This report describes a case of spontaneous esophageal perforation that was considered to be etiologically related to a duodenal ulcer with pyloric stenosis. The patient was a 54-year-old Japanese man who presented following the sudden onset of severe abdominal pain and dyspnea after an episode of vomiting. He had a history of duodenal ulcer. Computed tomography revealed an extremely dilated stomach containing abundant food residue, intraabdominal effusion, bilateral pleural effusion, and mediastinal emphysema, findings that strongly suggested esophageal perforation. Esophagoscopy confirmed pe

Food safety requires rapid, sensitive and reliable methods for detecting contaminants in complex food matrices. Metal-organic frameworks (MOFs), owing to their high surface areas, tunable pores and abundant functional sites, have shown considerable potential in food sensing and sample pretreatment. Recently, MOF-on-MOF heterostructures have attracted increasing attention because their hierarchical architectures and tunable interfaces can integrate complementary adsorption, catalytic and signal-transduction functions. This review summarizes the major construction strategies and structural types

Food, particularly milk and cheese, may be a reservoir of multi-drug resistant Staphylococcus aureus strains, which can be considered an important issue in terms of food safety. Furthermore, foods of animal origin can be a cause of staphylococcal food poisoning via the production of heat-stable enterotoxins (SE). For this reason, we investigated the prevalence of and characterized Staphylococcus aureus strains isolated from milk and fresh soft cheese obtained from farms located in Wielkopolskie and Zachodniopomorskie Provinces in Poland. Overall, 92% of S. aureus isolates were positive for at

This mini review focuses on foodborne illnesses and outbreaks caused by food-producing animals because statistical information of the foodborne illnesses is important in human health and food industry. Contaminated food results in 600 million cases of foodborne diseases and 420,000 deaths worldwide every year. The world population is currently 7.8 billion, and 56 million people die every year; of these, every year, 7.69% of people experience foodborne diseases, and 7.5% of annual deaths (56 million deaths) was died by foodborne illness in the world. A majority of such patients are affected by

A wide variety of foods can be contaminated with Listeria species, especially L. monocytogenes. Ready-to-eat (RTE) foods are predominantly associated with human listeriosis caused by L. monocytogenes. Therefore, this study aimed to assess the presence of Listeria species in RTE foods and to characterize L. monocytogenes isolates by means of detection of virulence markers, serotypes and genetic relatedness. Of the 300 RTE food samples, 59 (19.7%) were positive for Listeria species: L. innocua (13.3%), L. monocytogenes (5%), L. welshimerii (2.3%), L. grayi subsp. murrayi (1.3%), L. grayi (1%), L

The widespread use of herbicides across the globe has increased the probability of synthetic chemicals entering freshwater habitats. On entering aquatic habitats, these chemicals target and disrupt both physiological and behavioral functioning in various aquatic organisms. Herbicides, such as 2,4-dichlorophenoxyacetic acid (2,4-D), can have negative impacts on chemoreception because these receptor cells are in direct contact with water-soluble chemicals in the environment. Studies focusing on lethal concentration (LC50) levels may understate the impact of herbicides within aquatic habitats bec

Methylmercury (MeHg) is a neurotoxic contaminant and one of the main sources of exposure in humans is seafood consumption. It is thus of interest to assess precisely MeHg exposure. The objective of this study was to estimate MeHg daily intake in exposed individuals using two different approaches, a food questionnaire and toxicokinetic modeling, and compare the complementary and use of each method. For this purpose, a group of 23 fishermen from northern Quebec provided blood and hair samples and answered a standard food questionnaire focusing on seafood consumption. A published and validated to

Applying antibacterial coatings onto food processing surfaces is essential for mitigating bacterial contamination, ensuring food safety, and maintaining hygienic standards in food production environments. This study explores environmentally friendly and food-safe antibacterial colloidal suspensions consisting of aggregated chitosan-pectin (CTS-Pec) coacervate complexes for applications in spray coatings and stimuli-responsive nanocarriers. Motivated by the lack of comprehensive studies on colloidal suspensions consisting of aggregated CTS-Pec coacervation complexes and the antibacterial proper

Run-of-river power plants (ROR) represent the majority of hydroelectric plants worldwide. Their environmental impacts are not well documented and are believed to be limited, particularly regarding the contamination of food webs by methylmercury (MeHg), a neurotoxin. RORs are typically installed in small rivers where combined effects of watershed disturbances with dam construction can complicate environmental management. We report a multi-year case study on the Saint-Maurice River (Canada) where an unpredicted temporary increase in MeHg accumulation in predator fish was observed after the const

