Higher line speed in young chicken slaughter establishments does not predict increased Salmonella contamination risks.

Do faster slaughter line speeds for young chickens increase risk of Salmonella contamination? We analyze data collected in 2018-2019 from 97 slaughter establishments processing young chickens to examine the extent to which differences in slaughter line speeds across establishments operating under the same inspection system explain observed differences in their microbial quality, specifically frequencies of positive Salmonella samples. A variety of off-the-shelf statistical and machine learning techniques applied to the data to identify and visualize correlations and potential causal relationsh

Source attribution at the food sub-product level for the development of the Canadian Food Inspection Agency risk assessment model.

Decreasing the health burden caused by foodborne pathogens is challenging and it depends on the identification of the most significant hazards and food sources causing illnesses, so adequate mitigation strategies can be implemented. In this regard, the Canadian Food Inspection Agency (CFIA) has developed the Establishment-based Risk Assessment (ERA) model, so that a more effective and efficient allocation of resources can be assigned to the highest food safety risk areas. To assess risk, the model considers the type of food sub-products being manufactured by establishments and its scope is lim

Detection of Listeria in crawfish processing plants and in raw, whole crawfish and processed crawfish (Procambarus spp.).

The foodborne pathogen Listeria monocytogenes represents a major concern to the food industry and particularly to producers of ready-to-eat (RTE) foods because of the severity of human listeriosis infections and because of the ubiquitous nature of this organism. Although several studies on the prevalence and sources of L monocytogenes in various RTE seafoods have been conducted, limited information is available on the presence and potential sources of this organism in RTE crawfish products. We thus monitored the presence of L monocytogenes and other Listeria spp. in the processing environment,

Cobalt-Doped CeO2 Nanozyme with Peroxidase-Like Activity for Broad-Spectrum and Recyclable Degradation of Aflatoxins.

Aflatoxins (AFs) contamination in the food chain poses a serious health threat, and current degradation strategies are limited by insufficient efficiency and stability. We developed a series of cobalt-doped CeO2 (Co@CeO2) nanozymes via a one-step hydrothermal method. The optimized nanozyme (Co-to-CeO2 mass ratio of 2:1) exhibited remarkable peroxidase-like activity, enabling efficient broad-spectrum degradation of aflatoxin B1, G1, and M1 under mild conditions, with removal efficiencies exceeding 90% in aqueous solution and approximately 80% in spiked edible oil samples. Density functional the

Global systematic review and probabilistic risk assessment of ochratoxin A in dried fruits.

This study reviewed (search: 1995-2025) the levels of ochratoxin A (OTA) and the associated health risks in dried fruits worldwide. Data from 30 studies included (1999-2024) 4109 samples, of which 63.39% were contaminated, and the mean OTA ‎ concentration was estimated at 3.12 µg/kg. The level of contamination differed significantly among different types of fruits and across various countries. Apples had the highest mean concentration (9.61 µg/kg), while dates showed the lowest mean concentration (0.58 µg/kg). Geographically, concentrations ranged from 0.45 µg/kg (Czech Republic) to 47.51 µg/k

Application of Ambient Ionization Mass Spectrometry for the Screening of Pesticide Contaminants on Cannabis Plant Materials.

As ambient ionization mass spectrometry is increasingly used for screening due to its ability to rapidly detect trace-level contaminants, this study developed a direct analysis in the real-time-mass spectrometry (DART-MS) method to investigate pesticides commonly used in Cannabis cultivation. While 108/113 pesticides were detected by the DART-MS method, evaluation of instrumental parameters revealed that the positive-ionization mode and a gas temperature of 350 °C were most effective for detecting pesticides. Experiments investigating major pesticide fragments and determining the lowest concen

A new application of pH-dependent/charge transfer-sensitive spectrophotometer: Enhanced selective extraction of trace acrylamide in the selected foods by triplet quenching of Phenosafranine in presence of Sn(IV).

In this study, a new method, based on pH-dependent charge transfer (CT), was developed for the selective extraction of acrylamide (AAm) from the sample matrix prior to its analysis. The method is based on CT-sensitive ion-pair formation among AAm, Phenosafranine (PSF), and Sn(IV) at pH 5.0, and extraction with polyethylene glycol tert-octylphenyl ether (Triton X-114). The ion-pair was enriched, diluted to 0.4 mL with methanol, and monitored at 640 nm by spectrophotometer. The variables affecting extraction efficiency were evaluated and optimized. Under optimal conditions, a recti-linear relati

Cannabis-derived food products: a global review of THC exposure, safety and forensic frameworks.

