Methods for Controlling Biogenic Amine Formation in Seafood: Ensuring Safety and Quality.

Biogenic amines (BAs) are low-molecular-weight organic bases that occur naturally in various foods, particularly those undergoing fermentation or spoilage. Although they play essential physiological roles in the human body, excessive intake through food can have adverse health effects. Due to their accumulation in food products, including fish, cheese, and fermented foods, BAs are considered chemical hazards in food safety and can cause toxicological effects. Consumption of foods, especially aquatic products, with elevated BA levels can lead to symptoms ranging from headaches and hypertension …

Effects of feeding Candida utilis-fermented pea starch on overall, metabolic and intestinal health of dogs and cats.

Pulse-based pet foods often contain peas or pea starch, which tend to impart a bitter taste. Fermentation increases feed palatability, but also has the potential to improve overall health. Therefore, the current study used the yeast, Candida utilis, to ferment pea starch for use in pet food and assessed health effects, focusing on metabolic and intestinal health in dogs and cats. Whole diets had ~30% starch inclusion of either C. utilis-fermented pea starch, unfermented pea starch, or a control corn diet fed over a 20-day period to beagle dogs and domestic cats. Complete blood count, biochemis

The indigenous microbial diversity involved in the spontaneous fermentation of red dragon fruit (Hylocereus polyrhizus) identified by means of molecular tools.

Red dragon fruit (RDF) is well-known for its high nutritional content, especially the red pigment betacyanins that possess high antioxidant activity. Natural fermentation is an ancient yet outstanding technique that relies on the autochthonous microbiota from fruits and vegetables surfaces to preserve and improve the nutritional values and quality of the food product. The present study was to evaluate and identify the indigenous microbial community (bacteria and fungi) that are involved in the natural fermentation of RDF. Results revealed a total of twenty bacterial pure cultures and nine fung

Botulism among Alaska Natives. The role of changing food preparation and consumption practices.

Alaska Natives have one of the highest rates of food-borne botulism worldwide. All outbreaks have been associated with the consumption of native foods, but in recent years outbreaks have occurred in previously unaffected areas and have involved new food items. Five botulism outbreaks occurred between 1975 and 1985 in an area of southwestern Alaska without previous confirmed outbreaks and among one ethnic group, the Yupik Eskimo. Of the 5 outbreaks, 3 were associated with fermented beaver tail, a nontraditional native food recently introduced into the region. Preparation techniques vary widely

From biosynthesis to food market translation of pullulan: AI-assisted production, structure-property-function interplay, regulatory perspectives, and commercialization.

Pullulan, a non-ionic exopolysaccharide produced by the yeast-like fungus Aureobasidium pullulans, has gained significant attention in the food industry due to its biodegradability, non-toxicity, and excellent film-forming properties. These characteristics make it suitable for sustainable food packaging, edible coatings, and other food-related applications. Despite its potential, commercial use of pullulan is limited by challenges in biosynthesis, high production costs, and varying regulatory requirements. While cost remains a barrier, advances in fermentation technology and raw material optim

The use of lactic acid bacteria adjunct cultures to decrease the incidence of gas defects in Cheddar cheese production.

Heterofermentative lactic acid bacteria (LAB) have the ability to metabolize 6-carbon sugars, such as galactose, to produce carbon dioxide, which can cause late-stage gas formation defects in Cheddar cheese characterized by slits, cracks, and blown retail packaging. Slits and cracks make the cheese more difficult to shred and slice, and blown bags make the cheese less appealing to customers. Homofermentative LAB are often used as adjunct cultures to modify the flavor of Cheddar cheese and have the potential to act as bioprotective cultures and inhibit gas production by heterofermentative nonst

[A case of "late-onset" anaphylaxis caused by fermented soybeans; Natto].

Natto is a Japanese traditional food made from fermented soybeans. We report a case of anaphylaxis caused by natto and review the literature. The patient was a 22-year-old man who showed systemic eruption with itching and pectoralgia about 10 hours after eating a meal containing natto. Results of skin tests for soybean allergen were negative, and the allergen remained unidentified. We then used a food elimination trial to confirm the allergy. However the patient did not refrain from eating natto, and he had three anaphylactic reactions might have been caused by natto. Each event occurred 10 to

Loss of residual cyanogens in a cassava food during short-term storage.

Residual cyanogens in gari, the most popular cassava food in West Africa, is implicated in the causation of tropical ataxic neuropathy. Gari is eaten by soaking its granules in cold water or by adding boiling water to make a food called eba. This study was conducted to determine whether loss of the residual cyanogens in gari during short-term storage and when gari is made into eba will reduce dietary cyanide load in consumers. Fifteen samples of gari, nine roasted from cassava mash fermented for at least 4 days (type A) and six roasted from cassava mash fermented for only 1 day (type B), were

Kimchi Fermentation-Driven Detoxification of Flaxseed: Impact on Physicochemical Quality and Antioxidant Potential.

Flaxseed (Linum usitatissimum L.) is a rich source of α-linolenic acid (ALA) and lignans but contains toxic cyanogenic glycosides (CGs) that limit its application in foods. This study investigated the efficacy of a specialized Lactobacillaceae consortium in detoxifying flaxseed and the subsequent effects of adding this cyanogenic glycoside-depleted flaxseed (CGDF) to a kimchi matrix. Ground flaxseed and CGDF were added to the kimchi seasoning mixture at concentrations of 0.5%, 1.0%, and 2.0% (w/w) and fermented at 4 °C for 8 weeks. Analytical results confirmed that the fermentation process red

Microbial succession-potential influence mechanism on flavor modulation in spontaneously fermented Moringa oleifera leaves: An integrative multi-omics approach.

In this study, the relationship between flavor composition and microbial succession in Moringa oleifera pickles (MOPs) at different stages of spontaneous fermentation was systematically investigated. The results demonstrated a significant increase in the content of organic acids and amino acids during fermentation including malonic acid, citric acid, valine (Val), and asparagine (Asn). These compounds not only enhanced the overall flavor profile but also provided favorable nutritional conditions that supported microbial succession. Furthermore, an integrated aroma network was established throu

Formation of melatonin and its isomer during bread dough fermentation and effect of baking.

Melatonin is produced mainly by the pineal gland in vertebrates. Also, melatonin and its isomer are found in foods. Investigating the formation of melatonin and its isomer is of importance during bread dough fermentation and its degradation during baking since bread is widely consumed in high amounts. Formation of melatonin was not significant during dough fermentation. The melatonin isomer content of nonfermented dough was found to be 4.02 ng/g and increased up to 16.71 ng/g during fermentation. Lower amounts of isomer in crumb and crust than dough showed that the thermal process caused a rem

A microbiota-informed pipeline for in vitro characterisation of insulinotropic properties of dairy fermentates using static EndoC-βH1 and dynamic microfluidic models.

Diabetes mellitus (DM), which encompasses Type 1, Type 2 and gestational diabetes, affects approximately 537 million adults, with prevalence continuing to rise. In addition to pregnancy, factors such as dietary choices, lifestyle and infections can lead to the development of DM. Given the increasing prevalence of DM, it is necessary to continue to identify approaches to control the release of insulin. Emerging evidence indicates that the gut microbiota plays a central role in mediating the metabolic effects of diet on the host, including the regulation of insulin secretion. Dietary interventio
