A review of instruments developed to measure food neophobia.

BACKGROUND: Food choices are influenced by an individual's attitude towards foods. Food neophobia may be associated with less variety of diets, inadequate nutrient intake and high product failure rate for new food products entering the market. To quantify the extent of these challenges, instruments to measure the food neophobia in different target groups are needed. Several such instruments with significantly different measurement outcomes and procedures have been developed. This review provides an overview and discusses strengths and weaknesses of these instruments. OBJECTIVE: We evaluate st

Research progress and application of pectin: A review.

Pectin, an acidic polysaccharide, is naturally present primarily in the cell walls and inner layers of higher plants. Pectin is extensively used in food, pharmaceutical, cosmetic, and other industries owing to its exceptional attributes encompassing superior gelation, emulsification, antioxidant activity, stability, biocompatibility, and nontoxicity. Due to the increasing demand for pectin, there is a short supply in the domestic pectin market. Currently, the domestic production of pectin is heavily reliant on imports, thus emphasizing the urgent need to enhance its local manufacturing capabil

Current trends in non-dairy based synbiotics.

Probiotics provide many beneficial effects to the human body. Traditionally, food products used to deliver bacterial cells are fermented dairy products, among which yogurt is the most common. However, many people suffer from lactose intolerance and indigestion, who need nutrients from non-dairy products without using animal proteins. Thus, there is a need to develop synbiotics based on non-dairy food matrices. This paper reviews the potential and emerging candidates of pre and probiotic groups. The criteria for qualifying bacteria as probiotics and nutrients as prebiotics are discussed. One of

Restrictions on antimicrobial use in food animal production: an international regulatory and economic survey.

BACKGROUND: The administration of antimicrobial drugs to food animals at low doses for extended durations for growth promotion and disease prevention has been linked to the global health crisis of antimicrobial resistance. Internationally, multiple jurisdictions have responded by restricting antimicrobial use for these purposes, and by requiring a veterinary prescription to use these drugs in food animals. Opponents of these policies have argued that restrictions have been detrimental to food animal production where they have been adopted. METHODS: We surveyed the antimicrobial use policies o

Assessing aflatoxin knowledge, perceptions, and related practices, in a rural coastal community: a population-based cross-sectional survey.

BACKGROUND: Aflatoxin contamination is a significant yet under-addressed food safety challenge in low-resource settings, driven by a complex interplay of environmental, agricultural, and socio-economic factors. Limited access to agricultural inputs, inadequate post-harvest handling and storage, and weak regulatory enforcement alongside food scarcity and climate change heighten the risk of contamination and exposure. Human exposure is associated with serious health consequences, including hepatocellular carcinoma, immune suppression, and childhood stunting. Although aflatoxin is increasingly re

High Risk of Potential Diarrheagenic Bacillus cereus in Diverse Food Products in Egypt.

ABSTRACT: Bacillus cereus is one of the important foodborne pathogens that can be found in various foodstuffs, causes diarrheal and/or emetic syndromes, and can cause severe systemic diseases that may lead to death. This study was conducted to evaluate the prevalence, antimicrobial susceptibility profile, pathogenic potential, and genotypic diversity of B. cereus isolates recovered from diverse food products collected from markets in Cairo, Egypt. Of 165 food samples investigated in this study, 39 (24%) were positive for B. cereus, with contamination levels of 2 to 6 log CFU/g or mL and a high

Meeting the challenges of micronutrient deficiencies in emergency-affected populations.

Micronutrient deficiencies occur frequently in refugee and displaced populations. These deficiency diseases include, in addition to the most common Fe and vitamin A deficiencies, scurvy (vitamin C deficiency), pellagra (niacin and/or tryptophan deficiency) and beriberi (thiamin deficiency), which are not seen frequently in non-emergency-affected populations. The main causes of the outbreaks have been inadequate food rations given to populations dependent on food aid. There is no universal solution to the problem of micronutrient deficiencies, and not all interventions to prevent the deficiency

[Consumption of ultraprocessed foods : key factors and challenges].

Ultraprocessed foods (UPF) play an increasingly important role in modern diets and are associated with a higher risk of chronic illnesses. This article introduces the Nova classification system and evaluates the socioeconomic factors that influence the consumption of UPFs. The individual, socioeconomic, environmental, cultural, and political factors that shape eating habits are also explored. In addition, the other factors influencing UPF eating habits, such as increased availability, affordability, convenience, and marketing strategies, are described. Despite some conflicting scientific evide

Bean-to-Bar Chocolate: An Integrative Framework Linking Terroir, Biochemistry, Processing, and Sensory Expression.

