Physical Processing of Aquatic Gel Foods: From Protein Structure Regulation to Health, Sustainability, and Personalized Design.

Aquatic gel foods, including surimi, minced crustacean products, and algal gels, are important platforms for aquatic protein valorization. However, their production is constrained by uneven thermal gelation, endogenous enzyme-driven deterioration, nutrient loss, additive dependence, and limited flexibility for personalized design. This review synthesizes recent advances in physical processing of aquatic gel systems from a process-structure-function perspective, comparing the mechanisms, benefits, and limitations of major technologies. The central premise is that physical energy delivery can re

Ultra-processed foods and advanced stages of sarcopenia: multinomial evidence from the Birjand longitudinal ageing study.

BACKGROUND: Sarcopenia, the age-related loss of muscle mass and strength, contributes to frailty and disability. Ultra-processed foods (UPFs) may increase risk via metabolic and inflammatory pathways. This study examined the association between UPF intake and sarcopenia in older Iranian adults. METHODS: This cross-sectional study used data from the second phase of the Birjand Longitudinal Aging Study (BLAS). Sarcopenia was defined using EWGSOP2 criteria. Dietary intake was assessed with a validated food frequency questionnaire, and UPF consumption was categorised into quartiles based on energ

Association between oral food processing ability and nutritional status of older adults based on factor analysis.

OBJECTIVES: The potential association between oral food processing ability and nutritional status in the older adults aged 75 years and above has been poorly investigated. Thus, this study is based on factor analysis to explore the relationship between the two aspects of older adults with different genders. METHODS: The nutritional status was assessed by the Short-form Mini-Nutritional Assessment and body composition measurement. Oral food processing ability was evaluated by subjective questionnaires (10-item Eating Assessment Tool and Chewing Function Questionnaire) and specific objective ex

Impact of a novel ultra-processed foods and drinks diet on metabolism and behaviour in adolescent female and male rats.

Mental health affections induced by ultra-processed foods (UPF) in humans have been consistently reported. We aim to develop an experimental UPF diet based on typical UPF products consumed by human adolescents and to characterize its impact on health and behaviour in male and female rats. In a first experiment, 30 UPFs were administered, one every day, plus standard chow, compared with rats fed standard chow. In a second experiment, we combined selected UPFs from the first experiment in 4 menus, consisting in 4 solid and 1 liquid item each one. After weaning, 48 rats were divided in 4 groups a

Innovative non-thermal processing: Unraveling structural and functional transformations in food macromolecules-Starch, proteins, and lipids.

Thermal processing is widely used to ensure food safety and extend shelf life by inactivating microorganisms and enzymes. However, it often leads to undesirable heat-induced degradation and molecular aggregation, compromising food quality. In response, the food industry is increasingly adopting non-thermal processing technologies-such as high-pressure processing, ultrasound, pulsed electric fields, cold atmospheric plasma, and supercritical carbon dioxide-as innovative strategies to preserve or enhance the sensory and nutritional attributes of food. This review critically examines the mechanis

Role of Mediterranean Diet and Ultra-Processed Foods on Sperm Parameters: Data from a Cross-Sectional Study.

Background/Objectives: Male infertility is multifactorial, involving genetic, environmental, lifestyle, and medical factors. Recent research has underscored the influence of lifestyle choices, such as dietary habits, smoking, alcohol abuse, and metabolic disturbances, on sperm quality. In this context, nutrition plays a pivotal role: adherence to a healthy diet like the Mediterranean Diet (MD), which emphasizes seasonal, fresh, and whole foods, has been linked to improved sperm performance. Conversely, a high intake of ultra-processed foods (UPFs), characterized by additives, high levels of su

Profiling Listeria monocytogenes in Hummus, Fresh Produce, and Food Processing Environments in the Western Cape, South Africa.

Listeria monocytogenes is pervasive in agricultural environments and difficult to eradicate from food-processing facilities. Consequently, various foods become contaminated, posing health risks to immunocompromised individuals. This surveillance study aimed to enhance the understanding of the genetic diversity, virulence, plasmid content, sanitizer tolerance, and antibiotic resistance of L. monocytogenes from ready-to-eat (RTE) hummus, fresh produce and food-processing environments in the Western Cape, South Africa (2018-2021). Sixty L. monocytogenes isolates were classified as lineage I or li

Consumption frequency of ultra-processed foods and beverages among 6- to 36-month-olds in Kampala, Uganda.

The nutrition transition in sub-Saharan Africa has led to increased consumption of ultra-processed foods in infancy, especially sweet foods. This has heightened the risk for nutrition-related non-communicable diseases, including dental caries and overweight/obesity, and promotes poor food choices later in life. The present study used a cross-sectional design to investigate the consumption frequency of ultra-processed foods and beverages among urban 6- to 36-month-olds attending four selected health facilities in Kampala using a standardised questionnaire and 24-h diet recall record. The primar

Ninety-Day Subchronic Toxicology of Individual and Combined Toxicants from the Thermal Processing of Lipid-Rich Foods.

Oxidative derivatives of triacylglycerols (ox-TGs), aldehydes, and 3-monochloropropane-1,2-diol esters (3-MCPDE) were simultaneously evaluated in a 90-day subchronic study, focusing on biological indicators, biochemical indicators, and serum metabolomics as the first part of integrated toxicity and interactions. After 90 days of feeding Kunming mice, coexposure to combined toxicants significantly inhibited the trend of liver weight gain, reduced the levels of total bilirubin (TBIL) and direct bilirubin (DBIL), and decreased uric acid (UA) compared to individual toxicant exposure. A total of 21

Bolus Texture Testing as a Clinical Method for Evaluating Food Oral Processing and Choking Risk: A Pilot Study.

