Tailoring dysphagia-friendly 3D printed starch-based gels: olive oil modulation of lotus root-whey protein inks.

Developing dysphagia-oriented 3D-printed foods requires balancing extrudability during printing and shape retention after deposition while maintaining macronutrient balance. This study proposes a composite ink system combining whole lotus root powder, whey protein, and an unsaturated liquid oil phase to explore lipid-mediated modulation of printability and texture. Oil incorporation reduced apparent viscosity and altered viscoelastic responses, revealing a formulation-dependent trade-off between flowability and structural integrity. Based on an integrated evaluation of printing fidelity and te

Bioaccessibility of Biofortified Sweet Potato Carotenoids in Baby Food: Impact of Manufacturing Process.

Orange-fleshed sweet potato (OFSP), a biofortified crop rich in β-carotene, can be used as a component of baby food recipes in order to tackle vitamin A deficiency in children <6 years old. In this work, the impact of formulation (addition of pumpkin, oil, and egg yolk) and industrial heat processing (pasteurization, sterilization) on carotenoid content and bioaccessibility was evaluated in an OFSP-based baby puree. A commercial OFSP baby food product from Brazil and a homemade OFSP puree were used as references. The losses of all-trans-β-carotene ranged from 16 to 21% (pasteurization, homemad

Pediatric Pharmacology of Desmopressin in Children with Enuresis: A Comprehensive Review.

Desmopressin is a synthetic analogue of the natural antidiuretic hormone arginine vasopressin. Over the years, it has been clinically used to manage nocturnal polyuria in children with enuresis. Various pharmaceutical formulations of desmopressin have been commercialized for this indication-nasal spray, nasal drops, oral tablet and oral lyophilizate. Despite the fact that desmopressin is a frequently prescribed drug in children, its use and posology is based on limited pediatric data. This review provides an overview of the current pediatric pharmacological data related to the different desmop

Choline in Pediatric Nutrition: Assessing Formula, Fortifiers and Supplements Across Age Groups and Clinical Indications.

Background: Sufficient choline supply is essential for tissue functions via phosphatidylcholine and sphingomyelin within membranes and secretions like bile, lipoproteins and surfactant, and in one-carbon metabolism via betaine. Choline requirements are linked to age and genetics, folate and cobalamin via betaine, and arachidonic (ARA) and docosahexaenoic (DHA) acid transport via the phosphatidylcholine moiety of lipoproteins. Groups at risk of choline deficiency include preterm infants, children with cystic fibrosis (CF) and patients dependent on parenteral nutrition. Fortifiers, formula and s

Eosinophilic esophagitis in pediatric age, state of the art and review of the literature.

Eosinophilic esophagitis (EoE) is a chronic immune-mediated relapsing disease caused by eosinophilic infiltration of the esophageal mucosa which is normally lacking these cells. EoE belongs to the group of the so called Eosinophilic Gastrointestinal Disorders (EGIDs). From a rare and unusual disease, EoE has become an emerging entity and in recent years its incidence and prevalence have increased all over the world, also in children. The pathogenesis is very complex and still not completely clear. Esophageal disfunction symptoms (e.g. dysphagia and food impaction) represent the typical manifes

Overcoming the oral delivery challenges of venetoclax: advancing a clinically improved Bcl-2 inhibitor.

The Bcl-2 inhibitor, Venetoclax, is a notable example of a therapeutic emerging from modern drug development pipelines with structural and physiochemical properties sitting beyond Lipinski's "Rule of 5". The classification of VTX as a biopharmaceutical classification system (BCS) Class IV compound aligns with its observed low solubility and permeability in the gastrointestinal tract. Its inherent "brick-dust" properties further limit solubility in lipid delivery vehicles, collectively constraining its maximum potential for oral absorption. With a low fasted oral bioavailability (< 5%) and a fi

Boranil-phenothiazine conjugates with dual-state emission for ratiometric tracking of HClO in food samples and injured liver cells.

