It is undeniable that with the popularity of sushi and sashimi over the last decade the consumption of raw fish has extremely increased. Raw fish is very appreciated worldwide and has become a major component of human diet because of its fine taste and nutritional properties. Possible hazards concerning fish safety and quality are classified as biological and chemical hazards. They are contaminants that often accumulate in edible tissue of fish and transmit to humans via the food chain affecting the consumer's health. Although their concentration in fish and fishery products are found at non-a

The apicomplexan parasite Toxoplasma gondii can infect humans and cause toxoplasmosis. T. gondii has been highly prioritized among the foodborne parasites regarding its global impact on public health. Human infection can occur through multiple routes, including the ingestion of raw or undercooked food contaminated with T. gondii oocysts, such as fresh produce and bivalves. As filter-feeders, bivalves can accumulate and concentrate contaminants, including protozoan (oo)cysts. Although detection of T. gondii in different bivalves by molecular techniques (PCR and qPCR) has been achieved, routine

This study compared a synthetic bedding substrate (SBS), which has the potential to be a particulate-free animal bedding system, with the standard woodchip bedding. The objective was to demonstrate that the SBS is habitable for mice and reduces particulates to levels that would not contaminate the eye or potentially induce ocular (corneal) injury. Newly weaned mice were placed in either standard woodchip bedding or SBS. All mice were monitored regarding overall health (appearance, food and water intake, natural behavior, clinical signs, and provoked behavior) to verify their ability to adjust

In mercury (Hg) contaminated areas of Asia, human exposure to toxic methyl-Hg (MeHg) through a rice-based diet of locally produced crop may pose a health threat. Alternative cropping system to rice in such areas would be most desirable. In this study, corn, the leading cereal source in the world with large biomass, was demonstrated to accumulate an insignificant amount of MeHg from the soil in its edible portion compared to that in rice, suggesting corn being a very competitive alternative crop. By examining Hg stable isotope composition, Hg in the aerial parts of corn was found to be mostly f

An investigation was conducted to evaluate Staphylococcus aureus contamination in various types of food of animal origin. Of the 350 samples examined, 14.0% were found to be contaminated with S. aureus. Prevalence rates varied according to type, namely: 19.3% for fresh meat products, 13.3% for fresh cheeses, 3.6% for bakery products and 7.7% for deli products. The isolated S. aureus strains then underwent 16S rDNA polymerase chain reaction (PCR) followed by reverse latex agglutination tests to identify enterotoxigenic strains. The results were compared with data obtained by subjecting the same

Listeria monocytogenes is a food-borne pathogen that can contaminate processed meats and has caused outbreaks in several nations in which processed meats were the vehicle. Due to its ecology, the control of this organism in ready-to-eat meats is difficult. As a first step in improving risk management for this product:pathogen pair in Australia, a stochastic simulation model to predict the numbers of L. monocytogenes likely to be consumed in those products under a wide range of scenarios was developed. The predictions are based on data describing initial contamination levels of both lactic acid

The contamination of polar regions with mercury that is transported as inorganic mercury from lower latitudes has resulted in the accumulation of methylmercury in the food chain of polar environments, risking the health of humans and wildlife. This problem is likely to be particularly severe in coastal marine environments where active cycling occurs. Little is currently known about how mercury is methylated in polar environments. Relating observations on mercury deposition and transport through polar regions to knowledge of the microbiology of cold environments and considering the principles o

Concern and awareness is growing about the health effects of exposures to environmental contaminants, including those found in food. Most primary care physicians lack knowledge and training in the clinical recognition and management of the health effects of environmental exposures. We have found that the use of a simple history-taking tool - the CH2OPD2 mnemonic (Community, Home, Hobbies, Occupation, Personal habits, Diet and Drugs) - can help physicians identify patients at risk of such health effects. We present an illustrative case of a mother who is concerned about eating fish and wild gam

A survey was conducted to determine the incidence of tetracycline antibiotic (TCAs) residues in the kidneys of slaughtered animals that did not pass inspection for human consumption by the Japanese Food Sanitation Law and the Meat Inspection Law at the slaughterhouses in Aichi Prefecture, Japan, from April 1985 to March 1998. The kidneys were analyzed by the AOAC Official Method 995.09. Among 424 animals (147 cattle and 277 pigs), 131 (30.9%) were contaminated with TCAs, including 69 (16.3%) with chlortetracycline (CTC), 61 (14.4%) with oxytetracycline (OTC), 3 (0.7%) with tetracycline (TC), a

