This review is a curated discussion of the relationship between the gustatory system and the perception of food beginning at the earliest stage of neural processing. A brief description of the idea of taste qualities and mammalian anatomy of the taste system is presented first, followed by an overview of theories of taste coding. The case is made that food is encoded by the several senses that it stimulates beginning in the brainstem and extending throughout the entire gustatory neuraxis. In addition, the feedback from food-related movements is seamlessly melded with sensory input to create th

BACKGROUND: A Food and Agriculture Organization Expert Consultation recommended the use of digestible indispensable amino acid score (DIAAS) to evaluate protein quality of foods for humans. Calculation of DIAAS requires true ileal digestibility (TID) of amino acid (AA) values but currently insufficient data are available.
OBJECTIVES: This study aims to generate in pigs TID of AA for a wide range of foods commonly consumed by humans and determine the range of differences in TID of AA among food types.
METHODS: A standardized protocol was followed to determine TID of AA in 97 foods across 3 la

BACKGROUND: Dietary intake is one lifestyle factor that is expected to impact gene expression by altering DNA methylation (DNAm), thus affecting epigenetic aging. Studies on the association between quality of carbohydrates and epigenetic age acceleration (EAA) are scarce despite the evidence that quality may be more important than amount of carbohydrates consumed.
OBJECTIVES: We aimed to identify the cross-sectional associations of carbohydrate quality and fiber-rich food score with EAA in the Coronary Artery Risk Development in Young Adults (CARDIA) study.
METHODS: Trained interviewers admi

OBJECTIVE: Food and nutrition insecurity may contribute to the progression of chronic kidney disease (CKD). Current metrics to measure food and nutrition security (FANS) status may not capture the nuances associated with these concepts. The purpose of this mixed method study was to examine perceptions of FANS of adults with CKD, nondialysis.
METHODS: A sequential explanatory mixed-method study was conducted from March to August 2024. Participants (n = 60) completed a survey that focused on the dimensions of FANS and diet quality. A sub-section of participants (n = 23) completed an interview t

A dual relationship between food insecurity and inadequate food literacy among college students may be attributed to limited food literacy, availability and ability to prepare healthful foods. Experiences that increase food literacy can improve diet quality and reduce food insecurity. Research was conducted through a food literacy-based curriculum developed using Social Cognitive Theory and Experiential Learning Theory. Food literacy outcomes and food security level were measured pre- and post-term through a Qualtrics-based survey. Analyses included Wilcoxon Signed Rank test and McNemar test.

BACKGROUND: Accurate and quick judgement of the food quality can protect the legitimate rights of consumers. Currently, nanozymes are widely employed in the rapid detection of food due to their stability and economy. The contents of bisphenol A and antioxidant can be used to measure the quality of beverages. However, due to the complexity of the actual samples, it is still challenging to achieve the sensitive detection of both at the same time. The development of nanozyme with high enzyme activity is essential for sensitive detection of targets in complex foods.
RESULTS: In this work, a novel…

Recently, in parallel to decrease in semen quality, the consumption of sugar has risen sharply. This provided the rationale to study the association between whole dietary sugar consumption and semen quality. Our aim was to investigate the association between sugar consumption and semen quality. The final cross-sectional study population (n = 280 of initial n = 593, after applying inclusion and exclusion criteria) attending routine semen analysis at sperm bank laboratory was subject to semen quality analysis according to WHO criteria (volume, sperm concentration, total sperm count, percentage t

BACKGROUND: Staphylococcal foodborne illness is a prevalent global foodborne disease caused by the ingestion of food contaminated with Staphylococcus aureus enterotoxins. Food handlers can contain these dangerous bacteria, which can contaminate food and cause staphylococcal food poisoning. Thus, study aimed to determine the pooled prevalence of Staphylococcus aureus among food handlers in Ethiopia. METHODS: This systematic review and meta-analysis followed the PRISMA guidelines. The articles were thoroughly searched in electronic databases such as PubMed, Scopus, Epistemonikos, and Google Scho

