Reason's Triumph over Passion? Chinese Adults' Attention to Information on Ultra-Processed Foods' Fat and Sodium Contents in Nutrition Facts Tables.

BACKGROUND: It is common for consumers to purchase ultra-processed foods that are perceived to have health risks, and this phenomenon is rarely explained in the existing literature from the perspective of consumers' responses to the intuitive marketing of flavor labels and the packaging. METHODS: This study aimed to fill this knowledge gap and investigated the attention of 920 participants aged 18~59 across China toward fat and sodium content information for six ultra-processed foods (pastry foods, quick-frozen foods, dessert foods, puffed foods, beverages, and sauces) presented in nutrition

Towards unified global action on ultra-processed foods: understanding commercial determinants, countering corporate power, and mobilising a public health response.

The rise of ultra-processed foods (UPFs) in human diets is harming global public health. However, policy responses are still emerging-much like tobacco control efforts decades ago-indicating the need to understand root causes and accelerate global action. This paper, the third in a three-part Lancet Series, takes several steps to advance knowledge of these causes, and to inform a global public health response. First, we show that the UPF industry is a key driver of the problem, as its leading corporations and co-dependent actors have expanded and restructured food systems almost everywhere, in

Development of bioactive and environmentally friendly chitosan-based film using waste of pistachio dehulling process as a novel promising food packaging material.

Chitosan films containing different amounts of pistachio hull methanol extract (PHE) (2 %, 4 %, 8 % w/v) were produced. LC-MS/MS analysis demonstrated that tannic acid (207.74 mg/g PHE), gallic acid (46.63 mg/g PHE), protocatechuic acid (27.79 mg/g PHE), quinic acid (16.41 mg/g PHE), isoquercitrin (15.2 mg/g PHE) were the most abundant phenolic compounds in PHE. The biological activity test results indicated that PHE enhanced the antioxidant and antibacterial activities of chitosan films. Chitosan-based films with 8 % PHE showed significant antimicrobial activity on all microorganisms tested.

How the Food and Drug Administration Drug Approval Process Relates to the Potential Approval of Intravenous Racemic Ketamine for Treatment-resistant Major Depression.

This column focuses on the status of intravenous racemic ketamine for the treatment of patients suffering from a form of major depressive disorder that does not respond to trials of currently available biogenic amine antidepressants. To provide context, the column reviews the 3 pivotal elements of the usual Food and Drug Administration (FDA) drug approval process: (1) the unmet medical need (ie, the indication) for which the drug is being developed, (2) the efficacy of the drug for that condition, and (3) the safety/tolerability of the drug. This column is based on the author's 45-year history

High-pressure processing effect on conjugal antibiotic resistance genes transfer in vitro and in the food matrix among strains from starter cultures.

This study analyzed the effect of high-pressure processing (HPP) on the frequency of conjugal gene transfer of antibiotic resistance genes among strains obtained from starter cultures. Gene transfer ability was analyzed in vitro and in situ in the food matrix. It was found that the transfer of aminoglycoside resistance genes did not occur after high-pressure treatment, either in vitro or in situ. After exposure to HPP, the transfer frequencies of tetracycline, ampicillin and chloramphenicol resistance genes increased significantly compared to the control sample, both in vitro and in situ. Multiple health risk behaviors, including high consumption of ultra-processed foods and their implications for mental health during the COVID-19 pandemic.

BACKGROUND AND AIM: The growing increase in diet- and behavior-related illnesses has drawn the attention of many epidemiologists who attribute such changes to the epidemiological and nutritional transition. Thus, this study aims to evaluate the association between the combined occurrence of health risk behaviors, such as sedentary lifestyles, high weekly consumption of ultra-processed foods (UPFs), and non-daily consumption of fruits and vegetables, and symptoms of anxiety or depression in adults. METHODS: This is a cross-sectional study based on an epidemiological survey in two Brazilian cit

Geospatial Food Environment Exposure and Obesity Among Low Income Baltimore City Children: Associations Differ by Data Source and Processing Method.