In this study, we estimate the burden of foodborne illness (FBI) caused by five major pathogens among nondeployed US Army service members. The US Army is a unique population that is globally distributed, has its own food procurement system and a food protection system dedicated to the prevention of both unintentional and intentional contamination of food. To our knowledge, the burden of FBI caused by specific pathogens among the US Army population has not been determined. We used data from a 2015 US Army population survey, a 2015 US Army laboratory survey and data from FoodNet to create inputs

OBJECTIVES: Fermented foods frequently consumed in Northeast India can act as a reservoir for disseminating pathogenic organisms. Enterococci are often responsible for contamination of food products. This study investigated the antimicrobial resistance and co-existing virulence determinants of enterococci found in traditionally processed foods in India.
METHODS: A total of 38 enterococci isolates identified as Enterococcus faecalis isolated from fermented fish samples from retail markets of Northeast India were selected for screening of pathogenic traits.
RESULTS: Of the 38 isolates, 8 (21%)

UNLABELLED: The Listeria genus comprises 10 recognized species. Listeria monocytogenes causes listeriosis in humans and other animals primarily via contaminated food or animal feed. Listeria ivanovii causes listeriosis in animals and on rare occasions in humans. The identification of nonpathogenic species of Listeria in foods indicates that conditions exist that support the growth of pathogenic strains and is used to facilitate the implementation of control and prevention measures. This study shows the development and evaluation of a 5'exonuclease real-time PCR assay for the rapid identificati

Stream ecosystems are widely contaminated by mercury (Hg) via atmospheric transport and deposition in watersheds. Dissolved organic carbon (DOC) is well-known to be the dominant ligand for aqueous methylmercury (MeHg), the bioaccumulative form of Hg in aquatic food webs. However, it is less clear if and how the concentration and character (e.g., aromaticity) of DOC influences the availability of dissolved MeHg to stream food webs. In this work, we analyzed total-Hg and/or MeHg concentrations in water, seston, and macroinvertebrates (filter-feeding hydropsychid caddisflies), and other physioche

The prevalence of diarrheagenic Escherichia coli in childhood diarrhea and the role of contaminated food products in disease transmission in Colombia are largely unknown. The aim of this study is to identify E. coli pathotypes, including E. coli O157:H7, from 108 stool samples from children with acute diarrhea, 38 meat samples and 38 vegetable samples. Multiplex PCR and Bax Dupont systems were used for E. coli pathotype detection. Eighteen (9.8%) E. coli diarrheagenic pathotypes were detected among all clinical and food product samples tested. Four different pathotypes were identified from cli

INTRODUCTION: Listeria monocytogenes is an emergent foodborne pathogen acquired by the ingestion of contaminated food. This bacterium causes a disease called listeriosis, whose mortality rate world wide is around 20% to 30%, reaching up to 80% in cases of neonatal infections. The random amplified polymorphic DNA technique allows different isolates to be distinguished and characterized at the molecular level, which can provide useful information about the diversity of this pathogen in Colombia.
OBJECTIVE: To molecularly characterize different L. monocytogenes isolates from food and clinical sa

We developed an integrated food web model for mercury, using the CATS (Contaminants in Aquatic and Terrestrial ecoSytems) model developed by Traas and co-workers (Traas, T.P.; Stäb, J.A.; Kramer, P.R.G.; Cofino, W.P.; Aldenberg, T. Modeling and risk assessment of tributyltin accumulation in the food web of a shallow freshwater lake. Environ. Sci. Technol. 1996, 30 (4), 1227-1237). It was translated into the MatLab mathematical programming language and been adapted for the modeling of mercury. Mercury CATS now models four species of mercury (unreactive mercury, zero valent mercury, divalent mer

Food safety is a critical public health issue worldwide as the consumption of unhygienic food causes millions of illnesses annually. The contaminated food is primarily unsafe due to the presence of microorganisms (i.e. bacteria and viruses), chemicals (i.e. pesticides and heavy metals), and physical hazards (i.e. glass, metal and plastic). Foodborne illnesses such as salmonellosis, campylobacteriosis, listeriosis, E. coli infection, botulism, cholera, norovirus infection, and others are commonly caused by the problems associated with food hygiene. From the modest beginnings rooted in basic hyg