Tunisian traditional fermented foods represent a valuable cultural heritage transmitted across generations and are highly appreciated by consumers for their distinctive flavours, textures, and nutraceutical value. This review provides the first comprehensive and exclusive overview of lactic acid bacteria (LAB) associated with Tunisian traditional fermented foods, both plant- and animal-based. The overview integrates data across dairy, meat, fish, vegetable, and cereal matrices, highlighting the central role that LAB play in the processing of these foods, driving fermentation and shaping the qu

Non-saponin constituents of Panax species, including amino acids, sugars, and nucleosides, have attracted increasing attention due to their nutritional relevance and potential health benefits in food-medicine homologous materials. However, their high polarity and chemical diversity pose significant challenges for comprehensive characterization, limiting their application in food quality evaluation and authenticity assessment. In this study, an integrated mass spectrometry-based workflow was developed to systematically profile water-soluble non-saponins in Panax ginseng, Panax notoginseng, and …

Understanding how targeted prey conditions influence foraging decisions is a fundamental issue in animal behaviour. The present study investigated whether cuttlefish use prey liveness to assess overall food quality. Cuttlefish were allowed to choose between different levels of prey freshness and quantity. Experiments 1 and 2 examined cuttlefish choices between one live shrimp alone and one live shrimp paired with either one or four freshly dead shrimps. Experiment 3 evaluated their preferences of one live shrimp paired with either one freshly dead shrimp or one hourly dead shrimp. Experiment 4…

Global demand for high-quality poultry meat has driven intensive genetic selection for fast growth and high breast yield, inadvertently increasing muscle myopathies (wooden breast and white striping), pale-soft-exudative (PSE)-like meat, and animal welfare issues. This review synthesizes recent literature on integrated management and genetic strategies to maximize poultry meat quality without sacrificing productivity or sustainability. Key management interventions include optimizing stocking densities, precise climate control, antibiotic alternatives (probiotics, organic acids), and advanced p

A key strategy in supporting patients at risk of anaphylaxis is the provision of self-administered epinephrine ("self-epi"). However, there seems to be a lower threshold for prescribing self-epi in food allergy than in venom allergy. Self-epi is often recommended to someone with the relatively low risk of food anaphylaxis (under 5%), yet a similar level of risk in a venom-allergic patient is considered not to justify self-epi. We can only speculate as to the reasons for this: it may be harder to avoid food allergens (which can be hidden and undisclosed) compared with a bee or wasp, and the eff

Triggered by the ingestion of gluten in genetically predisposed individuals, celiac disease is the most common genetically based food intolerance in the world, with a prevalence among approximately 1% of the general population. This enteropathy may appear at any age and is characterized by a wide variety of clinical signs and symptoms that go well beyond the gastrointestinal tract. In young children, gastrointestinal presentations are common and include chronic diarrhea, failure to thrive, and abdominal distention; however, extraintestinal manifestations are becoming increasingly more common.

One fifth of the population report adverse reactions to food. Reasons for these symptoms are heterogeneous, varying from food allergy, food intolerance, irritable bowel syndrome to somatoform or other mental disorders. Literature reveals a large discrepancy between truly diagnosed food allergy and reports of food allergy symptoms by care seekers. In most studies currently available the characterization of patient groups is incomplete, because they did not distinguish between immunologic reactions and other kinds of food reactions. In analysing these adverse reactions, a thorough physical and p

Although dietary shifts from animal-source foods (ASFs) to alternatives (Alt-ASFs) could considerably affect livelihoods in food supply chains, the effects will likely vary by the type of Alt-ASFs. In this Review we identified 45 studies, including descriptive analysis of the present state of the sector and modelling studies of future trends. Key findings indicate that cell-based foods would likely reduce overall employment opportunities, while favouring high-skilled workers in high-income countries, although job quality might improve. Shifts towards plant-based foods might have small net empl

In-depth interviews were conducted with homeless children (n=56, aged 6-13 years) in an urban center in Minnesota, USA, to determine factors influencing food choice, food access, and weight status, with interview questions developed using the Social Cognitive Theory. Interview transcripts were coded and then evaluated both collectively and by weight status (<85th percentile=normal weight vs. > or = 85th percentile=overweight). Forty-five percent of children were overweight. Environmental, parental, and personal factors emerged as common themes influencing food access and choice. Despite childr
