Electrochemical biosensor for detection of Escherichia coli 0157:H7 gene based on amino acid-derived nanomaterials.

This work presents a novel biosensor platform designed for the detection of Escherichia coli O157:H7, an important foodborne illness-causing bacteria. Carbon quantum dots based on tyramine were synthesized and characterized by UV-Vis, photoluminescence and FT-IR. Printed carbon electrodes were modified with these quantum dots and arginine monolayer. Specific DNA probe for E. coli O157:H7 was immobilized onto the working electrode and used for analysis of lysate solution of complementary or non-complementary target, detected by square wave voltammetry, using methylene blue as an intercalator of

Dietary intake of household cadmium-contaminated rice caused genome-wide DNA methylation changes on gene/hubs related to metabolic disorders and cancers.

Cadmium (Cd) contamination in food has raised broad concerns in food safety and human health. The toxicity of Cd to animals/humans have been widely reported, yet little is known about the health risk of dietary Cd intake at the epigenetic level. Here, we investigated the effect of a household Cd-contaminated rice (Cd-rice) on genome-wide DNA methylation (DNAm) changes in the model mouse. Feeding Cd-rice increased kidney Cd and urinary Cd concentrations compared with the Control rice (low-Cd rice), whereas supplementation of ethylenediamine tetraacetic acid iron sodium salt (NaFeEDTA) in the di

Caterpillar cereal as a potential complementary feeding product for infants and young children: nutritional content and acceptability.

Micronutrient deficiency is an important cause of growth stunting. To avoid micronutrient deficiency, the World Health Organization recommends complementary feeding with animal-source foods. However, animal-source foods are not readily available in many parts of the Democratic Republic of Congo (DRC). In such areas, caterpillars are a staple in adult diets and may be suitable for complementary feeding for infants and young children. We developed a cereal made from dried caterpillars and other locally available ingredients (ground corn, palm oil, sugar and salt), measured its macro- and micronu

Central nervous system tissue in meat products: an evaluation of risk, prevention strategies, and testing procedures.

Since the outbreak of bovine spongiform encephalopathy (BSE) in the United Kingdom in 1986 and its subsequent link to the human neurological disorder variant Creutzfeldt-Jakob disease (vCJD), presence of tissues from the central nervous system (CNS) in meat products has been considered a public health concern and, thus, has been banned from entering the human food chain in many countries. Despite this, potential can exist during harvesting to contaminate or cross-contaminate edible meat products with CNS tissue that is designated as a specified risk material (SRM) in many countries. Methods us

Isolation and characterization of Salmonella Typhimurium monophasic variant phage and its application in foods.

Salmonella Typhimurium monophasic variant (STm) is an emerging Salmonella serotype that causes food poisoning through the contamination of various foods, including animal products, vegetables, and fruits. In particular, the increasing prevalence of multidrug-resistant STm highlights the urgent need to develop effective strategies to control this pathogen. In this work, a novel and broad-spectrum Salmonella phage named vB_Sal_TmvP009 was isolated and characterized. Morphological and genomic analyses revealed that phage vB_Sal_TmvP009 belonged to the genus Jerseyvirus. Phage vB_Sal_TmvP009 was t

A new amine moiety-based near-infrared fluorescence probe for detection of formaldehyde in real food samples and mice.

A new amine moiety-based near-infrared fluorescent probe (Probe-NH2) is developed for detection of formaldehyde in food samples and mice. Probe-NH2 is constructed and synthesized from the IR-780 via two-step reactions as a hemicyanine skeleton bearing an amino moiety. The response mechanism is based on Schiff base reaction that formaldehyde reacts with amine group to form the corresponding imines. Probe-NH2 for detection of formaldehyde exhibits excellent analytical performance, including near-infrared fluorescence emission at 708 nm, high selectivity and sensitivity, also provides a response

Campylobacteriosis, Salmonellosis, Yersiniosis, and Listeriosis as Zoonotic Foodborne Diseases: A Review.

Zoonoses are diseases transmitted from animals to humans, posing a great threat to the health and life of people all over the world. According to WHO estimations, 600 million cases of diseases caused by contaminated food were noted in 2010, including almost 350 million caused by pathogenic bacteria. Campylobacter, Salmonella, as well as Yersinia enterocolitica and Listeria monocytogenes may dwell in livestock (poultry, cattle, and swine) but are also found in wild animals, pets, fish, and rodents. Animals, often being asymptomatic carriers of pathogens, excrete them with faeces, thus deliverin

Rapid colorimetric identification and targeted photothermal lysis of Salmonella bacteria by using bioconjugated oval-shaped gold nanoparticles.

