Development and sensory test of a dairy product with ACE inhibitory and antioxidant peptides produced at a pilot plant scale.

A scale-up process was carried out to obtain potent bioactive peptides from whey protein through a simple hydrolysis process. The scale-up was satisfactory, with results similar to those obtained at lab scale: a fraction of peptides < 1 kDa with ACE inhibitory activity of 18.44 ± 2.47 μg/mL, a DPPH value of 69.40 ± 0.44%, and an ORAC value of 3.37 ± 0.03 μmol TE/mg protein. The peptide sequences responsible for the ACE inhibitory activity were also similar to those identified at lab scale: PM, LL, LF, HFKG and PT. The hydrolysate was used as a functional ingredient in a low-fat yoghurt. The co

From Perception to Regulation: Frontier Advances in Structural Mechanisms, Objective Quantification, and Debittering Strategies of Bitter Peptides.

The bitterness of protein hydrolysates is a critical sensory defect that severely compromises consumer acceptance and limits their application in functional foods. Bitter peptides, the primary source of this undesirable taste, often possess significant bioactivity, creating a challenging "flavor-function" duality. This conflict arises fundamentally because the structural mechanisms governing peptide-bitter taste receptors (TAS2R) interactions and the correlation between bitterness and bioactivity remain incompletely understood. Consequently, objective quantification methods lack standardizatio…

Isolation and characterization of sialate 9(4)-O-acetylesterase from influenza C virus.

An esterase was isolated from influenza C virus with a specific activity from 1.7-5 U/mg protein, and its substrate specificity was tested with various naturally occurring O-acylated sialic acids, synthetic carbohydrate acetates, and other esters. The enzyme hydrolyses only acetic acid esters at significant rates. The non-natural substrates 4-methyl-umbelliferyl acetate, 4-nitrophenyl acetate, and alpha-naphthyl acetate are cleaved at highest hydrolysis rates, followed by the natural substrate N-acetyl-9-O-acetylneuraminic acid. The esterase also acts on N-glycoloyl-9-O-acetylneuraminic acid a

Transglutaminase modification affects in vitro gastric digestion of pea protein and duodenal lipolysis of emulsions.

The objective of the present work was to assess if the degree of crosslinking of pea proteins (PPI) by transglutaminase (TG) affects the in vitro gastric digestion of pea proteins in the bulk and at the oil-water interface as well as the duodenal lipolysis of the emulsions. PPI samples were prepared at protein concentrations of 10-18 % w/w and 1 % TG at 37 °C and characterized by small deformation tests and texture measurements. The degree of crosslinking linearly decreased with the increase of protein concentration and at the same time a loss of elasticity occurred. However, both the storage

[Oligopeptide maps of the matrix protein of a temperature-sensitive mutant (TS 303) of the fowl plague virus].

Oligopeptide maps of M proteins of "wild" fowl plague virus (FPV) and a temperature-sensitive mutant of FPV were compared with respect of gene. In maps of M proteins labeled with 14C-chlorella hydrolysate and 35S-methionine the mutant virus was found to lack one of oligopeptides present in maps of M proteins of the "wild" virus. The electrophoretic mobility of M proteins of ts 303 and FPV in 25% polyacrylamide gel was similar.

Modified proteins in allergy prevention.

Around 2.5% of neonates experience hypersensitivity reactions to cow's milk protein during the first year of life, which is highly associated with early exposure to cow's milk. To prevent early allergy development, cow's milk proteins in infant formulas were modified by hydrolyzation processes for use in children at high atopic risk who need milk supplementation in the first months of life. Dependent on the degree of modification, hydrolyzed cow's milk formulas are differentiated into extensively and partially hydrolyzed whey or casein hydrolysates (pHF, eHF). However, their allergy-preventive
