Microbial Consortium Fermentation Remodels the Metabolite Profile and Enhances the Biological Functionality of Stevia rebaudiana Leaves.

Microbial fermentation is an effective strategy to enhance the functional value of plant-derived ingredients. In this study, Stevia rebaudiana leaves were subjected to microbial fermentation to improve their antioxidant potential and functional properties. A composite fermentation system composed of Bacillus subtilis and Candida utilis was established through strain screening, and fermentation conditions were optimized using single-factor and orthogonal experiments, with chlorogenic acid (CA) content and antioxidant activity as evaluation indices. The optimal conditions were determined to be a

Liquor fermentation industry reshapes soil microbiomes and drives CO2 emissions via microbial dispersal.

The rapid expansion of industrial fermentation has raised concerns about its environmental impacts, particularly regarding microbial dispersal from production facilities into adjacent terrestrial ecosystems; however, the ecological and functional consequences of microbial introductions originating from fermentation facilities remain poorly elucidated. We studied eight Chinese liquor fermentation facilities spanning 26°-47°N and 83°-124°E, covering the major geographical range of the industry. Using large-scale soil metagenomics, in situ CO2 flux measurements, and microcosm experiments, we demo

The interactive effect of fungicide residues and yeast assimilable nitrogen on fermentation kinetics and hydrogen sulfide production during cider fermentation.

BACKGROUND: Fungicide residues on fruit may adversely affect yeast during cider fermentation, leading to sluggish or stuck fermentation or the production of hydrogen sulfide (H2 S), which is an undesirable aroma compound. This phenomenon has been studied in grape fermentation but not in apple fermentation. Low nitrogen availability, which is characteristic of apples, may further exacerbate the effects of fungicides on yeast during fermentation. The present study explored the effects of three fungicides: elemental sulfur (S0 ) (known to result in increased H2 S in wine); fenbuconazole (used in

Glucose breath test for the detection of small intestine bacterial overgrowth: Impact of diet prior to the test.

BACKGROUND: Glucose breath test (GBT) is used for the diagnosis of small intestine bacterial overgrowth. A restrictive diet without fibers and/or fermentable food is recommended on the day before the test. The aim of our retrospective study was to evaluate the impact of two different restrictive diets on the results of GBT. METHODS: A change of the pretest restrictive diet was applied in our lab on September 1, 2020. The recommended diet was a fiber-free diet before this date, and a fiber-free diet plus restriction of all fermentable food afterward. We thus compared the results of GBT perform

Cooking Has Variable Effects on the Fermentability in the Large Intestine of the Fraction of Meats, Grain Legumes, and Insects That Is Resistant to Digestion in the Small Intestine in an in Vitro Model of the Pig's Gastrointestinal Tract.

This study aimed to evaluate the fermentation in the large intestine of indigestible dietary protein sources from animal, insect, and plant origin using an in vitro model of the pig's gastrointestinal tract. Protein sources were used raw and after a cooking treatment. Results showed that the category of the ingredient (meats, insects, or grain legumes) exerts a stronger impact on enzymatic digestibility, fermentation patterns, and bacterial metabolites such as short-chain fatty acids (SCFA) and hydrogen sulfide (H2S) than the cooking treatment. The digestibility and the fermentation characteri

Plant-based yogurt systems: Mechanistic links from fermentability to quality and bioactivity.

Plant-based yogurt systems are promising dairy alternatives and carriers of plant-derived bioactives, but their quality is difficult to predict because plant matrices differ in fermentable substrates, buffering capacity, protein structure, polysaccharides, lipids, and phytochemicals. This review integrates recent evidence within a composition-process-microstructure-quality-bioactivity framework. It explains how raw materials, starter-matrix compatibility, fermentation behavior, antinutritional factors, protein-polyphenol interactions, and processing-induced structural changes jointly regulate

Fiber and starchy foods: gut function and implications in disease.

Increased intake of fiber and starchy foods has been recommended in the treatment or prevention of a range of diseases including dumping syndrome, hyperlipidemia, gallstones, diabetes, Crohn's disease, constipation, irritable bowel, diverticular disease, and colonic cancer. The nature and physiological effects of fiber are diverse. However in general, insoluble fibers increase fecal bulk and decrease transit time. On the other hand, soluble fibers have metabolic effects secondary to reducing the rate of small intestinal absorption. In the colon, along with undigested starch, they are largely f

Research Progress on Douchi Fibrinolytic Enzyme.

In recent years, the morbidity and mortality owing to thrombotic diseases have increased. Fibrinolytic enzymes can dissolve thrombosis. Existing thrombolytic drugs are expensive, have short half-lives, and cause bleeding easily. Consequently, there is a need to develop safe, effective, and inexpensive thrombolytic drugs. The Douchi fibrinolytic enzyme (DFE), a serine protease that can dissolve fibrous proteins from the traditional fermented food Douchi, has been isolated recently. DFE is non-toxic and free from side effects like bleeding. In addition, it has a low molecular weight, owing to wh

Table Olive Fermentation: Microbial Ecology, Metabolite Transformation, and Emerging Non-Thermal and Omics-Based Technologies.

Table olive fermentation is a complex microbial process in which lactic acid bacteria and yeasts contribute to the transformation of phenolic compounds, organic acids, and volatile metabolites that influence product quality, safety, and functionality. Fermentation outcomes remain variable because of cultivar characteristics, spontaneous microbial succession, and limited control over microbial and biochemical dynamics. Recent research has therefore shifted toward a more mechanistic understanding of microbial-metabolite interactions and strategies for more reproducible fermentation control. This
