Bean-to-Bar Chocolate: An Integrative Framework Linking Terroir, Biochemistry, Processing, and Sensory Expression.

The bean-to-bar movement, which emerged in the United States in 1996, represents a transformative approach to chocolate production and consumption by integrating craftsmanship, sustainability, and gastronomic authenticity. This study conducted a literature review using the narrative approach, as the object of investigation encompasses both conceptual, sensory, technological, and market dimensions that are not always consolidated in formal scientific databases. The current literature on the concept, production chain, and sensory, cultural, and market dimensions that distinguish bean-to-bar choc

Decoding the core microbiota during liquor fermentation of sauce-aroma baijiu: Advances in the characteristics of core microbial communities and their regulatory strategies.

Sauce-aroma Baijiu, a traditional Chinese solid-state fermented liquor, owes its unique quality to the synergistic metabolism of core microbiota (bacteria, yeasts, molds) during stacking and cellar fermentation. However, previous studies have predominantly focused on high-temperature Daqu, leaving the core microbiota in fermented grains insufficiently characterized, particularly regarding their succession dynamics, functional attributes, and targeted regulatory approaches. Additionally, the complex interspecific interactions and environmental adaptation mechanisms of core microbiota remain unc

Impact of minerals on the microbial species diversity and metabolite dynamics during spontaneous backslopped wheat sourdough productions.

Sourdough production represents a dynamic fermentation process, involving complex interactions between microorganisms and the flour-water matrix. The quality of mature sourdoughs depends on factors such as the type of inoculum (spontaneous or starter culture-initiated), process parameters (temperature, pH, and dough yield), and ingredient variations (constituents of flour and water). Concerning the latter, the mineral availability may influence the microbial diversity and metabolite kinetics during sourdough production. Hence, in the present study, 10-day laboratory backslopped wheat sourdough

Characterization of a fermented dairy, sour cream: Lipolysis and the release profile of flavor compounds.

Lipolysis and flavor development during fermentation of sour cream were studied by evaluating the physicochemical changes, sensory differences and volatile components. The fermentation caused significant changes in pH, viable count and sensory evaluation. The peroxide value (POV) decreased after reaching the maximum value of 1.07 meq/kg at 15 h, while thiobarbituric acid reactive substances (TBARS) increased continuously with the accumulation of secondary oxidation products. The Free fatty acids (FFAs) in sour cream were mainly myristic, palmitic and stearic. GC-IMS was used to identify the fl

Metagenomic and metabolomic profiling reveals the correlation between the microbiota and flavor compounds and nutrients in fermented sausages.

Understanding the interrelationships between the differentially abundant microorganisms and metabolites of traditional "Fuet" fermented sausages (FSs) and inoculated fermented sausages (IFSs) can help us identify key species that are missing from commercial starter cultures to reproduce the flavor compounds and nutrients of traditional Fuet FSs. IFSs, inoculated with P. pentosaceus, P. acidilactici, S. xylosus, S. carnosus (SBM-52) or P. pentosaceus, and S. xylosus (THM-17), were deficient in reproducing the volatilome profile (in particular esters, methyl aldehydes, and methyl ketones) of tra

Comprehensive Review on Bulla: Uses and Nutritional, Cultural, and Processing Perspectives of an Enset-Derived Food in Ethiopia.

Enset (Ensete ventricosum) is a perennial herbaceous monocot belonging to the Musaceae family. It is a crucial crop in Southern and Southwestern Ethiopia, providing food security for over 20 million people. The three main enset-derived food products are kocho, amicho, and bulla. Most studies have focused primarily on kocho, with much less attention given to the characteristics, production methods, and uses of bulla. Despite being traditionally regarded as the highest quality enset product and its considerable importance, the existing literature on bulla production contains significant inconsis

Integrated electronic nose, GC-MS, and metagenomic analyses reveal volatile flavor and microbial community differences in heap-fermented grains of Jiangxiangxing Baijiu across different fermentation degrees.

The fermentation degree of heap-fermented grains in Jiangxiangxing Baijiu production is a critical factor influencing base Baijiu quality. However, conventional assessment methods largely rely on empirical experience and therefore suffer from limited objectivity and accuracy. In this study, integrated volatile profiling and metagenomic approaches were employed to investigate volatile characteristics and microbial functional potential differentiation in fermented grains with different fermentation degrees (under-fermented, normally fermented, and over-fermented). Significant differences in phys

Development of a Rapid On-Site Method for the Detection of Kazachstania servazzii and Candida sake in Kimchi Using Loop-Mediated Isothermal Amplification.

