Survey of chloropropanols in soy sauces and related products.

A survey of soy sauces and related products available in the USA was conducted to determine the levels of 3-monochloropropane-1,2-diol (3-MCPD) and 1,3-dichloro-2-propanol (1,3-DCP) in these products. Fifty-five retail samples were purchased and analysed for 3-MCPD. 3-MCPD determinations were made according to a gas chromatography/mass spectrometry method validated by a collaborative trial. Eighty-five per cent of the samples analysed contained greater than the detection limit of 0.005 ppm (microg g(-1)) for 3-MCPD. Thirty-three per cent contained greater than 1 ppm; the highest level was 876

Maillard reaction in mild-based foods: nutritional consequences.

Chemical reactions occurring during industrial treatments or storage foods can lead to the formation of epsilon-deoxyketosyl compounds, the Amadori products. Food protein value can be adversely affected by these reactions, and in particular lysine, an essential amino acid having on its side chain a free amino group, can be converted to nonbioavailable N-substituted lysine or blocked lysine. by acid hydrolysis of epsilon-deoxyketosyl compounds, furosine is formed. In this paper furosine prepared from milk-based commercial products has been evaluated by use of a recently developed HPLC method us

The Contribution of Dietary Magnesium in Farm Animals and Human Nutrition.

Magnesium (Mg) is a mineral that plays an essential role as cofactor of more than 300 enzymes. Mg in farm animals' and human nutrition is recommended to avoid Mg deficiency, ensure adequate growth and health maintenance. Mg supplementation above the estimated minimum requirements is the best practice to improve farm animals' performances (fertility and yield) and food products' quality, since the performance of farm animals has grown in recent decades. Mg supplementation in pigs increases meat quality and sows' fertility; in poultry, it helps to avoid deficiency-related health conditions and t

Indoor environmental conditions correlate with the microbial landscape of food production facilities across space and time.

The microbial communities inhabiting food production environments are distinguished from those of other built environments in their capacity to influence food quality and safety, impacting consumer health. However, the degree to which indoor environmental conditions influence the composition of the bacterial and fungal communities throughout food production facilities remains insufficiently explored. In this study of five commercial food production facilities, we employed remote wireless sensors paired with marker-gene amplicon sequencing (bacterial 16S rRNA genes and fungal internal transcrib…

Development and Validation of the Food Expectation Questionnaire (FEX-Q): An Image-Based Instrument to Assess Food-Related Perceptions and Symptom Expectations.

BACKGROUND: Food-related gastrointestinal (GI) symptoms are highly prevalent in patients with IBS. Although dietary components may trigger symptoms through luminal mechanisms, cognitive expectations may also shape symptom perception within the gut-brain axis. No validated instrument exists to measure food-related symptom expectations. We developed and validated the Food Expectation Questionnaire (FEX-Q). METHODS: The FEX-Q was developed using a stepwise process including patient input, face-to-face validation, and an online validation. The finalized questionnaire presents food images rated on

High-voltage electrostatic field technology in food processing and preservation: mechanisms, applications, and emerging innovations.

Traditional food processing methods-such as chemical sterilization, heat treatment, and freezing-can compromise sensory attributes and reduce nutritional value. The high-voltage electrostatic field (HVEF), as a non-thermal technology, has gained attention for its ability to preserve food quality. This review presents the working principles of HVEF and its applications in food preservation and processing, including drying, thawing, freezing, and sterilization. It explores the underlying micro-level mechanisms and strategies to improve product quality. The review also discusses current limitatio…

Validation of a sensitive DNA walking strategy to characterise unauthorised GMOs using model food matrices mimicking common rice products.

To identify unauthorised GMOs in food and feed matrices, an integrated approach has recently been developed targeting pCAMBIA family vectors, highly present in transgenic plants. Their presence is first assessed by qPCR screening and is subsequently confirmed by characterising the transgene flanking regions, using DNA walking. Here, the DNA walking performance has been thoroughly tested for the first time, regarding the targeted DNA quality and quantity. Several assays, on model food matrices mimicking common rice products, have allowed to determine the limit of detection as well as the potent

Enhancing the fluorescence spectrum of frying oil using a nanoscale probe.

