on a biofilm known as a symbiotic community of bacteria and yeast (SCOBY) and a starter culture to ferment sweet tea, producing various metabolites including gluconic acid, acetic acid, ethanol, and carbon dioxide. While fermented foods have been historically associated with potential health benefits, direct evidence comparing the prevalence of human pathogens in fermented versus non-fermented beverages has been lack

This Research Paper addresses the hypothesis that the use of a probiotic and the antioxidant and anti-inflammatory action of curcumin will improve the use of buttermilk, which is a by-product of the dairy industry that is still little used, despite its nutritional and technological properties. The production of beverages using buttermilk as a basis will contribute to the development of foods that support sustainability, reduce waste and have high nutritional quality. The aim of this research is to develop a functional dairy beverage with high antioxidant potential, combining probiotic (Lactoba

Cheka is a grain- and vegetable-based traditionally fermented beverage usually consumed in southwest Ethiopia, mainly in Konso and Derashe. Conventionally, it is made by spontaneous fermentation and therefore mostly relies on the actions of autochthonous microorganisms. Due to the lack of scientifically documented information on the microbiology of the Cheka fermentation process, we undertook this study to explore the microbial profiles and physicochemical properties involved in Cheka fermentation. Cheka is traditionally prepared in the laboratory using aseptic procedures with locally sourced

Aloe vera has been proven to have various medicinal properties, including anti-inflammatory and anti-obesity functions. However, the effects of Aloe vera-fermented beverages (AFB) on obesity and its complications are still not clear. In this study, HepG2 cells in high-fat environment and high-fat diet (HFD) mice were used to investigate the potential obesity-preventing function of AFB. We found that AFB intervention decreased the amount of lipid droplets of HepG2 cells, suppressed the body weight gain and adipose accumulation, and reduced the serum contents of total cholesterol (TC), alanine a

Oat beverages fermented with lactic acid bacteria represent a promising strategy to improve sensory and nutritional properties. This study presents a systematic investigation into the cooperative fermentation of oats using Lactiplantibacillus plantarum and Streptococcus thermophilus (LP7-ST3) for developing a novel beverage. Compared to single-strain fermentation, LP7-ST3 co-fermentation significantly enhanced the sensory quality and markedly increased the contents of β-glucan, polyphenols, flavonoids, and proteins, resulting in superior antioxidant capacity. Non-targeted metabolomics and flav

Development of new plant-based functional beverages is currently increasing, and their biofortification by bacterial fermentation instead of chemical addition opens many possibilities. In this context, lactic acid bacteria (LAB) producing, in food matrices, essential micronutrients (i.e., vitamin B2 (riboflavin)), the immunomodulatory polysaccharide dextran, and other prebiotic and postbiotic compounds are valuable for the development of multifunctional fermented foods. Thus, with the aim of identifying and testing new LAB strains, three spontaneous riboflavin-overproducing mutants were select
