Molecular and environmental indicators of Listeria monocytogenes persistence in food processing facilities: a multi sector approach.

Listeria monocytogenes is a foodborne pathogen capable of persisting in food processing environments. This persistence results from interactions between strain-specific traits and environmental conditions. This study aimed to identify molecular and environmental indicators associated with L. monocytogenes persistence across high-risk food production sectors. Three environmental sampling events were conducted in nine facilities from seafood, vegetable, and pork (n = 3 each) sectors. In total 1097 samples were analysed for the presence of L. monocytogenes, the temperature, and surface characteri

Sustainable multisample emulsive microextraction technique for the determination of triazole fungicides in food samples.

To address concerns about persistent triazole fungicide residues and their potential risks to food safety, a novel emulsive liquid-liquid microextraction pretreatment method was developed following green chemistry principles. Cyclopentyl methyl ether (CPME), characterized by low toxicity, was utilized as an effective extraction solvent; however, its emulsification was challenging. Alkyl polyglucosides (APGs) exhibited excellent biodegradability and surface activity, facilitating the preparation of oil-in-water emulsions by mixing APG aqueous solution with CPME. No mechanical mixing, vortex, ul

Blackthorn juice from central Italy exhibits selective anticancer activity by inducing apoptosis and autophagy in gastric carcinoma cells.

Blackthorn (Prunus spinosa L.) juice, a polyphenol-rich blend derived from the Marche region of Italy, was chemically characterized and evaluated for its selective effects against gastric cancer cells. The juice contained a mix of polyphenols, including neochlorogenic acid, cyanidin-3-glucoside, rutin, and smaller molecules - such as gallic, caffeic, and vanillic acids - characterized by high absorption rates. In vitro, the juice significantly reduced the viability of AGS and KATO III gastric cancer cells, while sparing non-tumorigenic GES-1 cells. In malignant cells, the juice activated Caspa

High-pressure carbon dioxide (HPCD): Impact on the quality of fruit juices and inactivation of spores and enzymes.

Ensuring microbiological safety in fruit juices while maintaining their nutritional and sensory qualities remains a significant challenge in food processing. Traditional thermal methods, although effective against vegetative pathogens, can degrade important nutrients and are less effective at inactivating bacterial spores. High-pressure carbon dioxide (HPCD) technology has emerged as a promising non-thermal alternative, using CO2 under high pressure to inactivate spores and enzymes. More importantly, HPCD has shown great potential in preserving the quality of fruit juices. This review assesses
