Between June 30th and August 30th, 1983, 49 patients in Massachusetts acquired listeriosis. Seven cases occurred in fetuses or infants and 42 in immunosuppressed adults; 14 patients (29 per cent) died. Of 40 Listeria monocytogenes isolates available for testing, 32 were serotype 4b. Two case-control studies, one matching for neighborhood of residence and the other for underlying disease, revealed that the illness was strongly associated with drinking a specific brand of pasteurized whole or 2 per cent milk (odds ratio = 9, P less than 0.01 for the neighborhood-matched study; odds ratio = 11.5,

Mercury is a highly toxic trace metal that readily biomagnifies in food webs where it is inaccessible to current bioremediation methods. Animals could potentially be engineered to detoxify mercury within their food webs to clean up impacted ecosystems. We demonstrate that invertebrate (Drosophila melanogaster) and vertebrate (Danio rerio) animal models can express organomercurial lyase (MerB) and mercuric reductase (MerA) from Escherichia coli to demethylate methylmercury and remove it from their biomass as volatile elemental mercury. The engineered animals accumulated less than half as much m

Celiac disease (CD) is a common autoimmune disease affecting around 1% of the population. It consists of an immune-mediated enteropathy, triggered by gluten exposure in susceptible patients. All patients with CD, irrespective of the presence of symptoms, must endure a lifelong gluten-free diet (GFD). This is not an easy task due to a lack of awareness of the gluten content in foods and the extensive incorporation of gluten in processed foods. Furthermore, a GFD imposes a sense of limitation and might be associated with decreased quality of life in CD patients. This results in gluten contaminat

Listeria monocytogenes is a gram-positive bacillus that causes food poisoning. Listeriosis causes gastrointestinal infections and occasionally leads to fatal bacteremia in older adults. The symptoms of Listeria infections are non-specific and difficult to diagnose. We describe a case of Listeria bacteremia in an 82-year-old Japanese woman who had handled raw venison one month prior to becoming ill, but had not consumed any. No other possible sources of infection were identified. She presented with a fever without any focal symptoms. Computed tomography revealed enteritis with mucosal damage. B

In general, foodborne diseases present themselves with gastrointestinal symptoms caused by bacterial, viral, and parasitic pathogens well established to be foodborne. These pathogens are also associated with extraintestinal clinical manifestations. Recent studies have suggested that Escherichia coli and Klebsiella pneumoniae, which both cause common extraintestinal infections such as urinary tract and bloodstream infections, may also be foodborne. The resolution and separation of these organisms into pathotypes versus commensals by modern genotyping methods have led to the identification of ke

Toxoplasma gondii is a ubiquitous parasite and a prevalent food-borne parasitic pathogen. Infection of the host occurs principally through oral consumption of contaminated food and water with the gastrointestinal tract being the primary route for entry into the host. To promote infection, T. gondii has evolved highly specialized strategies for rapid traversal of the single cell thick intestinal epithelial barrier. Parasite transmigration via the paracellular pathway between adjacent cells enables parasite dissemination to secondary sites of infection where chronic infection of muscle and brain

Streptococcus suis, a bacterium that affects pigs, is a neglected pathogen that causes systemic disease in humans. We conducted a systematic review and meta-analysis to summarize global estimates of the epidemiology, clinical characteristics, and outcomes of this zoonosis. We searched main literature databases for all studies through December 2012 using the search term "streptococcus suis." The prevalence of S. suis infection is highest in Asia; the primary risk factors are occupational exposure and eating of contaminated food. The pooled proportions of case-patients with pig-related occupatio

Sodium Tripolyphosphate (STPP) is a food additive that is being used in the development of micro and nanoparticles as it induces ionic interactions with chitosan molecules. Although the ability of STPP to inhibit the growth of several food contaminants has been reported, studies on its activity against clinical isolates are scarce. Candida spp. are common causative agents of mucocutaneous infections including the vulvovaginal tegument and new therapeutic approaches are needed in order to treat resistant and recurrent cases. The aim of this study was to evaluate in vitro both antifungal (anti-C

INTRODUCTION: Escherichia coli contaminations of edible animal products reflects hygiene failures along the slaughter and processing value chains and represent a significant public health concern, particularly when isolates harbour antimicrobial resistance genes (ARGs). This study assessed the prevalence, antimicrobial resistance (AMR) patterns, and ARG profiles of presumptive E. coli recovered from cattle carcasses and meat-contact surfaces in a government-owned (Gwagwalada) and a privately-owned (Dei-Dei) slaughterhouse in Abuja, Nigeria.
METHODS: Swab samples from carcasses (n = 300) and m

