Listeria monocytogenes is a Gram-positive, psychrotrophic, facultative intracellular food-borne pathogen responsible for severe illness (listeriosis). The bacteria can grow in a wide range of temperatures (1 to 45°C), and low-temperature growth contributes to the food safety hazards associated with contamination of ready-to-eat foods with this pathogen. To assess the impact of oxidative stress responses on the ability of L. monocytogenes to grow at low temperatures and to tolerate repeated freeze-thaw stress (cryotolerance), we generated and characterized a catalase-deficient mutant of L. mono

Thirteen outbreaks of food-borne botulism occurred between 1970 and 1984. Fifty patients were affected, with 30 of them requiring hospitalization. The number of patients per outbreak ranged from one to ten (mean, 3.8). All outbreaks were caused by home-prepared foods: nine by smoked ham, one by bacon, one by sausage, and one by mussels; contaminated food was not found in one outbreak. Bacteriologic study was performed in 11 outbreaks and type B toxin, the only found, was detected in eight of them. Generalized muscular weakness, visual disturbances, extreme dry mouth, and severe constipation we

Deoxynivalenol (DON), a mycotoxin primarily produced by Fusarium species, is commonly found in cereal grains and poses risks to human and animal health, as well as global grain trade. This study demonstrates that methyl jasmonate (MeJA), a natural plant hormone, inhibits the growth and conidiation of Fusarium graminearum. Importantly, MeJA significantly reduces DON production by suppressing TRI gene expression and toxisome formation. To explore the molecular mechanism, we identified MeJA-tolerant mutants, including a transcription factor MRT1 and cAMP-PKA pathway-related genes (FgGPA1 and FgSN

The ability of Salmonella species to adhere to surfaces and form biofilms, leading to persistent environmental reservoirs, might represent a direct link between environmental contamination and food processing contamination. The purpose of this study was to investigate the biofilm-forming ability of 80 multidrug-resistant (MDR) and extended-spectrum beta-lactamase (ESBL) producing Salmonella enterica serovar Infantis strains isolated from the broiler food chain production through whole genome sequencing (WGS), PCR, and morphotype association assays. Biofilm formation was quantified by testing t

BACKGROUND: With the rapid development of industrialization, the excessive emission of S2- have become increasingly serious, leading to a surge in the content of S2- in nature. Rapid and accurate detection of S2- contamination in natural adaptogens is crucial for food safety. Annually, discarded eggshell waste, rich in organic and inorganic materials, poses environmental risks if landfilled. Utilizing waste eggshell membrane biomass for S2- detection is cost-effective, yet designing biochar materials for sensors requires balancing catalytic enhancement and anti-interference capabilities. BACKGROUND: Chromium (Cr) contamination in soil poses a serious hazard because it hinders plant growth, which eventually reduces crop yield and raises the possibility of a food shortage. Cr's harmful effects interfere with crucial plant functions like photosynthesis and respiration, reducing energy output, causing oxidative stress, and interfering with nutrient intake. In this study, the negative effects of Cr on mung beans are examined, as well as investigate the effectiveness of Azospirillum brasilense and salicylic acid in reducing Cr-induced stress.
RESULTS: We investigated how different

Antarctic surface waters are expected to be the first to experience severe ocean acidification (OA) with carbonate undersaturation and large decreases in pH forecasted before the end of this century. Due to the long stability in environmental conditions and the relatively low daily and seasonal variations to which they are exposed, Antarctic marine organisms, especially those with a supposedly poor machinery to eliminate CO2 and protons and with a heavily calcified skeleton like echinoderms, are hypothesized as highly vulnerable to these environmental shifts. The opportunities offered by the n

Prolonged oral or parenteral administration of antibiotics has led to the development of resistant strains of microorganisms. Bacteria acquire drug resistance by mutation, conjugation and transduction. Oral antibiotics by a process of selection pressure facilitate the proliferation of resistant population of bacteria. Drug resistant bacteria are capable of transferring their resistance to drugs to other bacteria by the process of transferable drug resistance (TDR). This can lead to multiple resistance to a vast number of therapeutically useful antibiotics which will, therefore, become ineffect

Typhoid fever (Typhoid or enteric fever) is still the most common bacterial bloodstream infection worldwide, caused by Salmonella typhi. The transmission route is indirect through passive vehicles such as contaminated water or food. Main clinical findings are a fever lasting more than three days, abdominal symptoms, leukocytosis, and anemia. Typhoid can cause a wide range of multi-organ complications. We report a particularly severe form of this infection complicated by superior mesenteric vein and splenic vein thrombosis, an extremely uncommon manifestation.

Cervical lymphadenopathy is a condition with a broad differential diagnosis. Malignant tumors, allergic reactions, autoimmune diseases as well as various infectious agents can be the cause. We report the case of a 75-year-old man who had a cervical lymphadenopathy without symptoms of infection. The draining lymph nodes were excised. Histology revealed a granulomatous abscess and culture yielded pure growth of Listeria monocytogenes. Because food is occasionally contaminated with L. monocytogenes, the pathogenesis of this condition may be similar to that of lymph node tuberculosis.

