Complex, multilevel barriers and solutions for nutrition security in the USA: a community-based participatory research approach.

INTRODUCTION: While 86% of US households are food secure, nutritional quality remains poor. Minimal research has been conducted to identify and address the complex, multilevel barriers and solutions for nutrition security in local communities. METHODS: We employed a mixed-methods community-based participatory research approach to better understand nutrition security by identifying multilevel barriers and potential solutions from the perspectives of 35 low-income community residents, 27 food system workers and 7 local policy-makers in the Dallas-Fort Worth metroplex. RESULTS: Four themes emer

Food marketing and gender among children and adolescents: a scoping review.

BACKGROUND: Pervasive marketing of unhealthy foods is a contributing factor to the growth of the global epidemic of childhood and adolescent overweight and obesity. Sex and gender differences come into play in the design of and responses to these marketing strategies, contributing to the perpetuation of stereotyped behavior and generating disparities in food choices and health. The purpose of this paper is to review the current literature regarding gender differences in food marketing design and perception among children and adolescents to facilitate evidence-based policy dialogues to address

Pyrene derivative based fluorometric smart tags for shrimp freshness monitoring via a smartphone.

With increasing emphasis on food safety, there is a growing need for simple, effective, and instrument-free methods to monitor food freshness. To meet this demand, we report a hydrogel-based tag for shrimp freshness monitoring that employs a pyrene-derivative fluorometric indicator, 4-(2-(pyren-2-yl)vinyl)pyridine (PY-Py). PY-Py exhibits large spectral red-shifts (>100 nm) and readily distinguishable fluorescence color changes upon protonation in both the solid state and in solution, making it a pH-responsive indicator with significant fluorescence ratiometric properties. The protonated form (

Health-Related Quality of Life in Patients with Eosinophilic Esophagitis.

Measuring health-related quality of life (HRQOL) gained relevance in research and clinical practice in patients with eosinophilic esophagitis. The physical discomfort and social and psychological consequences of this food-related disease substantially affect HRQOL. Determinant of an impaired HRQOL include symptom severity, disease duration, biological disease activity, and psychological factors. Patients prioritize symptom relief and improved HRQOL as treatment objectives. Available treatment options can address these goals; however, there is a suboptimal adherence to treatment. There is a nee

Sickle Cell Disease Update: New Treatments and Challenging Nutritional Interventions.

Sickle cell disease (SCD), a distinctive and often overlooked illness in the 21st century, is a congenital blood disorder characterized by considerable phenotypic diversity. It comprises a group of disorders, with sickle cell anemia (SCA) being the most prevalent and serious genotype. Although there have been some systematic reviews of global data, worldwide statistics regarding SCD prevalence, morbidity, and mortality remain scarce. In developed countries with a lower number of sickle cell patients, cutting-edge technologies have led to the development of new treatments. However, in developin

[Effects of nitrogen management on yield, quality, nitrogen accumulation and its transportation of watermelon in gravel-mulched field].

The effects of nitrogen management on yield, quality, nitrogen and dry matter accumulation and transportation of watermelon in sand field were studied based on a field experiment. The results showed that too low or too high basal nitrogen fertilzation was unfavorable to seedling growth of watermelon in sand field, and no nitrogen application at vine extension or fruiting stages limited the formation of 'source' or 'sink'. At the same nitrogen rate, compared with the traditional T1 treatment (30% basal N fertilizer + 70% N fertilizer in vine extension), the nitrogen and dry matter accumulation

Reducing the sulfur-dioxide binding power of sweet white wines by solid-phase extraction.

The high sulfur-dioxide binding power of sweet white wines may be reduced by extracting the naturally present carbonyl compounds from wine that are responsible for carbonyl bisulphites formation. The carbonyl compounds mainly responsible for trapping SO2 are acetaldehyde, pyruvic acid, and 2-oxoglutaric acid. The method employed was selective solid phase extraction, using phenylsulfonylhydrazine as a scavenging agent. The scavenging function was grafted onto a support prepared from raw materials derived from lignin. This approach is more acceptable to winemakers than the polymer media previous

Nutritional properties of einkorn wheat (Triticum monococcum L.).

The hulled wheat einkorn (Triticum monococcum L. ssp. monococcum), a staple food of early farmers for many thousand years, today is cropped only in small areas of the Mediterranean region and continental Europe. Increasing attention to the nutritional quality of foods has fostered renewed interest in this low-impact crop. The reappraisal of einkorn quality evidenced that this ancient wheat has some dietary advantages over polyploid wheats. Einkorn wholemeal is poor in dietary fibre but rich in proteins, lipids (mostly unsaturated fatty acids), fructans and trace elements (including zinc and ir

Hunger and torture. Assessing the adequacy of prison food under international law.

BACKGROUND: Deprivation of prisoner food, in terms of its quality and quantity, has generally been accepted as violating the prohibition of torture and related ill-treatment, particularly when combined with other factors (i.e., harmful conditions and practices). Aspects relevant to assessing when and how food provision is considered inadequate, however, remain complex and confusing. This article presents a doctrinal review which consolidates normative understandings of adequate prisoner food. METHOD: A systematic full-text search was made of international and regional normative standards, cas

Comprehensive investigation of Lpt-targeting antimicrobial peptide Thanatin for sterilization and preservation in foods.

Foodborne pathogenic and spoilage bacteria, particularly Gram-negative species, pose significant challenges to food safety and quality. Developing antimicrobial strategies that simultaneously ensure microbial control and product integrity is therefore of great importance. Thanatin, an antimicrobial peptide targeting the lipopolysaccharide transport (Lpt) system, has shown potent activity against Gram-negative bacteria, yet its applicability in food systems remains insufficiently explored. In this study, the antibacterial efficacy and food preservation potential of Thanatin were systematically

Balancing extraction efficiency and quality of coconut oil by innovative voltage-modulated cold plasma.

Cold plasma (CP) can improve edible oil extraction efficiency, but its industrial application requires balancing processing parameters with comprehensive oil quality. This study established the process-quality relationship between CP voltage and multidimensional attributes. CP treatment increased extraction yield by 2.21%-5.37% compared to the untreated control, but no significant differences were observed among the voltage groups (30-70 kV). For the first time, a critical threshold (50 kV) for quality evolution was identified via lipidomic and volatile analysis, while 30 kV achieved balanced

[Eosinophilic esophagitis-an underestimated food allergy?].

Eosinophilic oesophagitis (EoE) is a chronic T2-inflammatory disease and can be figuratively referred to as atopic dermatitis of the oesophagus. It is an immune-mediated disease caused by food allergens and is histologically defined by eosinophilic infiltration and clinically characterised by symptoms of oesophageal dysfunction. In addition to reducing the currently still considerable diagnostic latency, the focus is on prioritising existing and new treatment options with the aim of ensuring effective patient care with improved quality of life in the long term.
