Energy and fructose from beverages sweetened with sugar or high-fructose corn syrup pose a health risk for some people.

Sugar intake in the United States has increased by >40 fold since the American Revolution. The health concerns that have been raised about the amounts of sugar that are in the current diet, primarily as beverages, are the subject of this review. Just less than 50% of the added sugars (sugar and high-fructose corn syrup) are found in soft drinks and fruit drinks. The intake of soft drinks has increased 5-fold between 1950 and 2000. Most meta-analyses have shown that the risk of obesity, diabetes, cardiovascular disease, and metabolic syndrome are related to consumption of beverages sweetened wi…

Comparative Evaluation of the Effect of Different Beverages on Color Stability of Two Single-Shade Composite Resins: An In Vitro Study.

Background Color stability is a critical property for the long-term success of aesthetic composite restorations. Recently introduced single-shade composite resins, such as Omnichroma (Tokuyama Dental, Tokyo, Japan) and Vittra APS Unique (FGM Dental Group, Joinville, Santa Catarina, Brazil), exhibit a chameleon effect that enhances shade matching. However, their resistance to staining from commonly consumed beverages remains inadequately explored. Aim The aim of this in vitro study was to comparatively evaluate the effect of different commonly consumed beverages on the color stability of two si…

Effect of roasting pretreatment of macadamia nut (Macadamia integrifolia) kernels on the physicochemical properties and flavour of macadamia nut-based beverages.

This study investigated the influence of nut roasting pretreatment (85-145 °C, 10-30 min) on the physicochemical, sensory properties and flavour of macadamia nut-based beverages. The results revealed that roasting conditions influenced various quality parameters, with an increase in roasting temperature having a greater impact on the beverage than an extension of roasting time. Roasting at 125 °C for 20 min was identified as the optimal condition, producing beverages with higher total soluble solids content, improved stability, and superior sensory acceptability. The fatty acid compositions of…

Rapid ethanol determination in alcoholic beverages via dilute-and-shoot molecular emission spectrometry with a solution anode glow discharge excitation source.

A high-throughput molecular emission spectrometry (MES) was developed for ethanol determination in alcoholic beverages. Samples, diluted 25-100 times with a 0.01 mol·L-1 HNO3 solution, were directly introduced into a solution anode glow discharge (SAGD), where evaporation, fragmentation, and excitation occurred, producing an intense CO molecular band at 206.8 nm. The method demonstrated high precision (1-3 %), a low detection limit of ethanol (0.005 %, v/v), and an upper linearity range at a concentration of 0.6 %. Additionally, SAGD MES exhibited excellent resistance to matrix effects, elimin…

Construction of biopolymer-based hydrogel beads for encapsulation, retention, and colonic delivery of tributyrin: Development of functional beverages (fortified bubble tea).

Tributyrin (TB) can be hydrolyzed into short chain fatty acids (butyric acid) in the gastrointestinal tract, which are claimed to exhibit beneficial health effects in the colon. However, digestion of tributyrin in the stomach and small intestine may promote its absorption in the upper gastrointestinal tract, thereby reducing its potential colonic health benefits. In this study, we therefore developed a novel method of encapsulating emulsified tributyrin within biopolymer-based hydrogel beads (≈ 800 μm) that were then encapsulated inside the boba beads (≈ 8-10 mm) found in bubble tea. The hydro

Short-term salivary acetaldehyde increase due to direct exposure to alcoholic beverages as an additional cancer risk factor beyond ethanol metabolism.

BACKGROUND: An increasing body of evidence now implicates acetaldehyde as a major underlying factor for the carcinogenicity of alcoholic beverages and especially for oesophageal and oral cancer. Acetaldehyde associated with alcohol consumption is regarded as 'carcinogenic to humans' (IARC Group 1), with sufficient evidence available for the oesophagus, head and neck as sites of carcinogenicity. At present, research into the mechanistic aspects of acetaldehyde-related oral cancer has been focused on salivary acetaldehyde that is formed either from ethanol metabolism in the epithelia or from mic…
