Foodborne outbreaks caused by fecal contamination of fresh produce represent a serious concern to public health and the economy. As the consumption of fresh produce increases, public health officials and organizations have pushed for improvements in food safety procedures and environmental assessments to reduce the risk of contamination. Visual inspections and the establishment of "buffer zones" between animal feeding operations and producing fields are the current best practices for environmental assessments. However, a generalized distance guideline and visual inspections may not be enough t

In 2023, listeriosis experienced a significant increase in Europe, with 2952 invasive cases and 19.70 % mortality rate, being the ready-to-eat foods category identified as the mostly involved. This study focused on the survival of L. monocytogenes through a process of food contamination-storage-digestion. For this, cooked ham was artificially contaminated with biofilm or planktonic cells, followed or not by vacuum-packed storage at 7 °C for 7 days, and submitted to in vitro digestion. Enumeration analysis was performed at different stages during the contamination-storage-digestion process. Con…

In the recent past, Dubai has become a global hub of culinary excellence, and it needs to continue to maintain high food microbial quality to protect its reputation. The aim of this study was to evaluate the microbial quality of food contact surfaces and the hygienic status of the food environment (including food handlers) across various food service establishments (restaurants, cafeterias, and supermarkets) that offer ready-to-eat food in Dubai. A cross-sectional analysis was conducted using 947 swab samples from 308 establishments, including 777 restaurants, 78 cafeterias, 44 cafeteria-cum-r

Cold plasma (CP) is a novel non-thermal food processing technology characterized by low processing temperatures, high efficiency, and a pollution-free nature. It demonstrates promising application potential in food sterilization, preservation, and the degradation of mycotoxins. This review provides a comprehensive overview of recent advancements in the application of CP for food sterilization and mycotoxin degradation. It also critically analyzes the underlying degradation mechanisms of CP and the key factors affecting its decontamination efficacy. The application efficacy of CP across various

A case of listeriosis occurred in a hospitalised patient in England in July 2017. Analysis by whole genome sequencing of the Listeria monocytogenes from the patient's blood culture was identified as clonal complex (CC) 121. This culture was indistinguishable to isolates from sandwiches, salads and the maufacturing environment of Company X which supplied these products widely to the National Health Service. Whilst an inpatient, the case was served sandwiches produced by this company on 12 occasions. No other cases infected by this type were detected in the UK between 2016 and 2020. Between 2016

Toxoplasma gondii is an obligate intracellular protozoan parasite which final host is the cat and causes infection in humans and domestic animals. The main source of infection is the consumption of contaminated food such as meat, milk and their products. The aim of this study was to investigate the prevalence of T. gondii in meat, meat organs, milk, dairy products and eggs of different animals in Iran. This study was conducted by searching electronic databases such as Magiran, Scientific Information Database (SID), Ganj, PubMed and Scopus from 2000 to 2025. The findings of this study showed th

Nontyphoidal Salmonella (NTS), a major global cause of diarrheal disease, is principally carried by contaminated food, particularly products of animal origin such as poultry and pork. In China, NTS is the primary causative agent of pork-related foodborne illness. This study integrates the largest nationwide surveillance and behavior dataset in China into a unified QMRA framework, providing contextualized risk estimates and revealing a 34.3% contamination rate, with variations across regions and types of pork products. A study on pork consumption behavior helps establish a quantitative risk ass

This review emphasizes the prevalence of B. cereus in starchy food contamination and outbreak cases reported, the virulence of both enterotoxins and emetic toxins produced, and the possibility of contaminated in protein-rich food. The impact of emetic or enterotoxin-producing B. cereus on public health cannot be neglected. Thus, …

Animal feed is at the beginning of the food safety chain in the "farm-to-fork" model. The emergence of variant Creutzfeldt-Jakob disease has raised awareness of the importance of contaminated animal feed, but less attention has been paid to the role of bacterial contamination of animal feed in human foodborne illness. In the United States, animal feed is frequently contaminated with non-Typhi serotypes of Salmonella enterica and may lead to infection or colonization of food animals. These bacteria can contaminate animal carcasses at slaughter or cross-contaminate other food items, leading to h

During the slaughter process, cattle carcasses are split by sawing centrally down the vertebral column, resulting in contamination of each half with spinal cord material. Using a novel method based on a real-time PCR assay, we measured saw-mediated tissue transfer among carcasses. Up to 2.5% of the tissue recovered from each of the five subsequent carcasses by swabbing the split vertebral face came from the first carcass to be split; approximately 9 mg was spinal cord tissue. Under controlled conditions in an experimental abattoir, between 23 and 135 g of tissue accumulated in the saw after sp

Diarrheal diseases caused by intestinal protozoan parasites are a major food-borne public health problem across the world. Vegetables and fruits provide important nutrients and minerals, but are also common sources of some food-borne human pathogenic microorganisms. The contamination of raw vegetables and fruits with human pathogenic parasites are now a global public health threat, despite the health benefits of these foods in non-pharmacological prophylaxes against diseases. A large number of reports have documented the contamination of vegetables or fruits with human pathogenic microorganism

Climate change intensifies mycotoxin contamination through rising temperatures, elevated CO2, and altered precipitation. Global surveys reveal a high and widespread prevalence of major mycotoxins in staple cereals, with low-income countries bearing the greatest burden. This escalating contamination poses a growing threat to global food security, compromising both food availability and safety. To mitigate these risks, we propose four actions: establish a predictive global surveillance system integrating climate-crop-fungal models, deploy field-ready biosensors, scale up climate-resilient agricu

Thirty households with children receiving the fermented cereal food ogi were selected randomly from Ajara, a rural community in Lagos State, Nigeria. Eighty-one samples of ogi were collected from these households at the time of administration to the children. The degree of bacteriological contamination and pH values of the cooked ogi samples were determined. The mean pH was 3.6 +/- 0.2. Faecal coliform contamination levels of 3 to > or = 2400/ml were recorded in 26 (31.3%) of the 81 ogi samples. Levels of faecal coliforms increased significantly (P < 0.025) during storage of cooked samples for
