Volatile formation by combined cultures of yeast and homofermentative or heterofermentative lactobacilli in plant-based fermented foods.

Despite increasing interest of consumers in plant-based products, sales of the latter have been subtly decreasing mainly due to organoleptic challenges. Fermentation offers a sustainable option for improving flavour production in plant-based products. Yeast and lactobacilli are common food fermenting microbes, but a proper understanding of the interactions between the two microorganisms during flavour formation is lacking. This study explored the impact of a co-cultures of yeast and lactobacilli on aroma formation during fermentation of wheat and pulse-based food systems. Volatile analysis usi

Effect of dietary supplementation with antioxidants and flavouring prototypes based on acorn and olive on the volatile profile of pork.

This study evaluated the impact of dietary supplementation with antioxidants (AO) and flavouring prototypes based on capsicum (CA), acorn (AC), and olive (OL) on the volatile profile of pork. Two trials were conducted. Trial 1 served as a preliminary screening to evaluate samples of longissimus thoracis et lumborum (LTL) of 32 barrows fed with diets containing different levels of CA, AC, and OL. Results showed that dietary treatments significantly affected the abundance of seven volatile compounds, particularly long-chain aldehydes, while the fatty acid profile remained unaffected. Trial 2 con

Time-resolved volatile profiles and molecular-species lipid remodeling during lipase treatment of anhydrous milk fat.

Enzymatic lipolysis is an established approach for modifying dairy flavor, yet the molecular-species lipid state associated with process-stage changes in aroma remains incompletely resolved. In this study, nine commercial lipases were compared under a unified apparent activity, and A12 was selected for detailed evaluation across a six-point hydrolysis time course (0-90 min) based on sensory screening. Sensory analysis combined with headspace solid-phase microextraction-gas chromatography-mass spectrometry (HS-SPME-GC-MS) and headspace gas chromatography-ion mobility spectrometry (HS-GC-IMS) wa

Lysine-assisted ultrasonic treatment of fish myofibrillar proteins conformational rearrangement: A synergistic strategy for enhanced volatile compounds adsorption and emulsion stabilization.

This study elucidated the synergistic mechanism of lysine-assisted ultrasonic treatment in mediating sea bass myofibrillar proteins (MPs) conformational rearrangement and optimizing their flavor retention and emulsification dual functionalities. The lysine-assisted ultrasonic treatment reduced α-helices content to 24.1 %, exposing hydrophobic groups and enhancing volatile compound adsorption. Molecular docking confirmed hexanal, octanal, and heptanal bound to MPs via hydrophobic interactions, van der Waals forces, and hydrogen bonds. Additionally, collaborative treatment decreased the particle

Transcriptomic profiling reveals a regulatory network governing volatile compound biosynthesis in Shine Muscat grapes (Vitis labruscana Baily × V. vinifera L.).

Winter berries accumulated more free volatile compounds than summer berries, and C6 volatile compounds were the main contributors to free volatile compounds. The volatile composition of grapes and wines is important in viticulture, since their aroma is one of the most important determinants of grape fruit quality. The aroma and general quality of grape fruit are influenced by the production of volatile compounds primarily influenced by crop management. In this study, the free and bound volatile compounds were determined using gas chromatography-mass spectrometry (GC-MS), along with the transcr

Analyzing the contribution of functional microorganism to volatile flavor compounds in Semillon wine and predicting their metabolic roles during natural fermentation.

Indigenous microorganism plays a pivotal role in natural wine fermenting and its distinctive qualities shaping. However, the contributions of functional microbial taxa to wine flavor formation remain underexplored. This study focuses on the natural fermentation systems of Semillon grapes from Wuwei and Zhangye Gansu sub-regions within the Hexi Corridor of China. We characterized the dynamics of microbial community succession during fermentation using a combination of metagenomic sequence and culture-dependent analysis. Concurrently, volatile compounds were quantified using headspace solid-phas

Online SPME-GC-MS is a feasible method to monitor lipid oxidation during simulated digestion of oils incorporated in a meal.

The clear need for marine n-3 PUFAs has brought attention to Schizochytrium sp, one of the few microorganisms approved for the production of edible oil rich in docosahexaenoic acid (DHA). The high concentrations of DHA make the oil highly susceptible to oxidation also in the gastrointestinal tract, which is a known pro-oxidant environment. In the present study, the development of volatile compounds was directly monitored during simulated digestion of Schizochytrium sp oil added to a simulated meal, with rapeseed and cod liver oils used as comparison. Volatiles were extracted during the incubat

The impact of China's Clean Air Action and future strategies: Actions targeting regionally dominant sources.

Chinese government has implemented a series of measures to reduce air pollution and protect human health, namely Clean Air Action. This init … abnormal increase in O3 is primarily due to the complex interactions between nitrogen oxides (NOx), volatile organic compounds (VOCs), and PM2.5, which together affected the photochemical balance. The relative versus absolute shifts in pollutant sources further complicate this picture. Despite overall emission reductions, the relative contributions from biomass burning have …

Shedding Light on the Volatile Composition of Broa, a Traditional Portuguese Maize Bread.

In Portugal, maize has been used for centuries to produce an ethnic bread called broa, employing traditional maize varieties, which are preferred by the consumers in detriment of commercial hybrids. In order to evaluate the maize volatiles that can influence consumers' acceptance of broas, twelve broas were prepared from twelve maize varieties (eleven traditional and one commercial hybrid), following a traditional recipe. All maize flours and broas were analyzed by HS-SPME-GC-MS (headspace solid-phase microextraction) and broas were appraised by a consumer sensory panel. In addition, the major

Effect of Leaf Maturity on Host Habitat Location by the Egg-Larval Parasitoid Ascogaster reticulata.

Adoxophyes honmai, a serious pest of tea plants, prefers to lay eggs on mature tea leaves rather than young leaves. Here, we examined a hypothesis that Ascogaster reticulata, an egg-larval parasitoid of A. honmai, increases the likelihood of encountering host egg masses by searching mature tea leaves when host-derived cues are not available. In a dual-choice bioassay using a four-arm olfactometer, A. reticulata preferred odor from intact, mature leaves versus young leaves. Based on volatile analysis with gas chromatography-mass spectrometry (GC-MS), we identified 5 and 10 compounds from mature
