Multimodal machine learning reveals strain-specific flavor and kinetic dynamics in chinese spicy cabbage fermentation.

This study presents a novel multimodal machine learning framework integrating physicochemical kinetics with volatile metabolomics to elucidate strain-specific fermentation dynamics in Chinese spicy cabbage (CSC). Over a 90-day fermentation under ten single-strain LAB inoculation conditions, the modified Weibull model accurately described distinct growth-decline patterns, categorizing strains into three physiological types: slow-growing, robust-survival, and fast-growing. By integrating multimodal data including organic acids, reducing sugars, and volatile organic compounds (VOCs), multiple mac

Unraveling the mechanisms of flavor improvement in salt-reduced dry fermented sausages: Insights from yeast-modulated microbial interactions.

The present study investigated the modulatory effects of Candida zeylanoides AKS6 and Debaryomyces hansenii AKS44 on the quality profile attributes of reduced-NaCl fermented sausages. Results indicated that yeast inoculation decreased pH, moisture content and water activity of reduced-NaCl fermented sausages, establishing a foundation for enhanced microbial safety. Microbiome analysis revealed that the inoculated strains dominated the fungal community, exerting competitive exclusion against endogenous undesirable fungi (e.g., Trichosporon), while synergistically promoting beneficial lactic aci

Characteristic fingerprints and volatile flavor compound variations in Liuyang Douchi during fermentation via HS-GC-IMS and HS-SPME-GC-MS.

The present study investigates volatile organic compound (VOC) compositional changes in Liuyang Douchi during fermentation via a HS-GC-IMS and HS-SPME-GC-MS combination approach. A total of 115 VOCs were identified from Douchi, most of which were accumulated during pile fermentation. Notably, most alcohols and acids decreased with fermentation, while esters, ketones, pyrazines, and phenols accumulated during pile fermentation. Depending on the VOCs identified by GC-IMS/MS, the different fermentation stages of Douchi could be facilely distinguished. Of these, 49 VOCs were regarded as the marker

Evidence-Based and Emerging Dietary Approaches to Upper Disorders of Gut-Brain Interaction.

Food ingestion is a major symptom trigger in functional esophageal and gastroduodenal disorders and gastroparesis. This review summarizes current knowledge and identifies areas of research on the role of food factors and the opportunities for dietary intervention in these disorders. While many patients experiencing functional esophageal and gastroduodenal disorders identify specific food items as symptom triggers, available data do not allow the identification of specific nutrient groups that are more likely to induce symptoms. In functional dyspepsia (FD), recent studies have shown the potent

Not all β-glucans are equal: processing-induced structural diversity of oat β-glucan and its functional and health outcomes.

Oats (Avena sativa) are a multifunctional cereal in which β-glucan is the primary bioactive component; however, its structural heterogeneity results in functionally non-equivalent fractions. This review demonstrates that β-glucan efficacy follows a continuum governed by weight-average molecular weight (Mw), rather than a binary classification. High-Mw fractions (>1000 kDa) are associated with viscosity-mediated cardiometabolic benefits, whereas low-Mw fractions (<300 kDa) promote fermentation-driven gut and immune responses. Intermediate Mw fractions (300-1000 kDa) provide overlapping function

Microbial drivers of coffee flavor formation: linking fermentation ecology with roasting conversion.

The fermentation of coffee has long been regarded principally as a practical step for mucilage removal, and microorganisms have frequently been described as auxiliary participants rather than central drivers of flavor development. This standpoint is increasingly difficult to maintain. Evidence from multi-omics studies and research on microbial interactions indicates that fermenting microbial communities are involved not only in substrate decomposition and basic metabolic conversion but also in the formation of flavor-active compounds and their precursors through cross-feeding, metabolic divisi

Unraveling the core microbial succession during the moromi fermentation of cantonese soy sauce: An amplicon sequencing approach.

Understanding the microbial successional dynamics and their functional contributions is crucial for optimizing the traditional brewing process of fermentation. In this study, an integrated bioinformatic approach, combining co-occurrence networks, machine learning, and PICRUSt2 functional prediction, was employed to systematically decipher the bacterial and fungal community assembly patterns during brine fermentation. High-throughput sequencing data were normalized using total sum scaling (TSS), and the relationships between microbial succession and physicochemical parameters were evaluated thr

Effects of biotic and abiotic factors on ethanol concentration in stored sugarbeet roots.