Salmonella bacteria are the major cause for the infection of 16 million people worldwide with typhoid fever each year. Antibiotic-resistant Salmonella strains have been isolated from various food products. As a result, the development of ultrasensitive sensing technology for detection and new approaches for the treatment of infectious bacterial pathogens that do not rely on traditional therapeutic regimes is very urgent for public health, food safety, and the world economy. Driven by this need, we report herein a nanotechnology-driven approach that uses antibody-conjugated oval-shaped gold nan

Matrix-Resolved Profiling of the Prenatal Chemical Exposome Reveals Selective Placental Retention and Fetal Transfer.

Chemical exposure during human development, especially in utero, can disrupt many biological processes and increase disease vulnerability. Assessing the chemical landscape across the maternal-fetal interface is challenging. Here we address this challenge by conducting an exposome-based analysis across a suite of integrated maternal-fetal biological compartments: maternal urine, maternal serum, placental tissue, and umbilical cord serum. Using wide-scope liquid chromatography-high-resolution mass spectrometry (LC-HRMS) in 23 mother-infant dyads from the INSULIN cohort (Spain), we profiled 659 c

Modulation of Dietary 5-Hydroxymethylfurfural-Induced Intestinal Epithelial Stress by Blueberry Polyphenols.

Ultra-processed foods expose consumers to heat-induced contaminants like 5-hydroxymethylfurfural (5-HMF), which impairs intestinal homeostasis via oxidative stress and inflammation. This study quantified 5-HMF in bakery products and evaluated blueberry polyphenols' capacity to attenuate 5-HMF-induced cellular stress in an in vitro Caco-2 intestinal model. 5-HMF levels in commercial bakery products were determined using a colorimetric assay and HPLC-UV. Differentiated Caco-2 cells were exposed to 5-HMF (0.4 mM) for 48 h, alone or co-treated with blueberry juice (15 µg/mL of phenol equivalents).

Sustainable Biochars from Agri-Food Residues for the Selective Removal of Pharmaceuticals: Performance Under Untreated Wastewater Conditions.

In this study, biochars derived from agri-food wastes, including different avocado residues (peel- and seed-derived fractions), olive pits and cherry stones, were evaluated as low-cost and sustainable adsorbents for the removal of the emerging contaminants sulfamethoxazole (SMX), antipyrine (ANT) and trazodone (TRZ) from aqueous solutions. Despite their very low BET surface areas, the biochars exhibited notable adsorption capacities, indicating that adsorption performance was mainly governed by surface chemistry rather than textural properties. FTIR analysis confirmed the presence of abundant

Campylobacteriosis in India: Beyond gastroenteritis.

BACKGROUND: Campylobacter species, particularly Campylobacter jejuni and Campylobacter coli, are among the leading global causes of bacterial gastroenteritis and are primarily transmitted through contaminated food, water and animal products. Despite their recognised role in enteric infections, the broader clinical and public health significance of Campylobacter remains underappreciated, particularly in developing countries such as India. Beyond gastrointestinal illness, these pathogens are increasingly associated with a range of extraintestinal complications, including bacteremia, neurological

Zearalenone (ZEN) impairs motor function and induces neurotoxicity via inflammatory pathways: Evidence from zebrafish models and molecular docking studies.

ZEN is a low-molecular-weight food contaminant that is frequently detected in various crops and regions due to its high thermal stability and persistence. It poses a significant threat to the biological nervous system. However, the molecular mechanisms underlying ZEN-induced neurotoxicity remain incompletely understood. To further explore this issue, this study focused on the effects of ZEN on the nervous system, particularly its key targets and related molecular mechanisms. The study combined network toxicology and molecular docking methods and performed behavioral analysis of zebrafish larva

A novel risk factor for dementia: chronic microplastic exposure.

Recent advances in dementia research have expanded our understanding of modifiable risk factors, with air pollution being a well-established contributor. However, microplastics-plastic particles smaller than 5 mm-represent an understudied component of environmental pollution that may significantly impact neurological health. This review examines emerging evidence linking chronic microplastic exposure to increased dementia risk. Microplastics enter the human body through multiple routes, including ingestion of contaminated food and water, inhalation, and dermal absorption, with demonstrated abi

Combined effects of a high-fat diet and polyethylene microplastic exposure induce impaired lipid metabolism and locomotor behavior in larvae and adult zebrafish.

Источник пометил публикацию как отозванную

Microplastics (MP), tiny plastic particles, can be ingested by fish through their habitat or contaminated food sources. When combined with a high-fat diet (HFD), MP exposure may lead to increased MP accumulation in fish and negative impacts on their health. However, the underlying mechanisms of how MP and HFD interact to promote fat accumulation in fish remain poorly understood. In this study, we aimed to evaluate the combined effect of HFD and polyethylene MP (PE-MP) in the zebrafish model (Danio rerio) and decipher its molecular mechanisms. Adult zebrafish exposed to the combined HFD and PE-