Despite a low incidence of botulism in the industrialized world some cases occasionally occur in Germany after eating contaminated food. Because botulism is rarely seen, most physicians are unfamiliar with its early recognition and treatment. However, immediate intensive care treatment is important. We report the case of a previously healthy 54-year-old female who developed signs of botulism after eating vacuum packed smoked fish and developed severe respiratory insufficiency with difficult carbon dioxide elimination in the days following.

Rat-bite fever (RBF) is a systemic bacterial illness caused by Streptobacillus moniliformis that can be acquired through the bite or scratch of a rodent or the ingestion of food or water contaminated with rat feces. Cases are rarely reported in the United States and the true incidence of disease is unknown. On August 7, 1996, a physician in a rural community reported a case of infection with S. moniliformis bacteremia in a 15-year-old boy to the New Mexico Department of Health. This report summarizes the results of the investigation of this case and indicates the need for ongoing surveillance

Chloramphenicol (CAP) is a broad-spectrum antibiotic with applications in human and veterinary medicine. However, due to its severe adverse effects, including fatal aplastic anemia, its use in food-producing animals has been banned in many countries. Despite these regulations, CAP residues have been detected in milk, raising concerns about food safety and regulatory compliance. This systematic review aimed to evaluate the presence of CAP in milk, detection methods, and regulatory limits. A comprehensive literature search identified 918 studies, of which 27 met the inclusion criteria. The inclu

Listeria monocytogenes is an important food-borne pathogen that is responsible for contamination of a variety of food products. It causes listeriosis which is one of the most severe and serious foodborne diseases, whose main severe clinical forms include septicaemia, meningitis, and mateoneonatal infections. Also because of its ability to adhere to industrials' surfaces, it is difficult for them to come up against this danger. Although there are researches in L. monocytogenes proteome, most of them are based on the study of a single strain, yet little is known about the proteome of more of the

Ochratoxin A (OTA), a mycotoxin from filamentous fungi, significantly threatens human and animal health through food contamination. OTA is prevalent in food products, posing a significant health risk. Here, we observed that OTA induces senescence in lung cells. This study further assessed the toxicological effects of OTA on lung cells and clarified its molecular mechanism. We utilized in vitro cell models (TC-1 and MLE-12) to evaluate the impact of OTA on lung cells using Western-blot, indirect immunofluorescence and ELISA. The results revealed that OTA leads to inflammatory cell death in lung…

This study investigates the environmental persistence and human exposure risks of Dechlorane Plus (DP) in remediated, abandoned electronic waste dismantling areas in Taizhou City, China. Based on comprehensive sampling, DP concentrations, isomer profiles, and multi-pathway exposure routes were evaluated in air (median: 26.2 pg/m3), soil (median: 12.3 ng/g dry weight), indoor dust (median: 19.4 ng/g dw), and food (median: 36.9 pg/g dw). Results revealed anti-DP as the dominant isomer across all matrices (air fanti = 0.80; soil fanti = 0.92; dust fanti = 0.89; food fanti = 0.71; serum fanti = 0.

INTRODUCTION: Gram-negative bacteria are key pathogens causing food contamination and animal diseases (such as bovine mastitis), and they are prone to developing multidrug resistance, necessitating rapid and sensitive detection technologies.
METHODS: We developed a novel detection method based on an antibiotic affinity strategy, which combines vancomycin-functionalized magnetic beads (Van-MBs) with aminopeptidase test strips. Vancomycin, which binds exclusively to D-alanyl-D-alanine (D-Ala-D-Ala) on the cell wall of Gram-positive bacteria, is used by Van-MBs to capture Gram-positive bacteria …

This study explores the performance of a novel epoxy-based nanocomposite coating for tinplate, specifically tailored for food packaging applications requiring enhanced protection and durability. The coating matrix comprises reduced graphene oxide (rGO), chitosan (CS), and tin titanate (SnTiO₃), with functionalized SnTiO₃ nanoparticles anchored onto the rGO surface and incorporated into an epoxy resin. The resulting EP/rGO/CS/TT nanocomposite significantly improves mechanical properties, including tensile strength, while providing exceptional gas and moisture transmission resistance. Chitosan e

Aflatoxin B1 (AFB1) contamination poses a fatal risk to human beings and urgently needs highly sensitive detection for environmental monitoring and food safety. However, the existing challenges are the unsatisfied sensitivity of the immunoassay methods and the complex matrix effect. Rolling circle amplification (RCA) is a promising method for nucleic acid isothermal amplification due to its high specificity and sensitivity. Herein, we constructed a general RCA-based point-of-care test method (RCA-POCT). With biotinylated antibodies, streptavidin, and biotinylated RCA primers, we realized the s
