Animal wastes. II. Chemical and nutritional evaluation of by-products from rennet and proteases production.

Drum-dried calf stomach waste (DDSW) from rennet production, after washing with water for salt elimination, as well as drum-dried porcine pancreas waste (DDPW) from protease extraction were used. Their chemical composition and nutritional values were studied. The protein content of DDPW was two-thirds that of the DDSW sample. The amount of ashes (acid soluble and insoluble) in DDPW was twice that of DDSW. Four diets, the protein sources of which were casein, DDSW, DDPW and a mixture of equal parts of both by-products (MSPW) were then prepared. Their nutritive value was assessed in weanling rat…

[Evaluation of the needs and possibilities of increasing the vitamin B12 content in diet].

BACKGROUND: Vitamin B12 belongs to the biologically active compounds related to cyanocobalamin group. The bioavailability of B12 from different food products varies considerably, for example from the chicken meat it ranges from 61 to 66%, from fish meat is 42%, and from eggs below 9% only. The deficiency of vitamin B12 could easily be overcame by the appropriate diet or food supplements. OBJECTIVE: The aim of this study was to characterize the fortified with vitamin B12 food products available on the market and to assess the possibilities of increasing the intake of this vitamin by including

Stable isotope dilution techniques for assessing vitamin A status and bioefficacy of provitamin A carotenoids in humans.

Vitamin A deficiency is a major global public health problem. Among the variety of techniques that are available for assessing human vitamin A status, evaluating the provitamin A nutritional values of foodstuffs and estimating human vitamin A requirements, isotope dilution provides the most accurate estimates. Although the relative expense of isotope dilution restricts its applications, it has an important function as the standard of reference for other techniques. Mathematical modelling plays an indispensable role in the interpretation of isotope dilution data. This review summarises recent a

Parenteral nutrition-associated cholestasis--what do we know, what can we do?

In the early days of parenteral nutrition of children liver disease resulting in steatosis and cholestasis was assumed to be an inevitable complication of the procedure. Since then, the management of parenteral nutrition has improved so much that nowadays adolescents have a fair chance of surviving more than 15 to 20 years without severe liver disease. Nevertheless, we still see cases of parenteral nutrition-associated cholestasis (PNAC) due to various conditions such as recurrent infections, inflammatory response, inappropriate composition of the nutrient mixture, contaminants of the nutrient

Fermented plant-based foods: Insights and emerging trends.

Plant-based foods (PBFs) often contain antinutritional factors that can reduce the digestibility and bioaccessibility of nutrients, along with off-flavor precursors that may affect product quality and consumer acceptance. Fermentation has been employed to enhance the nutritional, sensory, functional, as well as safety-related qualities of these foods, drawing renewed interest as part of sustainable food systems. This review examines fermentation as a substrate-engineering strategy for PBFs, with a focus on cereals, legumes, fruits, vegetables, and plant-based dairy analogs. The complementary m

Fermentation of legumes as a strategy to enhance nutritional and sensory properties and modulate gut microbiome and human health.

Legumes represent a valuable and vegetable source of proteins and fiber with a very low environmental footprint production, therefore, both dietary guidelines and international agencies suggest increasing their production and consumption. Despite their favorable nutritional composition, they also naturally contain antinutritional factors such as phytic acid, that limit the absorption of micronutrients. This, coupled with the lower bioavailability of proteins as compared with meat, diminishes the biological and economic value of legumes. However, recent studies have shed a light on the power of

High phenotypic and phytochemical diversity of Bactris gasipaes (Arecaceae) fruits in Ecuador.

Climate change has negatively impacted food availability and nutritional quality. To address this challenge, it is essential to emphasize species that, despite their longstanding use by indigenous communities, remain underutilized or neglected. Integrating these culturally domesticated species into local food systems offers a promising strategy to improve access to healthy and sustainable foods. One such species is Bactris gasipaes Kunth, whose domesticated variety holds significant but largely untapped nutritional potential. Nevertheless, substantial gaps persist in our understanding of the m

Cobamide Fingerprints in Foods: A Molecular Framework for Re-Evaluating Dietary Vitamin B12 Sources.

Vitamin B12 is synthesized exclusively by certain bacteria and archaea and is generally absent from unfortified plant-derived foods. However, food composition data often rely on microbiological assays that lack chemical specificity and may overestimate nutritionally relevant vitamin B12 by detecting inactive corrinoids. This Perspective proposes cobamide fingerprinting, defined as the proportion of biologically active vitamin B12 (B12%) relative to total corrinoids, as a framework for evaluating dietary vitamin B12 sources. Foods with similar total corrinoid contents may differ substantially i