The bean-to-bar movement, which emerged in the United States in 1996, represents a transformative approach to chocolate production and consumption by integrating craftsmanship, sustainability, and gastronomic authenticity. This study conducted a literature review using the narrative approach, as the object of investigation encompasses both conceptual, sensory, technological, and market dimensions that are not always consolidated in formal scientific databases. The current literature on the concept, production chain, and sensory, cultural, and market dimensions that distinguish bean-to-bar choc

Data-driven causal networks for pork supply chain risk analysis in Sichuan Province.

The stability of critical agricultural supply chains is fundamental to global food security, yet their inherent complexity challenges traditional risk management approaches. This paper introduces and validates a data-driven causal network framework, employing the Peter and Clark Momentary Conditional Independence (PCMCI) algorithm, to systematically disentangle these complex dynamics. We demonstrate the framework's efficacy through its application to the pork supply chain of Sichuan Province, a microcosm of the world's largest pork market. The framework successfully identifies breeding sow inv

Persistent Economic Burden of the Gluten Free Diet.

Gluten free (GF) products have been reported to be more expensive and less available than their gluten containing counterparts. We examined the current U.S. cost and availability of GF products and made comparisons to the marketplace over a decade ago. Cost, determined by price per ounce and availability of a "market basket" of regular and GF products across four venues and five geographic regions was compared using a student's t test. GF products were more expensive (overall 183%), and in all regions and venues (p < 0.001). GF products from mass-market producers were 139% more expensive than

[Prevention of food-borne diseases in the Netherlands. Are we on the right course?].

It is estimated that in the Netherlands several hundreds of thousands of patients are affected with food-borne diseases or poisoning each year. Though the symptoms are usually mild and mortality is low, the financial impact on society is enormous. The consumer is hardly aware of this fact and the--substantial--government efforts to achieve prevention are not very effective. In view of the present state of science, it should be possible to ensure the consumer of safe food on the market, which may be eaten without any risk after sound preparation. The origin, magnitude and effects on society of

Electromagnetic wave-based technology for ready-to-eat foods preservation: a review of applications, challenges and prospects.

In recent years, the ready-to-eat foods market has grown significantly due to its high nutritional value and convenience. However, these foods are also at risk of microbial contamination, which poses food safety hazards. Additionally, traditional high-temperature sterilization methods can cause food safety and nutritional health problems such as protein denaturation and lipid oxidation. Therefore, exploring and developing effective sterilization technologies is imperative to ensure food safety and nutritional properties, and protect consumers from potential foodborne diseases. Functional foods and dietary supplements: products at the interface between pharma and nutrition.

It is increasingly recognized that most chronic diseases of concern today are multifactorial in origin. To combat such diseases and adverse health conditions, a treatment approach where medicines and nutrition complement each other may prove to be the most successful. Within nutrition, apart from (disease-related) dietetic regimes, an increasing number of functional foods and dietary supplements, each with their own health claim, are marketed. These food items are considered to be positioned between traditional foods and medicines at the so-called 'Pharma-Nutrition Interface'. This paper encom

Sustainable agriculture intensification: An MCE model analysis of yam farmland suitability in Ghana.

Yam production is important in West Africa due to its contribution to food security, the economy, and increasing demand in international markets. Thus, recent statistics show that about 94% of global yam production is in the sub-region. However, current yam farming approaches are unsustainable and result in land degradation and deforestation. This study employs Multi-Criteria Evaluation (MCE) model in GIS to identify suitable sites for sustainable yam farming in Ghana, needed to minimize the environmental impacts of intensive production while maximizing yields to achieve food security. The mod

DSHEA 1994 - Celebrating 30 Years of Dietary Supplement Regulation in the United States.

The Dietary Supplement Health and Education Act (DSHEA) of 1994 defined the FDA's statutory authority to regulate dietary supplement products as a category of food in the United States. As we celebrate 30 years post-DSHEA, it is important to reflect on its significance for public health, influence on the continuously evolving and expanding product category, the current regulatory framework, and potential opportunities or modernizing oversight to ensure a strong and well-regulated marketplace. An estimated three-fourths of U.S. consumers report use of dietary supplements, and the product market
