Mapping fermented foods across Europe: insights from the PIMENTO COST action.

Fermented foods (FF) have long been integral to human diets, originally serving as a natural means of food preservation. Recently, they have gained renewed attention for their potential health benefits. This study, within the PIMENTO COST Action CA20128, aimed to map FF diversity, production volumes, fermentation technologies, challenges, and innovation trends across Europe and neighboring regions. Data were collected from 16 countries, including Northern, Southern, Western and Eastern Europe, as well as Türkiye and Morocco, via a structured questionnaire covering production and certification,

Electrochemical aptasensor based on g-C3N4/rGO nanocomposite modified electrodes for antibiotics detection in raw milk.

The presence of antibiotics in water environments, dairy products, foods, and beverages is a cause for concern due to its contribution to antimicrobial resistance, which possesses a significant challenge to healthcare management. In line with sustainability development goals, there is a need for rapid and selective methods to detect antibiotics in food. In this study, aptamer immobilized graphitic carbon nitride/reduced graphene oxide (g-C3N4/rGO) nanocomposite modified electrodes have been developed as a platform technology for bio-electrochemical detection. The technology was evaluated for t

Ferric pyrophosphate in precision iron fortification: mechanistic insights into food-system suitability, bioavailability modulation, and evaluation strategies.

Iron is an essential trace nutrient, and iron deficiency remains a major global public health problem. Iron-fortified foods are important vehicles for preventive iron supplementation. Precision iron fortification requires matching iron sources to specific food matrices to balance product quality and fortification efficacy. Ferric pyrophosphate (FePP) shows good food-system stability and gastrointestinal tolerability, but low solubility and limited bioavailability restrict wider application. This review addresses FePP food-system suitability, bioavailability modulation, and evaluation strategie

Advancements in Detection Methods for Salmonella in Food: A Comprehensive Review.

Non-typhoidal Salmonella species are one of the leading causes of gastrointestinal disease in North America, leading to a significant burden on the healthcare system resulting in a huge economic impact. Consequently, early detection of Salmonella species in the food supply, in accordance with food safety regulations, is crucial for protecting public health, preventing outbreaks, and avoiding serious economic losses. A variety of techniques have been employed to detect the presence of this pathogen in the food supply, including culture-based, immunological, and molecular methods. The present re

Wholegenome sequencing as the gold standard approach for control of Listeria monocytogenes in the food chain.

Listeria monocytogenes has been implicated in numerous outbreaks and related deaths of listeriosis. In food production, L. monocytogenes occurs in raw food material and above all, through postprocessing contamination. The use of next-generation sequencing technologies such as whole-genome sequencing (WGS) facilitates foodborne outbreak investigations, pathogen source tracking and tracing geographic distributions of different clonal complexes, routine microbiological/epidemiological surveillance of listeriosis, and quantitative microbial risk assessment. WGS can also be used to predict various

Unlocking food safety: a comprehensive review of South Africa's food control and safety landscape from an environmental health perspective.

Food fraud (often called fake food in South Africa) the deliberate misrepresentation or adulteration of food products for financial gain, is a growing problem in South Africa (SA) with severe public health and financial consequences for consumers and businesses. The recent public outcry against food fraud practices especially in communities that have lost loved ones due to the consumption of allegedly adulterated foodstuffs, highlights the grave danger that food fraud poses to consumers and the potential for significant reputational damage to food manufacturers. Despite the risks, food fraud o

Intense pulsed light for inactivating planktonic and biofilm molds in food.

It has been reported that about a quarter of the world's agriculture products is unable to be consumed each year because of mold contamination, resulting in incalculable economic losses. Despite modern food technology and the various preservation techniques available, the problem of mold contamination of food is still not adequately controlled. In this study, we simulated the biofilm formed by Aspergillus niger and Penicillium glaucum in liquid and solid food in 96 well cell culture plates and polycarbonate membrane models, respectively, and investigated the fungicidal effect of IPL on plankto…

From Past to Present: Transformation of Food Safety Management and Food Safety Culture in the California Almond Industry.

The California almond industry underwent a remarkable transformation in food safety management and culture following outbreaks of salmonellosis associated with the consumption of raw almonds in 2000-2001 and 2003-2004. However, limited studies have examined these changes from a longitudinal perspective. This study documents the transformation of food safety management in the California almond industry over an 18-year period, explores indicators of change in food safety culture, identifies the key factors driving these changes, and examines the determinants of industry-wide technology adoption.

The science of alternative proteins: Comparing animal and plant-based sources.

The very basic concepts of components regarding dietary food upholds providing reinforcement to the cells, tissues, organs for physiological activities. Each dietary food type gives unique nutrition, strength and serves chemical compound required for the organism to perform any different function such as metabolism (catabolism and anabolism), growth, development and senescence. Protein is one of the dietary foods among dietary food types i.e. carbohydrates, lipids, fats and essential oil. Plant proteins consumption rate are very less when compared to the consumption of animal protein as food.

This study introduces circular food waste management strategies that promote collaboration between large enterprises and community-based sectors. Thermal dehydration and anaerobic digestion were implemented as treatment technologies in a shopping mall and a local community, respectively. Thermally treated food waste from the shopping mall showed an average moisture content of 1.86% with 49.3% carbohydrates, 21.0% protein, 12.9% fat, 7.0% fiber, 8.7% ash, and a carbon-to-nitrogen (C/N) ratio of 10.4. This dried organic material can be directly used as a soil amendment or supplied to communities

Micro-nano-bio acoustic system for the detection of foodborne pathogens in real samples.

The fast and efficient detection of foodborne pathogens is a societal priority, given the large number of food-poisoning outbreaks, and a scientific and technological challenge, given the need to detect as little as 1 viable cell in 25 gr of food. Here, we present the first approach that achieves the above goal, thanks to the use of a micro/nano-technology and the detection capability of acoustic wave sensors. Starting from 1 Salmonella cell in 25 ml of milk, we employ immuno-magnetic beads to capture cells after only 3 h of pre-enrichment and subsequently demonstrate efficient DNA amplificati

High-pressure in situ methods revealing the effect of pressure on glutathione structure.

High-pressure processing is a nonthermal method of food processing that is widely used in sterilization and enzyme inactivation. Although some works on technological parameters and quality evaluation have been performed, the mechanism of high pressure on food is still unclear. Due to the complexity of food ingredients, a tremendously important tripeptide in food proteins, orthorhombic l-glutathione, was employed in this work. In addition, in situ methods such as high-pressure Raman, infrared, and X-ray diffraction were used to investigate the structural changes in the pressure range of 0-10 GP
