Staphylococcal food poisoning (SFP) is one of the most common foodborne diseases worldwide, resulting from the ingestion of staphylococcal enterotoxins (SEs), primarily SE type A (SEA), which is produced in food by enterotoxigenic strains of staphylococci, mainly S. aureus. Since newly identified SEs have been shown to have emetic properties and the genes encoding them have been found in food involved in poisoning outbreaks, it is necessary to have reliable tools to prove the presence of the toxins themselves, to clarify the role played by these non-classical SEs, and to precisely document SFP

This study defined the prevalence of enterotoxin gene-positive Staphylococcus aureus strains among food handlers and non-food processing healthy nasal S. aureus carriers in central Iran. Meticillin-resistant S. aureus (MRSA) strains were diagnosed by cefoxitin disk diffusion. PCR was used to detect the mecA, Sa442, and enterotoxin genes. Out of the 1113 food handlers, 224 (20.1%) were nasal carriers of S. aureus and 157 (70.1%) of these isolates were positive for one or more enterotoxin genes. The most prevalent enterotoxin gene was sei (40.2%), followed by seg (35.3%), sea (23.5%), seb (15.2%

Veterinary medicine concentrates its main activities onto the curative practice for animals but also onto the field of health protection for men since a very long time. But as late as in the year 1900 the first regulation by law within the modern world was edited in Germany. It was initiated by the well-known pathologist Virchow in Berlin and elaborated, besides other veterinarians, by the first food hygienist at the Veterinary School of Berlin, Robert von Ostertag. At that time, the protection of men from the classical infections caused by bacteria was the target, e.g. tuberculosis and the so

Staphylococcus aureus is a major food safety and One Health concern in raw milk dairy chains. This study investigated its occurrence, contamination levels, antimicrobial resistance (AMR), enterotoxigenic potential, surface-adhesion phenotype, and genomic relatedness across 15 small-scale ovine-caprine dairy farms in the Umbria and Marche regions of Central Italy. Overall, 425 food, environmental, and operator hand swab samples were analysed. S. aureus was detected in 208/425 samples (48.9%), with the highest occurrence in food matrices (62.1%) and marked farm-level heterogeneity. One finished

Salmonella enterica remains a major foodborne pathogen in poultry-processing environments, where its persistence is largely attributed to biofilm formation on food-contact and non-food-contact surfaces. Despite extensive research on Salmonella control, persistent contamination continues to challenge food safety due to the complex interplay among isolate-specific traits, stress adaptation, and antimicrobial resistance (AMR). This review critically examines the phenotypic and genotypic determinants associated with Salmonella biofilm formation and evaluates their contributions to persistence, str

The emergence of new viral strains has been frequently associated with the onset of outbreaks in different epidemiological settings. This study investigated an acute gastroenteritis (AGE) outbreak, which occurred at a university campus in southern Brazil, in 2024, affecting approximately 30-40% of undergraduate students, with over 400 reported cases. The objectives were to describe the epidemiological and molecular features of the outbreak, identify the probable transmission route, and assess the genetic relatedness of the detected strain to recently circulating rotavirus A (RVA) lineages. Listeria monocytogenes poses significant public health and food safety risks due to its environmental resilience and pathogenicity. In this study, we utilized whole-genome sequencing to characterize 15 L. monocytogenes strains isolated from Nantong, China (2020-2023), recovered from food and clinical samples. Antimicrobial susceptibility testing revealed that the Nantong isolates exhibited high resistance rates to ciprofloxacin (93.3%) and oxacillin (66.6%). Of particular concern, isolate NTLM03 exhibited the most extensive resistance profile, demonstrating resistance to six antimicrobials, in

Earlier studies have validated the isolation of extended-spectrum beta-lactamase-producing Salmonella (ESBL-Sal) strains from food. While poultry is recognized as a reservoir for Salmonella contamination, pertinent data regarding ESBL-Sal remains limited. Consequently, the Ministry of Food and Drug Safety has isolated Salmonella spp. from retail meat and evaluated their antibiotic susceptibility and genetic characteristics via whole-genome sequencing. To further elucidate these aspects, this study investigates the prevalence, antibiotic resistance profiles, genomic characteristics, and homolog

Photodynamic inactivation (PDI), a non-thermal sterilization method, has attracted considerable attention due to its broad-spectrum antimicrobial activity, environmental friendliness and cost-effectiveness. Curcumin (Cur), a food-grade photosensitizer, exhibits photodynamic antimicrobial activity based primarily on its efficiency in intracellular accumulation. However, Cur's low water solubility and the barriers presented by the outer membrane of Gram-negative bacteria challenge its ability to penetrate the cytoplasm. Natural borneol (NB), a monoterpene food flavoring agent, has also been show

Formaldehyde (FA), a ubiquitous volatile organic compound present in a wide range of resources, is a hazardous chemical and human carcinogen. Contamination of FA in food, especially perishable commodities like fish and meat, is a major source of exposure, although it is not recommended for use in food and food products owing to its carcinogenicity. Effects of oral feeding of FA have been studied by evaluating general health, haematology and clinical chemistry in rat. Recent studies have shown that FA exposure leads to detrimental cardiovascular effects. It regulates vascular tensions through n

The environmental stability of enteric viruses and resistance to conventional treatments and common disinfectants, leads to their persistence in waters and food, causing serious implications on public health. Among non-thermal treatment methods, ionizing radiation is recognized as a useful and effective mean of disinfection. The objective of this study was to estimate the inactivation of enteric virus by gamma radiation in raw berry fruits, in order to evaluate the potential of this technology to be applied as a disinfection treatment. Fresh strawberries and raspberries were inoculated either

Endometriosis (EM) is a severe chronic inflammatory disease characterized by the presence of endometrium-like tissue outside the uterine cavity, causing pain and significantly reducing quality of life. Worldwide, around 10% of women of reproductive age are affected and there is no cure as of now. The limited treatment options focus on hormone therapy, surgery and pain management--without satisfactory long-term effects. Nutritional strategies might support the prevention and treatment of EM-associated pain as nutrients and phytochemicals exert anti-inflammatory and antioxidant effects, modulate

Campylobacter jejuni, which is mostly transmitted through poultry products, is one of the most common bacterial causes of foodborne illness worldwide. Its low infectious dose and complex chicken matrices make reliable identification difficult, and conventional culture- and nucleic acid-based methods are still time-consuming and unsuitable for rapid or portable food safety surveillance. With a focus on food and food-chain-related matrices, this study critically assesses nanoparticle (NP)-based biosensors designed for C. jejuni detection. The functional roles of NPs, sensing mechanisms, nanomate

The only treatment currently available to combat celiac disease (CD) is strict adherence to a gluten-free diet (GFD), but there may be various determinants of its adherence, including food neophobia (FN), that is associated with sensory aversions, or fears of negative consequences of eating specific food products, that may be crucial for CD patients following a GFD. The aim of the present study was to analyze food neophobia levels and its determinants in CD patients in comparison with other individuals who follow a GFD based on their own decision. The study was conducted in two independent gro

Zoonotic food- and waterborne protozoan parasites (FWPPs) pose a significant global public health risk, causing substantial morbidity via contaminated fresh produce, water, and meat. Despite their notable impact, surveillance and detection technologies remain inadequate for high-priority protozoans such as Cryptosporidium spp. and Toxoplasma gondii, as current World Health Organization (WHO) and Food and Agriculture Organization (FAO) guidelines primarily focus on bacterial pathogens. This review evaluates the global burden of Cryptosporidium spp. and T. gondii, and highlights the limitations
