Adverse reactions to food constituents: allergy, intolerance, and autoimmunity.

Food allergies and intolerance represent important health concerns to consumers who are predisposed to these illnesses. Unlike many current food safety issues, food sensitivities are complicated by both complex and multiple individual adverse reactions, which can vary from emotional to pathophysiological ailments. In some instances, the underlying mechanisms that result in the development of food allergies or intolerance have marked differences but produce common symptoms. The present-day diagnosis of these disorders can be impeded by intrinsic limitations in generating accurate information fr

Impacts of reproductive technologies on beef production in the United States.

Estimations of world population growth indicate that by the year 2050 we will reach nine billion habitants on earth. These estimates impose a tremendous challenge in the current agricultural systems as food supply will need to increase by 100 % in the next 40 years (Food and Agriculture Organization of the United Nations 2009). Beef will be a primary protein source that will assist in meeting the requirements for a portion of the protein in diets of this expanding global populace. Beef is a high-quality protein that contains all essential amino acids for the human body and also contains additi

Studies on functional foods in Japan--state of the art.

This paper pinpoints the "tertiary" function of foods which, different from the conventional "primary" and "secondary" functions that are related to nutrition and preference, respectively, is understood to be directly involved in the modulation of our physiological systems such as the immune, endocrine, nerve, circulatory, and digestive systems. Insights into this newly defined function are particularly important in that the intake of some physiologically functional constituents of foods could be effective in preventing diseases that may be caused by disorders in these physiological systems. Clostridioides difficile as a Potential Pathogen of Importance to One Health: A Review.

Clostridioides difficile (basonym Clostridium) is a bacterial enteropathogen associated with cases of C. difficile infection that can result in pseudomembranous colitis, rapid fluid loss, and death. For decades following its isolation, C. difficile was thought to be a solely nosocomial pathogen, being isolated from individuals undergoing antimicrobial therapy and largely affecting elderly populations. More recently, C. difficile spores have been identified in the broader environment, including in food-producing animals, soil, and food matrices, in both ready-to-eat foods and meat products. Fur

Cold Plasma-Mediated Inactivation of Spore-Forming Microorganisms: Mechanisms, Quality Attributes, and Efficiency Parameters.

Bacterial spores are a dormant and non-replicating state of bacteria, characterized by multiple layers of proteins, carbohydrates, and lipids. Spores from Bacillus and Clostridium species serve as main indicators of food safety, presenting considerable risks to consumers health. Heat sterilization is an easy and efficient technique; however, it compromises the quality and nutritional value of food. Cold plasma (CP), a developing non-thermal sterilization method, has demonstrated significant promise in food sterilization. CP offers a promising alternative, as it does not cause irreversible dama

Processing insects for use in the food and feed industry.

Although insects are becoming more accepted as potential protein sources for food and feed, the appearance of the insect may be off-putting due to associations of disgust. Edible insects are more likely to be eaten if they are processed into non-recognizable forms. Thus, insects require the use of commercial processing methods that will render the protein suitable for food/feed formulation, while maintaining the safety, nutritional and sensory quality of the final product. Common methods that can be used include lipid extraction, enzymatic proteolysis, commercial thermal processing (e.g. blanc

Sustainable multisample emulsive microextraction technique for the determination of triazole fungicides in food samples.

To address concerns about persistent triazole fungicide residues and their potential risks to food safety, a novel emulsive liquid-liquid microextraction pretreatment method was developed following green chemistry principles. Cyclopentyl methyl ether (CPME), characterized by low toxicity, was utilized as an effective extraction solvent; however, its emulsification was challenging. Alkyl polyglucosides (APGs) exhibited excellent biodegradability and surface activity, facilitating the preparation of oil-in-water emulsions by mixing APG aqueous solution with CPME.
