Lentils protein isolate as a fermenting substrate for the production of bioactive peptides by lactic acid bacteria and neglected yeast species.

In the current trend where plant-based foods are preferred over animal-based foods, pulses represent an alternative source of protein but also of bioactive peptides (BPs). We investigated the pattern of protein hydrolysis during fermentation of red lentils protein isolate (RLPI) with various lactic acid bacteria and yeast strains. Hanseniaspora uvarum SY1 and Fructilactobacillus sanfranciscensis E10 were the most proteolytic microorganisms. H. uvarum SY1 led to the highest antiradical, angiotensin-converting enzyme-inhibitory and antifungal activities, as found in low molecular weight water so

Characteristics and mechanisms of H2S production in anaerobic digestion of food waste.

The biogas produced in food waste anaerobic digestion (FWAD) contains H2S which can lead to corrosion, bad smell and poisoning accident. To control H2S pollution, the characteristics and mechanisms of H2S production in FWAD should be known. In this study, a lab-scale FWAD batch test was applied for 20 days under 35 °C. The production potential and average concentration of H2S were 765 ± 163 g/t (TS) and 1065 ± 267 ppm, respectively. 76% of total H2S was produced within 6 h on the first day of fermentation, acidification and gas production were key reasons for high H2S production at this time.

Matrix-associated spatial structure contributes to compositional stability of a complex multispecies starter culture under microbial perturbation: Insights from kefir grains.

Complex multispecies starter cultures can enrich the metabolic and sensory diversity of fermented foods, but industrial use is limited by compositional drift, overgrowth of dominant taxa, and vulnerability to exogenous microbial contamination. Kefir grains (KG), a matrix-encapsulated complex starter culture with stable serial propagation, provide a model for how spatial structure contributes to starter stability. We compared matrix-associated KG with free kefir-fermented milk (FKFM), representing a grain-free liquid-phase kefir microbial community, under a large-scale microbial challenge. Duri…

Single-stage microbial conversion of fish waste into linear and branched medium-chain fatty acids.

Anaerobic fermentation of biowaste into medium‑chain fatty acids (MCFAs) offers a scalable route for resource recovery within a circular bioeconomy framework, yet production from protein‑rich substrates such as fish waste remains underexplored. This study investigated the valorization of fish waste into MCFAs via mono- and co-fermentation in a single-stage chain elongation process. By leveraging endogenous electron donors and protein ammonification, the system maintained favorable pH conditions and sustained MCFA synthesis without external chemical inputs. Mono-fermentation favored isocaproate

Conventional and emerging pre-treatments for plant protein fermentation: prospects for next-generation plant-based meat analogues.

The development of plant-based meat analogues (PBMAs) that accurately replicate meat texture and flavor remains limited by fundamental structural differences between plant and animal proteins. Most notably, the globular conformation of plant proteins contrasts with the fibrous anisotropy of animal muscle, thereby limiting viscoelasticity. Additional challenges include beany off-notes arising from lipid oxidation products such as hexanal and anti-nutritional factors (ANFs) that reduce bioavailability. Fermentation is a traditional technology increasingly explored as a strategy to address these

Insights into the production of erythritol by strains of Limosilactobacillus fermentum of sourdough origin.

UNLABELLED: Erythritol is a sugar alcohol that is occasionally produced by heterofermentative lactic acid bacteria (LAB). Although such biosynthesis has rarely been reported during sourdough production, the potential of the sourdough strains Limosilactobacillus fermentum IMDO 130101 and IMDO TC9L10 to produce erythritol was demonstrated in the context of their broader metabolic capacity both during wheat sourdough productions and in a wheat sourdough simulation medium (WSSM). Indeed, both strains produced up to 0.4 mM of erythritol during starter culture-initiated wheat sourdough productions.

Constructing in-situ and real-time monitoring methods during soy sauce production by miniature fiber NIR spectrometers.

The digestion rate of steamed soybean (DRSS), protease activity of koji (PAK) and formaldehyde nitrogen content of moromi (FNCM) are key indicators to monitor soy sauce production. Currently, monitoring these indicators relies on workers' experience, which can sometimes lead to low material utilization rates and even fermentation failures. Near-infrared spectra were collected during soybean steaming, as well as koji and moromi fermentation, using miniature fiber spectrometers. These spectra were optimized using four pretreatment methods, and regression models were constructed using PLS, iPLS,

Ultrasound-assisted production of alcoholic beverages: From fermentation and sterilization to extraction and aging.

Ultrasound is sound waves above 20 kHz that can be used as a nonthermal ''green'' technology for agri-food processing. It has a cavitation effect, causing bubbles to form and collapse rapidly as they travel through the medium during ultrasonication. Therefore, it inactivates microorganisms and enzymes through cell membrane disruption with physicochemical and sterilization effects on foods or beverages. This emerging technology has been explored in wineries to improve wine color, taste, aroma, and phenolic profile. This paper aims to comprehensively review the research on ultrasound application

Flavor differences of soybean and defatted soybean fermented soy sauce and its correlation with the enzyme profiles of the kojis.

BACKGROUND: Soybeans and defatted soybeans, commonly used as protein ingredients, have different flavors of their fermented soy sauce. Clarifying the differences between the two soy sauces, as well as the formation mechanism, is an important prerequisite for improving the flavor of defatted soybean soy sauce. To this goal, the aroma characteristics of two soy sauces and their volatile profiles were compared by sensory evaluation and gas chromatography-mass spectrometry, and eight enzyme activities and volatile profiles of matured koji were determined. RESULTS: Sensory results showed that the

Digesta dynamics, nutrition messaging and (ultra)processed food.

There are two disparate approaches used to communicate nutritional attributes of foods, based on nutrient composition and food type. Nutrient content fails to account for the rate and site of nutrient absorption, and food type does not differentiate between diverse forms of the same type. The scope of this review is to examine whether a combination of nutrient composition and digesta dynamics provides a coherent framework for rationalising health benefits associated with whole foods and explaining dietary risk factors associated with chronic non-communicable diseases. Digesta dynamics encompas
