INTRODUCTION: This study investigated the effect of ultrasound assisted pomegranate flower (Punica granatum L.) extract (DPF) on the oxidative stability of sunflower oil during intermittent heating. Dried pomegranate flowers were extracted using 80% aqueous ethanol in an ultrasonic bath, yielding a phytochemically rich extract characterized by high levels of total phenolics (267.36 ± 4.19 mg GAE/g DW), flavonoids (84.56 ± 2.43 mg QE/g DW), and ellagitannins such as punicalagins and ellagic acid.