Hypochlorous acid (HClO) is applied as a disinfectant in food processing and sanitation, while excessive residues may pose potential risks to food safety and human health. Therefore, the development of sensitive, rapid, and reliable analytical methods for HClO detection is of considerable importance. Herein, an innovative donor-acceptor (D-A) fluorophore, HC-SN, formulated from an asymmetric phenothiazine-boron difluoride complex, is developed for ratiometric sensing and imaging of HClO. Owing to its significantly twisted molecular structure, HC-SN effectively suppresses π-π stacking and exhib

Determining the effects of Candida utilis-fermented pea starch vs. unfermented pea starch, alone or in whole diets, on palatability and glycemic response in dogs and cats.

Current research suggests yeast fermentation has the potential to improve palatability of pea-based diets for both cats and dogs. However, to be useful, fermentation should not compromise other healthy attributes of peas such as a low glycemic response. Fermentation of uncooked pea starch with Candida utilis (ATCC 9950) appeared to increase crude protein, crude fiber content, inorganic compounds (phosphorus and iron) and phenols. Whole diets were designed with fermented and unfermented pea starch to assess palatability, food intake, and glycemic responses in unacclimated, mixed sex Beagle dogs

Profile of extended-release oxycodone/acetaminophen for acute pain.

This article provides a historical and pharmacological overview of a new opioid analgesic that boasts an extended-release (ER) formulation designed to provide both immediate and prolonged analgesia for up to 12 hours in patients who are experiencing acute pain. This novel medication, ER oxycodone/acetaminophen, competes with current US Food and Drug Administration (FDA)-approved opioid formulations available on the market in that it offers two benefits concurrently: a prolonged duration of action, and multimodal analgesia through a combination of an opioid (oxycodone) with a nonopioid componen

The Role of Sprouting in Gluten-Free Foods: Effects on Glycemic Response and Antioxidant Activity.

PURPOSE OF REVIEW: Gluten-free (GF) products are frequently characterized by reduced nutritional and sensory quality, as well as a higher glycemic index (GI) compared to conventional products. These attributes may pose challenges for individuals who adhere to a lifelong gluten-free diet (GFD). Sprouting has emerged as a promising strategy to enhance the nutritional profile of GF foods. This review evaluates the impact of sprouting on glycemic response and antioxidant activity in GF foods, with a particular focus on the underlying mechanisms. RECENT FINDINGS: Recent studies indicate that sprou

Pathway-oriented strategies for nitrosamine mitigation in food products: Plant-based inhibitors and emerging processing technologies.

Nitrosamines are a food safety concern due to their established toxicological relevance and their occurrence in widely consumed processed foods. In cured products, nitrite has a paradoxical role, acting both as a nitrosamine precursor and as an essential additive for safety, color, flavor, and oxidative stability. As a result, strategies based solely on nitrite reduction are increasingly viewed as insufficient and potentially detrimental to food safety. This chapter examines innovative approaches for reducing nitrosamine formation in foods, shifting the focus from additive elimination toward p

Smart and Sustainable 3D-Printed Nanocellulose-Based Sensors for Food Freshness Monitoring.

Annually, about one-third of the food produced around the world is wasted due to spoilage. Food contamination and spoilage, along with the use and disposal of nondegradable packaging materials, impact human health and have huge economic and sustainability implications. Achieving sustainability within the food system requires innovative solutions to reduce the environmental footprint. Herein, we describe the formulation, scalable manufacturing, and characterization of three-dimensional (3D)-printed sensors prepared from a mixture of edible biopolymer hydrogels, 8% alginate, and 10% gelatin and

Solid-State Fermentation of Arthrospira platensis to Implement New Food Products: Evaluation of Stabilization Treatments and Bacterial Growth on the Volatile Fraction.

Arthrospira platensis is a cyanobacterium widely used in food formulation and mainly consumed as a food supplement because of its high amount of proteins, vitamins and minerals. Different probiotic food supplements are present in the market, and a lactic acid fermented food product like dried spirulina could be useful not only to introduce lactic acid bacteria (LAB) with beneficial effects to the diet of consumers, but also to improve or change the aromatic profile of the substrate. Therefore, the aim of this study was the evaluation of lactic acid fermentation of A. platensis biomass, focusin
