Primary aromatic amines in paper cups, paper straws, and sausage casings.

Primary aromatic amines (PAAs) are organic compounds with an aromatic ring linked to an amine group. They are used in printing inks to produce azo pigments, which give vibrant colours. PAAs can migrate from food packaging into food and pose health risks, as several are classified as human carcinogens or presumed carcinogenic under European REACH regulations. This study investigates the migration of PAAs from printed paper straws, printed paper coffee cups, and sausage casings, to assess exposure levels. Yellow ink, with and without isocyanate, was used to examine its effect on PAAs migration.

Changing climate, shifting mycotoxins: A comprehensive review of climate change impact on mycotoxin contamination.

Climate change (CC) is a complex phenomenon that has the potential to significantly alter marine, terrestrial, and freshwater ecosystems worldwide. Global warming of 2°C is expected to be exceeded during the 21st century, and the frequency of extreme weather events, including floods, storms, droughts, extreme temperatures, and wildfires, has intensified globally over recent decades, differently affecting areas of the world. How CC may impact multiple food safety hazards is increasingly evident, with mycotoxin contamination in particular gaining in prominence. Research focusing on CC effects on

Unlocking food safety: a comprehensive review of South Africa's food control and safety landscape from an environmental health perspective.

Food fraud (often called fake food in South Africa) the deliberate misrepresentation or adulteration of food products for financial gain, is a growing problem in South Africa (SA) with severe public health and financial consequences for consumers and businesses. The recent public outcry against food fraud practices especially in communities that have lost loved ones due to the consumption of allegedly adulterated foodstuffs, highlights the grave danger that food fraud poses to consumers and the potential for significant reputational damage to food manufacturers. Despite the risks, food fraud o

A systematic review and meta-analysis indicates a high risk of human noroviruses contamination in vegetable worldwide, with GI being the predominant genogroup.

Human noroviruses (HuNoVs) are the most predominant viral agents of acute gastroenteritis. Vegetables are important vehicles of HuNoVs transmission. This study aimed to assess the HuNoVs prevalence in vegetables. We searched the Web of Science, Excerpta Medica Database, PubMed, and Cochrane databases until June 1, 2023. A total of 27 studies were included for the meta-analysis. Statistical analysis was conducted using Stata 14.0 software. This analysis showed that the pooled HuNoVs prevalence in vegetables was 7 % (95 % confidence interval (CI): 3-13) worldwide. The continent with largest numb

Migration of biocides from paperboard into food simulants and vegetables.

The migration of the biocides: 2-methyl-2H-isothiazol-3-one (MIT), 1,2-benzisothiazol-3(2H)-one (BIT) and 2-phenoxyethanol (PHE) from spiked paperboard into the simulants Tenax®, water and acetic acid (3%) has been studied and compared with that into the vegetables: red cabbage, lettuce and cauliflower. The migration of the biocides into the vegetables is significant and it shows the trend BIT > PHE > MIT, at both 4 °C and room temperature (RT), whatever tested foodstuff and with the highest value corresponding to BIT into cauliflower at RT (71%). Differences up to one order of magnitude betwe

S-layer is a key element in metabolic response and entry into the stationary phase in Bacillus cereus AH187.

Bacillus cereus is a food-borne Gram-positive pathogen. The emetic reference strain B. cereus AH187 is surrounded by a proteinaceous surface layer (S-layer) that contributes to its physico-chemical surface properties, and promotes its adhesion in response to starvation conditions. The S-layer produced by B. cereus AH187 is composed of two proteins, SL2 and EA1, which are incorporated at different growth stages. Here, we showed that deletion of the genes encoding SL2 and EA1 produced viable cells, but decreased the glucose uptake rate at the start of growth, and induced extensive reorganization

Environmental persistence of Listeria monocytogenes and its implications in dairy processing plants.

Listeriosis, an invasive illness with a fatality rate between 20% and 30%, is caused by the ubiquitous bacterium Listeria monocytogenes. Human listeriosis has long been associated with foods. This is because the ubiquitous nature of the bacteria renders it a common food contaminant, posing a significant risk to the food processing sector. Although several sophisticated stress coping mechanisms have been identified as significant contributing factors toward the pathogen's persistence, a complete understanding of the mechanisms underlying persistence across various strains remains limited. Moreo

Detection of Listeria Species by Conventional Culture-Dependent and Alternative Rapid Detection Methods in Retail Ready-to-Eat Foods in Turkey.

Foodborne pathogens, like Listeria monocytogenes, continue to inflict substantial financial losses on the food industry. Various methods for detecting Listeria in food have been developed and numerous studies have been conducted to compare the different methods. But, in recent years, new Listeria species have been identified, and currently the genus comprises 26 species. Therefore, it would be a more accurate approach to re-evaluate existing detection methods by considering new species. The present investigation involved the analysis of 42 ready-to-eat (RTE) foods, encompassing a variety of fo

Modelling the potential role of media campaigns on the control of Listeriosis.

Human Listeria infection is a food-borne disease caused by the consumption of contaminated food products by the bacterial pathogen, Listeria. In this paper, we propose a mathematical model to analyze the impact of media campaigns on the spread and control of Listeriosis. The model exhibited three equilibria namely; disease-free, Listeria-free and endemic equilibria. The food contamination threshold is determined and the local stability analyses of the model is discussed. Sensitivity analysis is done to determine the model parameters that most affect the severity of the disease. Numerical simul…

Selected food processing techniques as a factor for pesticide residue removal in apple fruit.

In this study, various food processing techniques, including high-temperature processes (pasteurization/sterilization and boiling), low-temperature processes (freezing), mechanical processing (peeling and juicing), and water-based processes (washing with tap water and ultrasonic washing) were used to identify the most effective way to remove contamination of 5 fungicides (cyprodinil, difenoconazole, fluopyram, tebuconazole, and fludioxonil). The most effective processes were juicing and freezing in the range between 63 and 100% and from 52 to almost 100%, respectively. Ultrasonic washing and b

Biosensor for the detection of Listeria monocytogenes: emerging trends.

The early detection of Listeria monocytogenes (L. monocytogenes) and understanding the disease burden is of paramount interest. The failure to detect pathogenic bacteria in the food industry may have terrible consequences, and poses deleterious effects on human health. Therefore, integration of methods to detect and trace the route of pathogens along the entire food supply network might facilitate elucidation of the main contamination sources. Recent research interest has been oriented towards the development of rapid and affordable pathogen detection tools/techniques. An innovative and new ap

IMEP-115: determination of methylmercury in seafood by elemental mercury analysis: collaborative study.

A collaborative study IMEP-115 was organized by the European Union Reference Laboratory for Heavy Metals in Feed and Food (EURL-HM) to validate a method for the determination of methylmercury in seafood. The method was based on a liquid-liquid extraction with an organic solvent and with an aqueous cysteine solution. The final quantitation was done with an elemental mercury analyzer. Fifteen laboratories experienced in elemental mercury analyses, from 10 European countries, took part in the exercise. Five test items were selected to cover the concentration range from 0.013 to 5.12 mg/kg. All te

Clinical issues regarding the use of total nutrient admixtures.

The introduction of total nutrient admixtures (TNAs) has offered several clinical advantages. Substituting a portion of the daily dextrose calories with lipids may reduce the incidence of carbohydrate-associated complications (e.g., disturbances in glucose control and immune function). In addition, providing intravenous lipids continuously over 24 hours as a TNA appears to be better utilized by the liver and less likely to interfere with reticuloendothelial system function when compared with conventionally administered, discontinuous lipid infusions. If the peripheral vein is used as a route f