Contamination of agricultural soils with per- and poly-fluoroalkyl substances (PFAS) is now widespread and common throughout the world due to management practices such as biosolid application. Crop and pasture plants can readily take up and accumulate PFAS in their tissues, which eventually end up in food products or livestock feed and lead to health issues. This study investigated how arbuscular mycorrhizal (AM) fungi affect plant PFAS uptake in three important cereal crop species (barley, bread wheat, durum wheat), using a combination of soils that were artificially spiked or naturally conta

Ensuring the microbial safety of raw milk cheeses demands a robust, quantitative understanding of contamination pathways and risk mitigation strategies. In this study, we developed an innovative agent-based Quantitative Microbial Risk Assessment (QMRA) model that explicitly represents farms, animals, cheese batches, and consumers as individual agents. This approach enables a realistic simulation of microbial transmission throughout the entire production chain and facilitates the assessment of the effectiveness of control measures. Grounded in extensive knowledge of the French raw milk cheese s

Microplastics (MPs) pollution has become a pressing environmental issue, significantly impacting marine ecosystems and food safety. These synthetic particles, defined as plastic fragments smaller than 5 mm, originate from various sources and have infiltrated marine habitats worldwide, from surface waters to deep-sea sediments. This review provides a comprehensive analysis of MPs contamination in marine organisms, highlighting global case studies and detection methodologies. MPs are ingested by marine life through direct uptake or trophic transfer, causing adverse biological effects, including

A review of quantitative risk assessment (QRA) models of Listeria monocytogenes in produce was carried out, with the objective of appraising and contrasting the effectiveness of the control strategies placed along the food chains. Despite nine of the thirteen QRA models recovered being focused on fresh or RTE leafy greens, none of them represented important factors or sources of contamination in the primary production, such as the type of cultivation, water, fertilisers or irrigation method/practices. Cross-contamination at processing and during consumer's handling was modelled using transfer

Field trials based on manual infestation of the Asian corn borer (ACB) (Ostrinia furnacalis [Guenée]) and Fusarium verticillioides (Nirenberg) atomization were conducted on four maize hybrids to investigate the relationship between ACB infestation and F. verticillioides infection, yield loss, and fumonisin contamination in maize. Analysis of fumonisins B1 and B2 was carried out using an LC-MS/MS system. In this study, manual ACB infestation significantly promoted F. verticillioides infection (both symptomatic and symptomless) and grain fumonisin levels. Ear rot incidence and severity, symptoml

Microorganisms thriving in poultry bedding materials during their exploitation are involved in the development of several diseases and disfunctions of animals. They can also contaminate food products and pose risks to the environment and human health. This study provides an analysis of dynamics and diversity in microbiological contamination observed during the exploitation of poultry bedding materials containing parts of medicinal plants: Satureja hortensis, Origanum vulgare, Melissa officinalis, Salvia officinalis, and Thymus vulgaris, compared with standard types of beddings: straw chaff and

Exposure to heavy metals is common. This exposure is related to environmental contamination of air, water and soil, occupational exposure, accumulation in food, tobacco, and other factors. Cadmium and lead are notable for their widespread contamination, long-lasting effects in the body, and renal as well as cardiovascular toxicity. Acute toxicity due to high-level exposure, as well as chronic low-level exposure are now well-established pathogenic entities. Both chronic renal failure and ischemic heart disease patients have been treated separately in recent studies with ethylenediaminetetraacet

Extended-spectrum beta-lactamase- (ESBL-) producing Klebsiella (K.) pneumoniae and Escherichia (E.) coli are of critical importance in human and veterinary medicine. Animal food products, especially broiler chickens, are discussed as a possible source for the exposure of humans with antibiotic resistant bacteria. Although the occurrence and vertical transmission of ESBL-/AmpC-producing Enterobacteriaceae in the broiler production has been reported before, detailed investigations concerning the dissemination along the slaughter processing line are missing. In this study, we investigated cross-c

Accidental oil spills into the ocean can lead to downward transport and settling of oil onto the seafloor as part of marine snow, as seen during the Deepwater Horizon incident in 2010 in the Gulf of Mexico. The arctic and subarctic regions may favor conditions leading to this benthic oil deposition, prompting questions about the potential impacts on benthic communities. This study investigated the effects of oil-contaminated marine snow uptake on the blue mussel (Mytilus sp.). We exposed mussels for four days to 1) oil-contaminated marine snow (MOS treatment), or to 2) chemically-enhanced wate