Since the 1970's, in many industrial countries, the awareness of environmental health risks has led to set up information systems in order to assess and monitor concentrations of pollutants in air, water or food. These monitoring systems aim to answer the question: "is the environmental contamination too high?". With this objective, concentrations of pollutants are compared to standards. Up to now, this approach has been favoured and many environmental data have been collected at a local, regional, national or international level. Nevertheless, other approaches are possible as the health surve

Cryptosporidium parvum is an important emerging pathogen in the United States and a cause of severe, life-threatening disease in patients with AIDS. No safe and effective form of specific treatment for cryptosporidiosis has been identified to date. The parasite is transmitted by ingestion of oocysts excreted in the feces of infected humans or animals. The infection can therefore be transmitted from person to person through ingestion of contaminated water (drinking water and water used for recreational purposes) or food, from animal to person, or by contact with fecally contaminated environment

A 32-nm small round structured virus (SRSV), possibly related to the Snow Mountain agent (SMA), was implicated as the cause of recurrent outbreaks of gastroenteritis on a cruise ship. There was no identifiable relation to food or water consumption, but the risk of gastroenteritis among passengers who had shared toilet facilities was twice that of those who had a private bathroom and the rate of illness was related to the number of passengers sharing a communal restroom (ie, with one or more toilets): contaminated bathrooms may be an important vehicle for person-to-person spread of this enteric

In a survey of 6213 persons conducted between January 1973 to December 1974, at the Specialist Hospital, Benin City, the most common helminths were Necator americanus (16.8%), Ascaris lumbricoides (19l5%) and Trichuris trichiur (5-9%). Dicrocoelium hospes (0-06%) was also recorded and this may become an important liver parasite of man in Nigeria. Its snail vectors are believed to be species of Limicolaria and Achatina which are widely dispersed in Nigeria. Entamoeba coli and E. histolytica showed peaks during the "fly seasons", indicating that the housefly, as well as water, may be an importan

The growing exploitation of rare earth resources has led to the migration and accumulation of Scandium (Sc) within food systems, giving rise to emerging food safety concerns. Conventional techniques for Scandium (III) ions (Sc3+) detection are limited by labor-intensive sample preparation, high instrumentation costs, and poor suitability for rapid on-site screening. Here, we report a highly sensitive and selective biosensor for Sc3+ that integrates a Sc3+-specific nucleic acid aptamer (Sc-1) with a solution-gated graphene transistor (SGGT). The sensing mechanism relies on aptamer conformationa

OBJECTIVES: Salmonellosis outbreaks occurred at 2 restaurants 2 days apart, and an epidemiological investigation was conducted to determine whether the outbreaks were connected.
METHODS: Case studies were conducted for both outbreaks. Stool samples were collected from individuals, and food samples were collected from the restaurants. Pulsed-field gel electrophoresis (PFGE) and whole-genome sequencing analyses were performed on outbreak-related Salmonella enterica serovar Enteritidis (Salmonella Enteritidis) isolates. Traceback investigations were also conducted for the ingredients from gimbap

Methylmercury (MeHg) taken up through fish consumption can be transferred from the mother to the fetus during pregnancy. In the present study, pregnant rat mothers were contaminated with environmentally relevant doses of 36 and 76 ng MeHg/g of food using diets containing naturally mercury-containing fish. Young female rats fed with fish-containing food after weaning showed decreased locomotion in Y maze for accumulated concentrations in brain as low as 75 ng Hg/g dry weight (15 ng Hg/g wet weight). Young female rats fed the control diet after weaning yet borne by mothers fed the diet containin

Salmonellosis remains one of the most frequent food-borne zoonoses, constituting a worldwide major public health concern. Currently, at a global level, the main sources of infection for humans include meat products, including the consumption of contaminated poultry meat, in spite of the success of Salmonella control measures implemented in food-animal production of industrialized countries. In recent years, a shift in Salmonella serotypes related to poultry and poultry production has been reported in diverse geographical regions, being particularly associated with the spread of certain well-ad

Listeria monocytogenes (L. monocytogenes), one of most problematic food-borne bacteria, is mainly transmitted through the food chain and may cause listeriosis. Therefore, the development of rapid and sensitive L. monocytogenes detection technique has become an urgent task. In this study, we proposed a method using hyperbranching rolling circle amplification (HRCA) combined with gold nanoparticle (GNP) based colorimetric strategy to offer an isothermal, highly sensitive and specific assay for the detection of L. monocytogenes. First, a linear padlock probe targeting a specific sequence in the h
