Detection and zoonotic potential of Trichinella spp. from free-range pig farming in Greece.

Trichinellosis is a serious parasitic zoonosis, which is widely distributed around the world. Pork meat is still the predominant source of outbreaks of human trichinellosis in many countries. The aim of this study is to examine the impact of Trichinella spp. as an important risk factor on the free-range pig farming sector in Greece. In 2009, during routine testing for the detection of Trichinella larvae at slaughterhouses and the National Reference Laboratory for Parasites (NRL), a total of 826,426 pigs were tested with the magnetic stirrer method for Trichinella spp. at slaughterhouses, inclu…

Case Report: Streptococcus suis Human Infections among Pork Consumers in Jeju, South Korea: Zoonotic Threats.

Streptococcus suis, a bacterium commonly found in pigs, causes infections in humans through direct contact with infected animals or consumption of contaminated pork products. Recently, a localized outbreak of S. suis infection in humans resulted in three confirmed cases. All three patients had some form of contact with pigs in their medical history. One patient worked at a pig farm, whereas the other two consumed raw pork soup at the same restaurant. The patients were diagnosed with septicemia, subdural empyema, and infectious spondylitis. Streptococcus suis was isolated from their blood. This

High Predictive Power of Meat Juice Serology on the Presence of Hepatitis E Virus in Slaughter Pigs.

Hepatitis E virus (HEV) as a zoonotic agent can be responsible for an acute hepatitis in humans, which is usually self-limiting. Progression toward a chronic stage is possible, especially in immunocompromised patients. In the past decade, the number of hepatitis E cases in humans in Germany has increased enormously to 3491 cases in 2018. Domestic pigs have been identified as a main animal reservoir and the consumption of raw and undercooked pork products, that is, livers or liver products, meat or meat products, is known as a potential risk of foodborne HEV infection. The aim of this study was

Attribution of Listeria monocytogenes human infections to food and animal sources in Northern Italy.

Listeriosis is a foodborne illness characterized by a relatively low morbidity, but a large disease burden due to the severity of clinical manifestations and the high case fatality rate. Increased listeriosis notifications have been observed in Europe since the 2000s. However, the reasons for this increase are largely unknown, with the sources of sporadic human listerioris often remaining elusive. Here we inferred the relative contributions of several putative sources of Listeria monocytogenes strains from listerioris patients in Northern Italy (Piedmont and Lombardy regions), using two establ

Invited Commentary: Alpha-Gal Allergy: Tip of the Iceberg to a Pivotal Immune Response.

The syndrome of delayed allergic reactions to the carbohydrate galactose-alpha-1,3-galactose ("alpha-gal") has become increasingly recognized in allergy and immunology clinics regionally throughout the southeastern USA. Due to the increasing awareness of this unique food allergy, cases have been identified in the northeastern and central USA as well as in Central and South America, Europe, Asia, Scandinavia, and Australia. Clinically, alpha-gal allergy is characterized by reactions to non-primate mammalian meat (e.g., beef, pork, lamb) that occur 3-6 h following exposure. The IgE response to a

Chlorogenic acid-grafted chitosan as a natural cryoprotectant preserves the quality and myofibrillar protein stability of pork patties during repeated freeze-thaw cycles.

Repeated freeze-thaw (F-T) cycles during cold-chain storage severely deteriorate the quality of minced meat products. This study evaluated the cryoprotective efficacy of chlorogenic acid-grafted chitosan (CA-g-CH) on the quality stability and structural integrity of myofibrillar proteins (MPs) in pork patties. Pork patties supplemented with 0%, 0.3%, 0.6%, or 0.9% (w/w) CA-g-CH were subjected to six F-T cycles, and their physicochemical quality, water mobility, texture, rheological properties, lipid and protein oxidation, microstructure, and MP conformation were systematically evaluated. CA-g-

Human risk of diseases associated with red meat intake: Analysis of current theories and proposed role for metabolic incorporation of a non-human sialic acid.

One of the most consistent epidemiological associations between diet and human disease risk is the impact of red meat consumption (beef, pork, and lamb, particularly in processed forms). While risk estimates vary, associations are reported with all-cause mortality, colorectal and other carcinomas, atherosclerotic cardiovascular disease, type II diabetes, and possibly other inflammatory processes. There are many proposed explanations for these associations, some long discussed in the literature. Attempts to explain the effects of red meat consumption have invoked various red meat-associated age

Imported human trichinellosis: sequential IgG4 antibody response to Trichinella spiralis.

Two out of five members of one household presented with clinical signs of trichinellosis after their return to the Netherlands. The family had consumed Trichinella-infected pork in Montenegro, formerly Yugoslavia. Serological tests were performed at 1, 2, 6, and 18 months after ingestion of the infected meat. Trichinella-specific IgM, IgG, and IgA antibodies measured in sera from symptomatic and asymptomatic patients remained positive up to 18 months after ingestion. The measured IgG4 antibody response directed to a 45 kDa Trichinella spiralis antigen also persisted 18 months after ingestion f

[Diagnostics of alpha-gal syndrome : Current standards, pitfalls and perspectives].