PURPOSE: Choking on food is a leading cause of accidental death in several populations, including children, people with intellectual/developmental disability, and older adults in residential care facilities. One contributor to choking risk is incomplete oral processing and failure to convert food to a cohesive, nonsticky bolus with a maximum particle size that will not block the airway. Clinical tests of mastication do not evaluate properties of chewed food boluses. We characterized expectorated boluses, after oral processing, using methods developed by the International Dysphagia Diet Standar

Consumption of ultra-processed foods and incidence of dyslipidaemias: the Brazilian Longitudinal Study of Adult Health (ELSA-Brasil).

Ultra-processed foods (UPF) have been associated with cardiometabolic outcomes, but the literature has still not reported their association with the incidence of dyslipidaemias, one of the most important risk factors for the occurrence of CVD. The objective of this study was to verify the association between consumption of UPF and incidence of dyslipidaemia in Brazilian civil servants at a 4-year follow-up. The study used data from 5275 participants at baseline and on the first follow-up visit in the Brazilian Longitudinal Study of Adult Health (ELSA-Brasil). We applied a FFQ at baseline and i

Neuroimaging Metrics of Drug and Food Processing in Cocaine-Dependence, as a Function of Psychopathic Traits and Substance Use Severity.

Previous studies suggest that psychopathic traits commonly present as comorbid with substance use disorders. Moreover, neuroimaging and psychometric findings suggest that psychopathic traits may predispose individuals to a sensitized reward response to drugs. Given that substance use disorders are characterized by a neurocognitive bias toward drug-reward relative to non-drug reward, it is possible that heightened psychopathic characteristics may further predispose to this processing bias. To evaluate this possibility, we assessed psychopathic traits (measured using the PCL-R; Hare, 2003) in 10

Influence of fermentation and other processing steps on the folate content of a traditional African cereal-based fermented food.

Folate deficiency can cause a number of diseases including neural tube defects and megaloblastic anemia, and still occurs in both developed and developing countries. Cereal-based food products are staple foods in many countries, and may therefore be useful sources of folate. The production of folate by microorganisms has been demonstrated in some cereal-based fermented foods, but has never been studied in a traditional African cereal based food spontaneously fermented. The microbiota of ben-saalga, a pearl-millet based fermented porridge frequently consumed in Burkina Faso, has a good genetic

Disgust evoked by strong wormwood bitterness influences the processing of visual food cues in women: An ERP study.

The perception of intense bitterness is associated with disgust and food rejection. The present cross-modal event-related potential (ERP) study investigated whether a bitter aftertaste is able to influence affective ratings and the neuronal processing of visual food cues. We presented 39 healthy normal-weight women (mean age: 22.5 years) with images depicting high-caloric meat dishes, high-caloric sweets, and low-caloric vegetables after they had either rinsed their mouth with wormwood tea (bitter group; n = 20) or water (control group; n = 19) for 30s. The bitter aftertaste of wormwood enhanc

Wheat-based foods and non celiac gluten/wheat sensitivity: Is drastic processing the main key issue?

While gluten and wheat must be absolutely avoided in coeliac disease and allergy, respectively, nutritional recommendations are largely more confused about non-coeliac wheat/gluten sensitivity (NCWGS). Today, some even recommend avoiding all cereal-based foods. In this paper, the increased NCWGS prevalence is hypothesized to parallel the use of more and more drastic processes applied to the original wheat grain. First, a parallel between gluten-related disorders and wheat processing and consumption evolution is briefly proposed. Notably, increased use of exogenous vital gluten is considered. D

Inter-individual retronasal aroma release variability during cheese consumption: Role of food oral processing.

The aim of our study was to explain inter-individual differences on in vivo aroma release during cheese consumption by oral physiological parameters. To reach this objective, 34 subjects were recruited. Their salivary flow, oral volume and velum opening were determined. Six cheddar-based melted cheeses with different fat levels and firmness were flavoured with nonan-2-one (NO) and ethyl propanoate (EP). During their consumption (free protocol), in vivo retro nasal aroma release was followed by Atmospheric Pressure Chemical Ionisation-Mass Spectrometry (APCI-MS). Chewing activity was evaluated

Virulence characterization and genotypic analyses of Listeria monocytogenes isolates from food and processing environments in eastern China.

In this study, twenty L. monocytogenes food-related isolates collected from eastern China Zhejiang province were compared by in vivo LD50 assays as well as in vitro cytopathic plaque forming assay. Nineteen L. monocytogenes isolates (19/20) were as virulent as reference strain 10403S, while the isolate M4 had low pathogenicity. The unique isolate M4 fell into lineage III based on the partial nucleotide variations of actA, while the other isolates belonged to the more common lineages I and II. L. monocytogenes isolates were grouped in 17 to 19 subtypes using pulsed-field gel electrophoresis (PF

Long-term increase in Mediterranean diet adherence combined with decrease in ultra-processed food consumption is associated with reduction in depressive symptoms: Results from the Moli-sani study.

BACKGROUND AND AIMS: Mediterranean diet (MD) has been associated with a reduced risk of depressive symptoms, while high intake of ultra-processed foods (UPFs) has been linked to poorer mental health. However, the long-term combined effects of changes in MD adherence and UPF consumption on depressive symptoms remain poorly investigated. The aim of the study was to examine how joint trajectories of MD adherence and UPF consumption over the long term relates to changes in depressive symptoms. METHODS: We longitudinally analysed data from 1417 adults (54% women, mean age 54 yr) in the Moli-sani S