This study attempted to develop a probe-based fluorescence technology as a rapid method to discriminate the oxidation degree of oil. The fluorescence probe was made by dissolving the selected probe in a chloroform solvent. A fluorescence landscape profile for each oil sample was obtained to discriminate fluorescence changes during the oxidation process. Parallel factor analysis (PARAFAC) was performed to extract characteristic fluorescence peaks. Then, these characteristic fluorescence peaks and chemical indicators were used to build regression models based on support vector regression (SVR).

Effects of olive leaf extract addition on fermentative and oxidative processes of table olives and their nutritional properties.

An experimental investigation evaluated the possibility of increasing the nutritional value of fermented table olives by adding olive leaf extract (OLE). OLE was added to table olives fermented using indigenous bacteria and yeasts, and a commercial starter (Lactobacillus plantarum strain). Microbiological, physico-chemical, and sensory analyses showed that OLE addition resulted in fermented olives with higher levels of antioxidant, anti-inflammatory, and antimicrobial substances, but did not adversely affect their qualities. Moreover, OLE and the commercial starter functioned synergically agai

Advances in the control of wine spoilage by Zygosaccharomyces and Dekkera/Brettanomyces.

Understanding the characteristics of yeast spoilage, as well as the available control technologies, is vital to producing consistent, high-quality wine. Zygosaccharomyces bailii contamination may result in refermentation and CO2 production in sweet wines or grape juice concentrate, whereas Brettanomyces bruxellensis spoilage often contributes off-odors and flavors to red wines. Early detection of these yeasts by selective/differential media or genetic methods is important to minimize potential spoilage. More established methods of microbial control include sulfur dioxide, dimethyl dicarbonate,

Psychological Dimensions of Food Allergy: A Biopsychosocial and Neuropsychological Perspective.

Food allergy is a chronic immune-mediated condition that must be understood not only as a biological disorder but also as a biopsychosocial condition with significant psychological and neurodevelopmental consequences. Beyond the management of acute allergic reactions, individuals living with food allergy experience ongoing threat appraisal, dietary restriction, and social constraints, shaping emotional regulation, cognition, and wellbeing. This review adopts a psychology-led biopsychosocial and neuropsychological framework to examine the mechanisms through which immune activation and food avoi

Food Is More Than Just Medicine.

State Medicaid agencies are increasingly developing Food Is Medicine programs with the aim of improving health outcomes and lowering health-related costs for low-income people. The role of food in people's lives is influenced by a complex interplay of socio-ecological systems, including personal values and beliefs, social interactions, and community development. To make Food Is Medicine programs in Medicaid more effective, states can integrate a more nuanced understanding of the larger role that food plays in society into their Food Is Medicine program design and implementation. This includes

[Diagnostic and therapeutic procedure for two popular but quite distinct adverse reactions to food - fructose malabsorption and histamine intolerance].

Claiming to suffer from adverse food reactions is popular. In contrast to the classical food allergy, there are some pathomechanisms which are evidently dose-dependent. Thus the procedure in diagnosis and therapy must undoubtedly differ from the practice when food allergy is suspected or proven. Nevertheless many patients suffering from dose-dependent adverse reactions to food are given strict elimination diets, which is neither necessary nor helpful and decreases their quality of life broadly. This holds especially true for fructose malabsorption and histamine intolerance. For the latter, the

Early additional food and fluids for healthy breastfed full-term infants.

BACKGROUND: Health organisations recommend exclusive breastfeeding for six months. However, the addition of other fluids or foods before six months is common in many countries. Recently, research has suggested that introducing solid food at around four months of age while the baby continues to breastfeed is more protective against developing food allergies compared to exclusive breastfeeding for six months. Other studies have shown that the risks associated with non-exclusive breastfeeding are dependent on the type of additional food or fluid given. Given this background we felt it was importa