Kimchi has recently gained considerable global interest for its health benefits, including its probiotic properties and anticancer and antioxidative effects. However, in the later stages of kimchi fermentation, an increase in the number of yeast species that form a white film on the surface of kimchi, such as Kazachstania servazzii and Candida sake, takes place, which can negatively affect kimchi quality. Thus, we developed loop-mediated isothermal amplification (LAMP) assays for the on-site detection of K. servazzii and C. sake in kimchi. The internal transcribed spacer (ITS) region of 24 yea

Multi-omics integration deciphered microbial and metabolite dynamics during flavor development of probiotic-fermented Gastrodia elata Blume.

This study examined the succession of metabolites and microorganisms during the fermentation of Gastrodia elata Blume (GE) and their interrelationships. A total of 739 volatile compounds (VCs) were identified, with four recognized as key VCs: dimethyl disulfide, dimethyl trisulfide, 2-nonenal, and damascenone. The dominant bacteria in the prime fermentation liquid (PFL) and secondary fermentation liquid (SFL) stages exhibited dynamic changes influenced by total acid, total polyphenols, total flavonoids, and pH, with Limosilactobacillus and Acetobacter emerging as the predominant bacteria, resp

Genomic and phenotypic analysis of stress-tolerant, aroma-producing yeast screened under low-aw, low-moisture content for low-salt chili fermentation.

Developing low-salt foods is crucial to address health concerns associated with hsigh-salt diets, yet it poses a technical challenge: supporting microbial control through low water activity (aw) regulation without high-salt concentrations requires reducing the moisture content of the substrate, which poses a physiological challenge to conventional fermentative microbes. This study aims to bridge this gap by isolating yeasts capable of thriving under such low-salt (4-12% dry basis, d.b.), low-aw (0.87-0.92), and low-moisture content conditions. Using controlled fermentation of two chili varieti

Antibacterial activities of Adina rubella extract enhanced by fermentation and its application in packaging films.

Food spoilage caused by pathogens pose great threat to food safety and human health. Plastarch-based packaging films with antibacterial activities provide an effective way to control foodborne pathogens. In this study, microbial fermentation dominated by yeast was used for the first time to increase the antibacterial activity of Adina rubella extract (ARE). The best antimicrobial effect of ARE was observed by fermentation for 9 days. The minimum inhibitory concentration of ARE against Listeria monocytogenes was 3.125 mg/mL. ARE destroyed the structure of the cell wall, increased the permeabili

Effect of cassava starch structure on scalding of dough and baking expansion ability.

Fermented cassava products are important starchy food staples in South America. The quality of the products is affected by the baking expansion ability of the dough, which is in turn influenced by the starch fermentation process and drying method employed. We investigated the structural properties of cassava starch after different fermentation and drying treatments, and the effect of starch structure on scalding of dough and baking expansion ability. Fermentation combined with either exposure to sunlight or UV light treatment resulted in high cassava starch baking expansion. Moreover, we obser

Enhanced nutritional quality, digestibility, and flavor of grasshopper through solid state fermentation.

Koji- and tempeh-based fermentations, central to miso and soy sauce production, rely on filamentous fungi such as Aspergillus oryzae and Rhizopus oryzae to transform grains and legumes into foods with enhanced flavor and digestibility. In this study, we adapted this fermentation framework to grasshoppers (Locusta migratoria manilensis) using two independently evaluated systems. In the first system, pure cultures of A. oryzae and R. oryzae were applied to 100% grasshopper substrate. In the second, independently evaluated system, traditional matrix-based starters (soy koji and soy tempeh) were i

Solid-state co-fermentation enables exceptionally high vitamin B12 enrichment but limited bioaccessibility in faba beans.

Plant-based diets require sustainable strategies to ensure adequate vitamin B12 (B12) intake, as this micronutrient is naturally absent from plant foods. This study evaluated solid-state co-fermentation of faba beans with Propionibacterium freudenreichii and the filamentous fungi Rhizopus oligosporus or Aspergillus oryzae as a natural B12 fortification approach for developing legume-based foods with improved micronutrient profiles. Co-fermentation increased biologically active B12 to 2.1-2.2 μg/g dry weight after 66 h, representing a 170-200-fold increase compared with bacterial monoculture an

[Fermentable carbohydrates in teething preparations as a cause of caries in small children].

Occasional clinical observations have shown extensive caries lesions in small children between 12 and 36 months of age, in some of which cases, while sugar intake history was negative, continuous use of teething jellies, lozenges or syrups was established. This prompted the hypothesis that such products were the source of the hidden fermentable sugars, and the sugar content of a number of products available on the Swiss market was therefore analyzed. Sucrose was determined enzymatically using the Boehringer sucrose/glucose UV-test. The content of other fermentable carbohydrates was checked by