BACKGROUND: Ethanol is a common contaminant in sugarbeet factories that is believed to be produced by fermentation of sucrose by microbes present in the factory. Ethanol, however, may also enter factory processing streams as a contaminant in delivered sugarbeet roots, although no studies have examined whether harvested and stored roots contain ethanol or evaluated factors that might affect ethanol accumulation in postharvest roots. Research was conducted to determine the capability and extent to which sugarbeet roots produce and accumulate ethanol following harvest and determine the effects of

[Botulism after intake of half-fermented fish].

From 1975 to 1997, 21 cases of foodborn botulism have been reported in Norway. Half-fermented fish is the major cause. We describe one patient with botulism following intake of home-prepared half-fermented fish. Seven people had eaten fish from the same bucket, but only two developed symptoms. The fish was initially stored at 13 degrees C; this probably explains why toxin developed. Type E toxin in moderate concentrations was found in fish samples. The patient was treated with specific antitoxin and made a gradual recovery. He returned to work after eight months.

Non-Conventional Yeasts with Probiotic Potential: Diversity, Functional Role, Sustainable Bioprocessing and Local Relevance.

Saccharomyces boulardii is the most clinically established probiotic yeast, but non-Saccharomyces strains also exhibit probiotic potential. These non-conventional yeasts can survive gastrointestinal conditions, adhere to intestinal mucosa, and modulate host physiology in human and veterinary contexts. This review examines their diversity, probiotic traits, safety requirements, and applications, emphasizing strain recovery from fermented foods, environmental niches, and local biotopes. Kluyveromyces marxianus, Debaryomyces hansenii, and Pichia kudriavzevii illustrate this potential, showing pro…

Acetaldehyde metabolism by wine lactic acid bacteria.

Acetaldehyde is a volatile flavor compound present in many fermented foods and is important in the production of red and white wines. Nine strains of the genera Lactobacillus and Oenococcus were able to metabolize acetaldehyde in a resting cell system, whereas two Pediococcus strains were not. Acetic acid and ethanol were produced from its degradation. A Lactobacillus and an Oenococcus were able to degrade SO(2)-bound acetaldehyde, as well. A coincubation of resting cells of Saccharomyces bayanus Première Cuvée and Oenococcus oeni Lo111 showed that strain Lo111 metabolized acetaldehyde produce…

Potential applications of pulsed electric field in the fermented wine industry.

Fermented wine refers to alcoholic beverages with complex flavor substances directly produced by raw materials (fruit or rice) through microbial fermentation (yeast and bacteria). Its production steps usually include saccharification, fermentation, filtration, sterilization, aging, etc., which is a complicated and time-consuming process. Pulsed electric field (PEF) is a promising non-thermal food processing technology. Researchers have made tremendous progress in the potential application of PEF in the fermented wine industry over the past few years. The objective of this paper is to systemati

Sensomics-Based Characterization of Flavor Maturation and Enhanced Ester Accumulation in Sufu Fermented With Leuconostoc lactis C2/15.

Sufu, a traditional Chinese fermented soybean product, is known for its unique flavor, creamy texture, and rich nutrition, earning it the nickname "Oriental cheese" in the West. However, spontaneous fermentation often results in a monotonous flavor, insufficient floral/fruity volatile organic compounds (VOCs), and a tendency to develop off-flavors. Here, Leuconostoc lactis C2/15 was used as an auxiliary starter to investigate its role in flavor formation from a sensomics perspective. VOCs were characterized using headspace solid-phase microextraction coupled with gas chromatography-tandem mass

Integrative bacterial-metabolite compositional profiling of traditional fermented fish paste (Napham) reveals a core bacterial consortium for differential synthesis of fermentation-derived functional metabolites.

Traditional spontaneously fermented fish products offer a unique blend of flavors, aroma, taste, and texture that have been an integral part of global gastronomy. These products also represent a rich niche of indigenous bacterial species and fermentation-derived functional metabolites. It is important to identify the core bacterial species and their role in the fermentation process and synthesis of functional metabolites. This study presents an integrative profiling of bacterial communities and functional metabolites in Napham, a traditional fermented fish paste widely consumed by the Bodo tri

Application of Pichia kudriavzevii in solid-state fermentation of Zhenjiang aromatic vinegar: Microbial community structure and volatile flavor changes.

Non-Saccharomyces yeasts play a significant role in enhancing the aroma profiles of fermented foods. However, their specific contributions to vinegar production remain poorly characterized. This study simulated the solid-state fermentation process of Zhenjiang aromatic vinegar (ZAV) to investigate whether artificial addition of non-Saccharomyces yeasts could improve flavor compounds in vinegar and explore the underlying mechanisms. Three non-Saccharomyces yeast strains were isolated from ZAV vinegar Pei. The results showed that Pichia kudriavzevii YK116 exhibited superior tolerance to ethanol,…
