Associations Between MASLD, Ultra-Processed Food and a Mediterranean Dietary Pattern in Older Adults.

Background/Objectives: Metabolic Dysfunction-Associated Steatotic Liver Disease (MASLD) is the most common liver disease worldwide, affecting 38% of the adult population globally. Methods: We examined the impact of the Mediterranean Diet and Ultra Processed Food (UPF) intake on the risk of prevalent MASLD in older adults. Results: Our major findings include that increased adherence to a Mediterranean Dietary pattern was associated with a decreased risk of MASLD. Additionally, we found that high UPF intake was associated with an increased risk of MASLD. Furthermore, our study found that even wi

Binge-type eating disorders and ultra-processed food addiction: phenomenology, pathophysiology and treatment implications.

BACKGROUND AND OBJECTIVE: Despite their clinical differences, loss of control binge eating (LCBE) is a core feature of all binge-type eating disorders (EDs), including binge eating disorder (BED), bulimia nervosa (BN), and anorexia nervosa binge purge type (AN-BP). The emerging concept of food addiction (FA), or ultra-processed food addiction (UPFA), is also characterized by LCBE. However, LCBE treatment has rejected addiction recovery approaches, especially abstinence or reduced harm through reduced use, to the detriment of patients. Treatment could be more successful if barriers to addiction

Relationship between Ultra-Processed Food Consumption and Risk of Diabetes Mellitus: A Mini-Review.

Studying the factors that cause diabetes and conducting clinical trials has become a priority, particularly raising awareness of the dangers of the disease and how to overcome it. Diet habits are one of the most important risks that must be understood and carefully applied to reduce the risk of diabetes. Nowadays, consuming enough home-cooked food has become a challenge, particularly with modern life performance, pushing people to use processed foods. Ultra-processed food (UPF) consumption has grown dramatically over the last few decades worldwide. This growth is accompanied by the increasing

Risk evaluation for staphylococcal food poisoning in processed milk produced with skim milk powder.

The growth of S. aureus and the production of staphylococcal enterotoxin A (SEA) in skim milk concentrates stored at inappropriate temperatures in a recovery milk tank (tank for excess concentrated skim milk) used in the manufacture of skimmed milk powder were investigated. Also, it was estimated if a possible outbreak of food poisoning would occur if the contaminated skimmed milk powder was used in the manufacture of processed milk. Skim milk concentrates with milk solid content of 15, 25, and 35% were inoculated with S. aureus at 1-2 log CFU/ml and incubated at 15, 25, or 35 degrees C for 0

Ultra-processed food consumption across early life: implications for pediatric health and disease risk.

Ultra-processed foods (UPFs) are industrial formulations characterized by high energy density, low nutritional quality, and the extensive use of additives, and their consumption has increased markedly worldwide. In many high-income countries, children and adolescents now derive up to 50-60% of their total daily energy intake from UPFs, raising major public health concerns. This narrative review synthesizes current evidence on UPF consumption across critical life stages, with a particular focus on pregnancy, childhood, and adolescence, and examines its potential implications for short- and long

A Critical Review of the Science on "Highly" Processed Food Intake and Body Weight.

There is increasing consideration of food processing and formulation in setting dietary guidance at the state, federal, and global levels to manage obesity and other health conditions. However, the supporting evidence base is highly controversial. This stems, in part, from the lack of a widely accepted definition of highly or ultraprocessed foods and beverages (HPFB) and evidence that published definitions hold different predictive health risks. The preponderance of evidence linking food processing and formulation practices to health outcomes is drawn from observational studies. This literatur

Ultra-Processed Food Consumption and Micronutrient Status Throughout the Life Course: A Systematic Review.

CONTEXT: Micronutrient deficiencies remain a significant global malnutrition issue, affecting morbidity and mortality, particularly among children and women of reproductive age. Similarly, the consumption of ultra-processed foods (UPFs) is prevalent in the diets of various populations and is associated with poor diet quality and the development of certain diseases. Determining whether dietary patterns involving UPFs contribute to this health burden is crucial for understanding how to promote prevention and achieve complete nutritional recovery. OBJECTIVE: To identify the influence of UPFs on

Inorganic phosphate: a link between processed food and exercise intolerance in the modern world.

Physical inactivity and reduced cardiorespiratory fitness are major public health concerns worldwide. In recent decades, the modern western diet has undergone a dramatic shift toward ultra-processed foods (UPFs) that are rich in inorganic phosphate (Pi) additives used as preservatives, emulsifiers, leavening agents, and flavor enhancers. Unlike organic phosphorus found in natural foods, inorganic Pi additives are nearly completely absorbed in the gastrointestinal tract, contributing to habitual Pi intake that exceeds the recommended daily allowance by two- to three-fold in many western populat

Ultra-processed food consumption and atherosclerosis risk: a prospective cohort study of UK Biobank.

BACKGROUND: Ultra-processed foods (UPFs) have become dominant in modern diets, yet their relationship with atherosclerosis-the primary pathological basis of cardiovascular disease-remains inadequately characterized. We investigated the association between UPF consumption and incident atherosclerosis risk and explored underlying metabolomic and proteomic molecular signatures. METHODS: We conducted a prospective analysis of 133,797 UK Biobank participants free of atherosclerosis at baseline. Dietary intake was assessed using 24-h dietary recalls, and UPF consumption was categorized according to

Exposure to ultra-processed food and risk of cardiovascular mortality: a prospective cohort study.

AIMS: There has been a global shift from nutrient-dense diets to an ultra-processed food pattern, which is linked to adverse health outcomes, including cardiovascular mortality. However, there is limited evidence in an Australian setting. Furthermore, many people in Australia have emigrated from countries with heart-healthy diets. This study explored the association between ultra-processed food exposure and cardiovascular mortality in an Australian cohort. METHODS AND RESULTS: Data were derived from the Melbourne Collaborative Cohort Study. Food frequency questionnaire data collected at basel

The Impact of Ultra-Processed Food Consumption on Frailty and Sarcopenia: A Systematic Review.

BACKGROUND AND AIM: Ultra-processed foods (UPFs), foods with high levels of artificial additives and preservatives, often low in protein and essential nutrients despite being calorie-dense, have been associated with a range of adverse health outcomes, including cardiovascular and kidney diseases, obesity, Type 2 diabetes, and frailty. Despite growing evidence on the adverse effects of UPFs, no systematic review has comprehensively assessed their association with frailty and sarcopenia. This review synthesizes current evidence on UPF intake and frailty prevalence and severity in older adults wh

Food related processes in the insular cortex.

The insular cortex is a multimodal brain region with regional cytoarchitectonic differences indicating various functional specializations. As a multisensory neural node, the insular cortex integrates perception, emotion, interoceptive awareness, cognition, and gustation. Regarding the latter, predominantly the anterior part of the insular cortex is regarded as the primary taste cortex. In this review, we will specifically focus on the involvement of the insula in food processing and on multimodal integration of food-related items. Influencing factors of insular activation elicited by various f

The effect of processing on veterinary residues in foods.

Heat stability of antibiotics in foods to cooking has been determined by a variety of methods. These include heating in such liquid media as milk, water, buffers and meat extracts, and in solids such as buffered meat homogenates and various sausages. Inactivation of incurred residues in tissues and eggs was also studied. Time and temperature of heating were more easily controlled in liquid media, but results in actual meat products are more indicative of actual cooking processes. Ordinary cooking procedures for meat, even to "well-done", cannot be relied on to inactivate even the more heat sen