α-Gal syndrome results from sensitization to the carbohydrate epitope galactose-α-1,3-galactose (α‑gal). The allergen occurs in mammalian meat and innards, but also in other foods and medical products of animal origin. Allergic reactions generally occur delayed after allergen intake with a latency period, depending on the individual tolerance threshold and the influence of cofactors. Details in the patient's medical history can help to establish the suspected diagnosis of α‑gal syndrome. Confirmation of the diagnosis requires the expertise of specialists, experienced with the implementation an

[Physiology and physiopathology of ryanodine receptors in swine. Significance of sensitivity to stress, stress myopathies, malignant hyperthermia and meat quality].

During the last decades intensive breeding of pigs has improved the growth rate, food conversion and the ratio between meat and fat. However, this improvement is very often associated in certain breeds of pig with the porcine stress syndrome, a higher incidence of muscle diseases and a reduced meat quality referred to as pale, soft exudative pork (PSE). These problems are well known since decades and are obviously caused by a variety of factors. The discovery of a mutation in the ryanodine receptor or Ca-release channel in the striated muscles of affected pigs has concentrated research on the

Hepatitis E virus and neurological disorders.

Hepatitis E is the most common cause of hepatitis worldwide. While originally considered a disease of developing countries, it is increasingly recognised in developed countries, probably related to contaminated pork meat, and where infection is often asymptomatic. However, several non-liver manifestations have become apparent, the most important of which are neurological, including Guillain-Barré syndrome (acute inflammatory demyelinating polyradiculoneuropathy (AIDP)), neuralgic amyotrophy and meningoencephalitis. We recommend testing all patients with AIDP and neuralgic amyotrophy for hepati…

Prevalence and risk factors associated with serum antibodies against Trichinella spiralis.

The presence of antibodies against Trichinella spiralis was investigated in a semi-rural county of Mexico using ELISA and electroimmunotransfer blot assay with crude larvae and ES antigens. The association of antibodies to several social, hygienic and dietary factors was also investigated. Antibody prevalences between 1.0 and 1.9% were found. Risk factors associated were gender female and ingestion of moronga, a pork meat sausage-like product. Our results suggest the presence of an endemic, unnoticed form of human trichinellosis. These observations may be relevant for other countries, especial…

Antimicrobial resistance in bacteria from pig production chain: a systematic review and meta-analyses focused on the Brazilian context.

Pork industry plays an important role in antibiotics consumption, which can lead to antimicrobial resistance (AMR) spread. Hence, monitoring and controlling AMR in swine production chains is essential to reduce the risks to public health. A systematic review protocol was developed to assess AMR in the pig production chain in Brazil, the fourth largest producer and exporter of pork in the world. More than 3000 strains obtained from swine chain had their antibiotic resistance characteristics assessed. Results showed a major attention to the research of swine AMR in Salmonella and Escherichia col

Streptococcus suis Meningitis: Epidemiology, Clinical Presentation and Treatment.

Streptococcus suis, a prevalent porcine pathogen, may sporadically cause infections in humans, and has recently emerged as a cause of zoonoses in some professionals. The aim of this article was to review available data on epidemiology, etiopathogenesis, diagnostics, and management of the most common form of S. suis infection, purulent meningitis. Literature data show that S. suis is an important etiological factor of purulent meningitis, especially in subjects being occupationally exposed to contact with pigs and/or pork meat. Owing to growing incidence of S. suis meningitis, a history of such…

Detection of DNA from undeclared animal species in commercial elimination diets for dogs using PCR.

BACKGROUND: Elimination diets are the gold standard for the diagnosis of adverse food reactions (AFR). A broad variety of commercial diets are available containing either hydrolysed protein or novel ingredients which claim to be suitable for elimination diets. Contamination may be one factor accounting for the failure of commercial elimination diet trials. HYPOTHESIS/OBJECTIVES: To test commercial diets labelled as suitable for elimination diets for dogs, for DNA of animal origin other than that declared on the label. METHODS: Twelve commercial dry and tinned dog food products were investiga

Fluoroquinolone sales in food animals and quinolone resistance in non-typhoidal Salmonella from retail meats: United States, 2009-2018.

OBJECTIVES: Antimicrobial-resistant non-typhoidal Salmonella (NTS) infections are associated with worse health outcomes compared to antimicrobial-susceptible infections. Misuse of antimicrobials in food animals can amplify the emergence of antimicrobial resistance. The objective of this study was to examine the association between fluoroquinolone sales in food animals and the prevalence of quinolone-resistant NTS isolated from retail meats. METHODS: We reviewed data for 4318 NTS isolates from retail meat samples collected from 2009 to 2018 through the FDA National Antimicrobial Resistance Mon