Cannabis-derived food products range from nutritionally oriented hempseed foods to edible and drinkable products intentionally formulated with cannabinoids. This review integrates evidence on hemp foods, CBD-containing products, THC edibles, cannabis-infused beverages, and emerging cannabinoids such as Δ8-THC and HHC. Hemp seeds, oils, flours, and proteins provide valuable nutrients, including polyunsaturated fatty acids, proteins, fiber, minerals, and bioactive compounds, but require control of cannabinoid contamination, particularly total Δ9-THC. In contrast, cannabinoid-containing edibles a

Human Health Risks Associated with the Consumption of Wild Foods and Geophagic Material Along the Great Dyke and Surrounding Areas in Zimbabwe.

Background: Wild foods and geophagic material are important in the nutrition of communities along Zimbabwe's Great Dyke, a serpentinic ultramafic (SUG) and surrounding granitic geological (GG) environment. However, the health risks associated with consumption of these in terms of toxic geogenic contaminants (TGC) is largely unknown. The study objective was to evaluate the health risks associated with consuming wild foods and geophagic materials from these environments. Methods: Health risk assessments were determined using the hazard quotient, hazard index (HI) and life cancer risk (LCR) for 1

The occurrence, concentration, and human health risk assessment of deoxynivalenol in beer: a global systematic review and meta-analysis.

This study examined the concentration and occurrence of deoxynivalenol (DON) in beer and calculated the health risk to consumers using the target hazard quotient (THQ). The analysis considered the country and type of DON subgroups. Searches were performed in databases including Scopus, Web of Science, Embase, and PubMed from 1 January 2000, to 20 February 2024. Our study included 26 papers with 154 data reports. The rank order of DON types based on occurrence was DON (67.38%) > DON-3-Glc (61.45%) > DON-15-Ac (3.43%) > DON-3-Ac (2.58%). Based on concentration, DON (14.658 µg L⁻¹) > DON-3-Glc (1

Assessing Lead Levels in New York-Donated Venison.

Lead (Pb) hunting ammunition is known to fragment in target animals and result in Pb particles with small surface areas, which increase bioavailability and make detection more difficult. Dietary exposure to Pb presents significant human health risks to vulnerable groups, especially children and pregnant women. Each year, 34 tons of venison are donated to New York State food banks and pantries without oversight of the potential for Pb contamination. A project was launched in 2022 to sample donated venison and to determine if and at what concentration this meat might be contaminated with Pb. Tes

Design & development of adulteration detection system by fumigation method & machine learning techniques.

A novel method for discovery of adulteration in edible oil is proposed based on concept of refractive index and electronic sensors. The research work focusses on two distinct methodologies like employing datasets and implementing a fumigation technique that integrates real-time hardware for testing Edible oil Impurities. In the first method, the dataset taken into consideration contains spectral data collected using Advanced ATR-MIR Spectroscopy for pure oil and various levels of adulteration with Vegetable oil. Each and every edible oil has a certain value of refractive index. When such oils

Analysis of Salmonella enterica Adhesion to Leaves of Corn Salad or Lettuce.

Human infections by gastrointestinal bacterial pathogens are commonly associated with the consumption of contaminated food of animal origin (e.g., chicken, fish, eggs) or contaminated water. However, further contamination sources must be considered since number of Salmonella enterica infections associated with the consumption of food of non-animal origin (e.g., vegetables, fruits, nuts) are increasing. This gives raise to interest in understanding the interaction of S. enterica with leafy produce, such as various salads. Especially adhesion as initial step of contamination of salad by S. enter

Determination of copper and arsenic in refined beet sugar by stripping voltammetry without sample pretreatment.

Copper and arsenic have been analysed in refined beet sugar at the microgram kg-1 level by anodic stripping voltammetry (copper) and cathodic stripping voltammetry (arsenic) in the differential-pulse mode (DPASV and DPCSV) at a hanging mercury drop electrode (HMDE). DPCSV measurements of arsenic are based on its accumulation onto the HMDE as an intermetallic Cu-As compound followed by the reduction of As0 to arsine in hydrochloric acid medium. Measurements were directly carried out on untreated sugar solutions. The performance of the procedures was compared with electrothermal atomic absorptio

Dietary exposure of children in lead-laden environments.

Children are the most susceptible population to lead exposure because of three interacting factors; they have more opportunity for contact with lead sources due to their activities, lead absorption occurs more readily in a child compared to an adult, and the child's development is more vulnerable to lead than adults. Low levels of lead in the blood have been shown to cause adverse health effects; the level of concern for children is currently 10 microg/dl. The contribution of dietary exposure of lead to increased blood lead levels (PbB) is not well characterized. This study was conducted to me
