Soybean oil-based pre-emulsions stabilized by myofibrillar protein (MP), Arabic gum (AG), or gallic acid-grafted Arabic gum (GA-AG) were used to partially (50%) or fully (100%) replace pork back fat in Western-style emulsified sausages. METHODS: This is a prospective study. One hundred consecutive ALS patients were included from the Neuromuscular Unit, Ain Shams University Hospital, in the period from February 2022 to June 2024. Functional and cognitive assessments were done using the Arabic version of ALSFRS-R and ECAS-EG questionnaires, respectively. Disease stage was identified via Kings Clinical Staging.