Due to the high prevalence of childhood obesity, it is imperative to assess the relationship children's access to food retailers and obesity. However, the influence of methodological decisions on these associations has been understudied. We examined relationships between different measures of geospatial food environment (using 4 data sources, and 2 data processing methods), and BMI in a sample of low-income children in Baltimore, Maryland. The choice of data sources and data processing methods produced large differences in estimates of children's exposures to certain store types, such as super

The influence of food processing methods on serum parameters, apparent total-tract macronutrient digestibility, fecal microbiota and SCFA content in adult beagles.

Food processing methods may influence the health of dogs. However, previous studies have mostly been based on a comparison of several commercial dog foods with different ingredients. In this study, eighteen adult beagles of the same age and health status (assessed by routine blood tests) were used in the experiments. This study analyzed the effects of the following different processing methods: raw, pasteurized, and high temperature sterilization (HTS) made with the same ingredients and nutrients (based on dry matter) on serum parameters, apparent total-tract macronutrient digestibility, fecal

Understanding Food Web Mercury Accumulation Through Trophic Transfer and Carbon Processing along a River Affected by Recent Run-of-river Dams.

Unlike large dams which favor methylation of Hg in flooded soils over long periods, run-of-river dams are designed to flood a limited area of soils and are therefore not expected to significantly affect mercury (Hg) cycling or carbon processing. We studied the Hg and carbon cycles within food webs from several sectors along the Saint-Maurice River, Quebec, Canada, that differ in how they are influenced by two run-of-river dams and other watershed disturbances. We observed peak Hg concentrations in fish five-year postimpoundment, but these levels were reduced three years after this peak. Methyl

Food-related salience processing in healthy subjects during word recognition: Fronto-parietal network activation as revealed by independent component analysis.

BACKGROUND: The study aimed to isolate and localize mutually independent cognitive processes evoked during a word recognition task involving food-related and food-neutral words using independent component analysis (ICA) for continuously recorded EEG data. Recognition memory (old/new effect) involves cognitive subcomponents-familiarity and recollection-which may be temporally and spatially dissociated in the brain. Food words may evoke additional attentional salience which may interact with the old/new effect. METHODS: Sixteen satiated female participants undertook a word recognition task cons

Processing of visual food cues during bitter taste perception in female patients with binge-eating symptoms: A cross-modal ERP study.

OBJECTIVE: In healthy individuals, the perception of an intense bitter taste decreased the reward value of visual food cues, as reflected by the reduction of a specific event-related brain potential (ERP), frontal late positivity. The current cross-modal ERP study investigated responses of female patients with binge-eating symptoms (BES) to this type of visual-gustatory stimulation. METHODS: Women with BES (n=36) and female control participants (n=38) viewed food images after they rinsed their mouth with either bitter wormwood tea or water. RESULTS: Relative to controls, the patients showed

Characterization and Antibiotic Resistance of Listeria monocytogenes Strains Isolated from Greek Myzithra Soft Whey Cheese and Related Food Processing Surfaces over Two-and-a-Half Years of Safety Monitoring in a Cheese Processing Facility.

Listeriosis is a serious infectious disease with one of the highest case fatality rates (ca. 20%) among the diseases manifested from bacterial foodborne pathogens in humans, while dairy products are often implicated as sources of human infection with Listeria monocytogenes. In this study, we characterized phenotypically and genetically by whole-genome sequencing (WGS) 54 L. monocytogenes strains isolated from Myzithra, a traditional Greek soft whey cheese (48 isolates), and swabs collected from surfaces of a cheese processing plant (six isolates) in the Epirus region of Greece. A CRISPR-driven aptasensor for colorimetric monitoring of lead (II) ion assisted by rolling circle amplification process: Effective in controlling food and health safety.

Herein, an efficient colorimetric aptasensor has been introduced for highly sensitive measurement of lead (II) ions (Pb2+) by integrating the advantages of clustered regularly interspaced short palindromic repeats (CRISPR) system, the rolling circle amplification (RCA) process, and the catalytic activity of gold nanoparticles (AuNPs) for the first time. The presence of Pb2+ inactivates the CRISPR system, making it unable to cleave the complementary sequence (CS) on the surface of ferrofluids (FFDs) and the formation of RCA product. By trapping AuNPs inside the RCA mass and subsequent magnetic
