Sublethally injured microorganisms in food processing and preservation: Quantification, formation, detection, resuscitation and adaption.

Sublethally injured state has been recognized as a survival strategy for microorganisms suffering from stressful environments. Injured cells fail to grow on selective media but can normally grow on nonselective media. Numerous microorganism species can form sublethal injury in various food matrices during processing and preservation with different techniques. Injury rate was commonly used to evaluate sublethal injury, but mathematical models for the quantification and interpretation of sublethally injured microbial cells still require further study. Injured cells can repair themselves and rega

Kimchi friend or foe: preserving cultural foods developed pre-refrigeration.

OBJECTIVE: In this commentary, we examine whether kimchi acts primarily as a risk factor or a protective dietary component for gastric cancer. METHODS: By breaking kimchi down into individual ingredients, we summarize evidence on the potential protective and carcinogenic effects. RESULTS: Epidemiologic findings on kimchi and gastric cancer remain inconsistent, likely due to variation in sodium content, fermentation practices, and overall dietary patterns. CONCLUSIONS: We propose that reducing sodium content while preserving traditional fermentation methods may enhance the health benefits of

Do Food Preservatives Affect Staphylococcal Enterotoxin C Production Equally?

Staphylococcal enterotoxins (SEs), particularly enterotoxin C (SEC), are potent superantigens primarily known for causing food poisoning, but recent studies have highlighted their potential role in immune-mediated intestinal diseases. Despite the widespread use of food preservatives, their influence on SEC production-especially from coagulase-negative staphylococci (CNS)-remains poorly understood. In this study, we evaluated the effects of commonly used preservatives, including sodium chloride, potassium nitrate, and sorbic acid, on the expression and production of SEC3 and SECepi in Staphyloc

Smart windows based on ultraviolet-B persistent luminescence phosphors for bacterial inhibition and food preservation.

Herein, ultraviolet B (UVB) persistent luminescence phosphors containing SrAl12O19: Ce3+, Sc3+ nanoparticles were reported. Thermoluminescence (TL) spectrum analysis reveals that the shallow trap induced by Sc3+ co-doping plays an important role in photoluminescence persistent luminescence (PersL) development, while the deep trap dominates the generation of optical stimulated luminescence (OSL). Owing the appearance of deep trap, the OSL is observed under light (700 nm - 900 nm) excitation. UVB luminescence exerts good bactericidal effects on pathogenic bacteria involved in the process of food

Bio-inspired Janus film derived from lemon biomass with integrated optical authentication and active food preservation.

Ensuring both the nutritional integrity and authenticity of high-value fruits is a critical challenge in the modern global supply chain. Inspired by the asymmetric wettability of lotus leaves, we developed an innovative, multifunctional Janus film (ES/CNT/PC) derived from lemon biomass pectin, chitosan, and ethyl cellulose via a robust top-down assembly strategy. This asymmetric film integrates Ti-doped carbon dots (Ti-NCDs) and citral-loaded hydroxypropyl-β-cyclodextrin complexes to address the dual challenges of physiological decay and fraudulent labeling. Physically, the Janus structure imp

Deprotonation-Constructed Instant Gelation Coating for Staphylococcus Disinfection and Preservation of Fresh Food in Multiple Scenarios.

The ancient proverb "disease enters through the mouth" elucidates the connection between food and pathogens, underscoring the pivotal role of food preservation in preventing foodborne diseases. Drawing inspiration from ancient food preservation techniques such as waxing and the use of spices, a novel approach combining the deprotonation-induced solid-liquid phase separation of natural polymer solutions with the solubilization of plant-derived antibacterial compounds has been developed. The "two-step soaking" construction strategy enables the creation of biodegradable and adaptable for hydrogel…
