Prevalence and Transmission of Antimicrobial Resistance in a Vertically Integrated Veal Calf Production System.

Transmission of antimicrobial resistance (AMR) from animal production systems to humans through the food supply is a public health concern. Currently, little is known about the prevalence of AMR among veal calves in the United States. Therefore, the objective of this prospective cohort study was to estimate the prevalence of AMR and multidrug resistance (MDR) among Escherichia coli within a vertically integrated production system. In addition, this study aimed to identify genes associated with phenotypic resistance to third- and fourth-generation cephalosporins (3GC and 4GC). Calves from four

An outbreak of type A botulism associated with a commercial cheese sauce.

BACKGROUND: Although botulism is rare, recognition of a possible case of this illness represents a public health emergency. To prevent more cases, prompt investigation must be done to determine whether illness is linked to commercial product or restaurant. Botulism can masquerade as other illnesses, and seemingly unlikely foods can harbor botulinum toxin. OBJECTIVE: To confirm the diagnosis and determine the cause and extent of an outbreak of botulism associated with food served at a delicatessen. DESIGN: Retrospective cohort study of patrons of the delicatessen; laboratory analysis of food,

A Label-Free Bioluminescent scFv-NLuc Fusion Probe Enabling a Smartphone-Based Sensitive Immunoassay Platform Using Lomefloxacin as a Model Analyte.

Enzymes as labeling agents enhance lateral flow immunoassays (LFIA). However, their biological instability and reliance on labor-intensive chemical conjugation hinder practical high-throughput screening of food contaminants. To address this, we report a rapid, label-free luciferase-based platform for quantifying lomefloxacin (LOM) in food. The assay uses an engineered immunoprobe: a high-affinity single-chain variable fragment antibody (3G9-scFv) specific to LOM, combined with Nanoluciferase (NLuc) as an intrinsic signal generator without covalent labeling. NLuc catalyzes furimazine oxidation,

An Immigrant With Intestinal Myiasis in the United States: A Case Report and a Review of the Literature.

Myiasis is an infestation of human tissue by fly larvae. Intestinal myiasis occurs when fly eggs or larvae in contaminated food or water survive passage through the gastrointestinal tract and are found in the stool or bowel lumen. It is more prevalent in developing countries and can present with nonspecific gastrointestinal symptoms that mimic common conditions. A 55-year-old Nepalese-American woman, with a long history of intermittent abdominal pain, nausea, and vomiting, underwent CT imaging, which demonstrated a 2 cm colonic narrowing with wall thickening of the proximal transverse colon. Leveraging Biochar Amendments to Enhance Food Security and Plant Resilience Under Climate Change.

Climate change poses significant risks to food security and contributes to widespread soil degradation. Effective strategies are urgently needed to mitigate its impacts and ensure stable crop production and food quality. Biochar has shown strong potential to reduce greenhouse gas emissions, enhance carbon sequestration, and immobilize soil contaminants such as heavy metals and organic pollutants. These benefits can lead to increased crop yields, improved nutritional quality, and reduced uptake of harmful substances by plants. This review summarizes the possible mechanisms through which biochar

Nitrate: "the source makes the poison".

Interest in the role of dietary nitrate in human health and disease has grown exponentially in recent years. However, consensus is yet to be reached as to whether consuming nitrate from various food sources is beneficial or harmful to health. Global authorities continue to recommend an acceptable daily intake (ADI) of nitrate of 3.7 mg/kg-bw/day due to concerns over its carcinogenicity. This is despite evidence showing that nitrate consumption from vegetable sources, exceeding the ADI, is associated with decreased cancer prevalence and improvements in cardiovascular, oral, metabolic and neuroc

Flow cytometry: Unravelling the real antimicrobial and antibiofilm efficacy of natural bioactive compounds.

Flow cytometry (FCM) provides unique information on bacterial viability and physiology, allowing a real-time early warning antimicrobial and antibiofilm monitoring system for preventing the spread risk of foodborne disease. The present work used a combined culture-based and FCM approach to assess the in vitro efficacy of essential oils (EOs) from condiment plants commonly used in Mediterranean Europe (i.e., thyme EO, oregano EO, basil EO, and lemon EO) against planktonic and sessile cells of food-pathogenic Listeria monocytogenes 56 LY, and contaminant and alterative species Escherichia coli A

Combination of endolysins and high pressure to inactivate Listeria monocytogenes.

Outbreaks of listeriosis are often related to the consumption of low-processed ready-to-eat food products (e.g. soft cheeses or smoked fish) contaminated with Listeria monocytogenes. Traditional preservation techniques, such as heat treatment, cannot eliminate Listeria from these products without strongly affecting the quality of the foods. We therefore investigated the use of endolysin (PlyP40, Ply511, or PlyP825) in combination with high hydrostatic pressure processing to kill L. monocytogenes in buffer. The results demonstrated a more than additive effect when both treatments were combined.

Effect of fumonisin-containing diet on the myenteric plexus of the jejunum in rats.

Fumonisins are mycotoxins that naturally occur as contaminants in grains that are destined for animal and human consumption. These mycotoxins cause hepatotoxic, nephrotoxic, carcinogenic, teratogenic, immunotoxic, and neurotoxic effects in different intensities based on dose, time of exposure, and animal species. In the present study, male Wistar rats were fed between postnatal days 21 and 63 with diets that contained fumonisins B1+B2 at concentrations of 1 and 3mg/kg. The objective of the present study was to evaluate the effects of fumonisins on food intake, growth, weight gain, serum activi

Reactive nitrogen and human health: acute and long-term implications.

Reactive-nitrogen (Nr) has a wide variety of beneficial and detrimental effects on human health. The most important of the beneficial effects are increasing global and regional food supplies and increased nutritional quality of available foods. However, lack of adequate dietary intake of amino acids and proteins is a serious cause of malnutrition when food supplies are inadequate because of poverty, drought, floods, wars, and displacements of people as refugees. There is sufficient, though limited, quantitative data indicating that increased circulation of Nr in the environment is responsible

Occurrence and Characterization of the Pathogenic Potential of Bacillus cereus in Vending Machines from Southern Italy.

Bacillus cereus is a ubiquitous spore-forming bacterium associated with foodborne illness. Although frequently detected as a contaminant in food-processing environments, the presence of specific virulence-associated genes may be relevant to food safety. Pathogenicity is mainly associated with production of emetic and diarrheal toxins. In a previous survey assessing the hygienic and sanitary conditions of vending machines in the Campania Region (Italy), B. cereus was the predominant pathogenic microorganism recovered. The present study aimed to characterize the virulence-associated gene profile

Volatilomic Profiling of Early-Stage Biotransformation Enables Identification of Diagnostic Volatiles in Escherichia coli-Contaminated Chicken Meat.

E. coli inoculation in food can be accompanied by a series of biochemical changes, during which both microbial activity and food matrix degradation may contribute to the formation of volatile organic compounds (VOCs). The composition and variation in these VOCs depend on the food, the contaminating microorganisms, and storage conditions. This study investigated VOC evolution in E. coli-inoculated chicken meat over 48 h using HS-GC-IMS and HS-SPME-GC-MS, detecting 57 and 50 VOCs, respectively. HS-GC-IMS showed advantages in detecting low-molecular-weight compounds. Through OPLS-DA and KEGG-base

Antibacterial potential of Thymus vulgaris (Thyme) oil against Escherichia coli strains isolated from food.

The search for meat-based foods, even if it allows to increase the shelf life of commercialized foods, can lead to contamination by pathogenic microorganisms. In this sense, the present study aimed to test the potential antibacterial effect of Thymus vulgaris (thyme) essential oil against food-borne strains of the bacterium Escherichia coli. Therefore, the Minimum Inhibitory Concentration (MIC) and Minimum Bactericidal Concentration (MBC) analyses were performed on microdilution plates. In addition, the study of the association of the product with synthetic antimicrobials, performed by the dis

Cascade CRISPR/cas Enables More Sensitive Detection of Toxoplasma gondii and Listeria monocytogenes than Single CRISPR/cas.

Foodborne pathogens represent a class of pathogenic microorganisms capable of causing food poisoning or serving as foodborne vectors, constituting a major source of food safety concerns. With increasing demands for rapid diagnostics, conventional culture-based methods and PCR assays face limitations due to prolonged turnaround times and specialized facility requirements. While CRISPR-based detection has emerged as a promising rapid diagnostic platform, its inherent inability to detect low-abundance targets necessitates coupling with isothermal amplification, thereby increasing operational comp

Phylogenetics and Mobilization of Genomic Traits of Cephalosporin-Resistant Escherichia coli Originated from Retail Meat.

Contaminations with cephalosporin-resistant Escherichia coli across the food chain may pose a significant threat to public health because those antimicrobials are critically important in human medicine. The impact of the presented data is especially significant concerning Poland's role as one of the leading food producers in the EU. This work aimed to characterize the genomic contents of cephalosporin-resistant Escherichia coli (n = 36) isolated from retail meat to expand the official AMR monitoring reported by EFSA. The ESBL mechanism was predominant (via blaCTX-M-1 and blaSHV-12), with the A

Prevalence and Antibiotic Resistance Phenotypes of Pseudomonas spp. in Fresh Fish Fillets.

In fresh fish products, excessive loads of Pseudomonas can lead to their rapid spoilage. It is wise for Food Business Operators (FBOs) to consider its presence both in whole and prepared fish products. With the current study, we aimed to quantify Pseudomonas spp. in fresh fillets of Salmo salar, Gadus morhua and Pleuronectes platessa. For all three fish species, we detected loads of presumptive Pseudomonas no lower than 104-105 cfu/g in more than 50% of the samples. We isolated 55 strains of presumptive Pseudomonas and carried out their biochemical identification; 67.27% of the isolates were a

A broad-spectrum phage controls multidrug-resistant Salmonella in liquid eggs.

Salmonella is a foodborne pathogen constantly threating public health. The widespread use of antibiotics and globalization of the food industry result in rapid growth of drug-resistance. Eggs contaminated by multidrug-resistant (MDR) Salmonella are one of the riskiest factors of salmonellosis, which are frequently associated with outbreaks worldwide. Thus, there are increasing needs for the development of new technologies in controlling MDR pathogens and for the confirmation of their practical efficiency in target food matrices. In this study, 43 Salmonella phages were isolated from environmen
