Formation of heterocyclic amines during meat extract processing and cooking.

Standardized biological in vitro systems and in particular those used for cancer prediction are being used to monitor the development of food products in order to ensure the absence of potential mutagens or carcinogens. Maillard reactions occurring during meat extract production was followed in order to reduce the formation of heterocyclic amines. Possibilities to reduce the content of heterocyclic amines during meat extract processing have been proposed. However, several aspects, such as interaction with food-borne mutagen or carcinogen inhibitors, keeping quality, and organoleptic properties

Combining Patulin with Cadmium Induces Enhanced Hepatotoxicity and Nephrotoxicity In Vitro and In Vivo.

Food can be contaminated by various types of contaminants such as mycotoxins and toxic heavy metals. Therefore, it is very likely that simultaneous intake of more than one type of food contaminant by consumers may take place, which provides a strong rationale for investigating the combined toxicities of these food contaminants. Patulin is one of the most common food-borne mycotoxins, whereas cadmium is a representative of toxic heavy metals found in food. The liver and kidneys are the main target organ sites for both patulin and cadmium. We hypothesized that simultaneous exposure to patulin an

[Toxic food infection caused by Shigella flexneri in a military unit].

Food borne disease outbreaks have increased in France, but outbreaks caused by Shigella are rare, accounting for only 73 cases (1.62%) in 1993. We report a food borne outbreak of Shigella flexneri strain 3 infection in a fire fighting unit in Paris between July 13th and 17th 1995. Forty of the 127 firemen suffered symptoms including acute diarrhea (80%), fever (50%) and blood and mucus in stools (1 case, 2.5%). Epidemiological investigation generated an unimodal epidemic curve suggesting a single source of contamination with no secondary cases. The median incubation period was between 43 hours

Consumer practices and prevalence of Campylobacter, Salmonella and norovirus in kitchens from six European countries.

About 40% of foodborne infections are acquired in the home. The aim of the present study was to track contamination of pathogens during domestic food preparation and link the contamination to preparation practices. Research participants from 87 households in six European countries were observed and interviewed during shopping and preparation of a chicken and vegetable meal. The presence of Salmonella spp., Campylobacter spp. and norovirus on raw chicken, kitchen surfaces, cloths and sponges was determined. The prevalence of Campylobacter on raw chicken varied from 8.3% in Norway (NO) to 80% in

An Overview of Listeriosis Outbreak Investigations in the United States Linked to Imported Enoki Mushrooms and Associated Regulatory Activities, Research, and Food Safety Knowledge Gaps.

Foods implicated in listeriosis outbreaks continue to change over time. Historically, listeriosis outbreaks have been primarily linked to consumption of deli meat and dairy products. More recently, they have been linked to vegetable row crops, fruits, and other produce, including imported specialty mushrooms. Specialty mushrooms, including enoki mushrooms, are popular in Japanese, Chinese, and Korean cuisines, and are commonly used in soups, stir-fries, hotpots, and salads. These mushrooms are imported into the U.S. from a variety of East Asian countries and Canada. Recently, food safety autho

Simultaneous migration of bisphenol compounds and trace metals in canned vegetable food.

For the very first time, this study investigates the simultaneous migration of several metals and bisphenol compounds from coated tinplate cans into vegetable foods highly consumed worldwide. The role played by heat treatment, food type and brand, storage conditions, can denting and cooking food directly in cans is also assessed. Migration of bisphenol compounds (only BPA and BADGE·2H2O detected) was mainly affected by sterilization, whereas metal release was greatly influenced by storage. Based on a Principal Component Analysis different migration pattern groups were highlighted: BPA and Zn (

Understanding the Relation between Establishment Food Safety Management and Salmonella Risk Factor Violations Cited during Routine Inspections.

Restaurants are a frequent setting for outbreaks and sporadic cases of Salmonella. The relationship among food safety management characteristics, compliance with procedures to reduce Salmonella-associated risk factors (as found during routine inspections), and the likelihood that an establishment has experienced a sporadic Salmonella case was assessed. Individual risk factor violations associated with Salmonella transmission pathways were identified by a literature review. Data from 546 routine inspection reports collected from July 2016 to June 2017, including 25 from restaurants that had exp

Formation risk of toxic and other unwanted compounds in pressure-assisted thermally processed foods.

Consumers demand, in addition to excellent eating quality, high standards of microbial and chemical safety in shelf-stable foods. This requires improving conventional processing technologies and developing new alternatives such as pressure-assisted thermal processing (PATP). Studies in PATP foods on the kinetics of chemical reactions at temperatures (approximately 100 to 120 °C) inactivating bacterial spores in low-acid foods are severely lacking. This review focuses on a specific chemical safety risk in PATP foods: models predicting if the activation volume value (V(a) ) of a chemical reactio

Food toxicology--from forensic to policy tool: an evolution from reactive to proactive action.

Since the nineteenth century, food toxicology has evolved in several ways. The analytical power of the food toxicologist has been increased. The concept of adulterated food was modified significantly. Most commodities are now processed and addition of numerous non-nutrient additives is legalised. Other "alien" compounds get introduced in the food chain from background contamination or during processing and distribution. This makes the task of the food toxicologist more complex. From forensic science food toxicology developed to a policy aid.

Cheese-associated outbreaks of human illness in the United States, 1973 to 1992: sanitary manufacturing practices protect consumers.

To identify contributing factors for cheese-associated outbreaks, we reviewed all cheese-associated outbreaks of human illness reported to the Centers for Disease Control and Prevention (CDC) with onsets during 1973 to 1992. The infrequency of large, cheese-associated outbreaks was notable because such outbreaks had been a frequent public health problem before the mid-20th century. Of 32 reported cheese-associated outbreaks, 11 attributed to manufacturing errors caused most of the illnesses and hospitalizations and all 58 deaths. Important factors in these 11 outbreaks were manufacturing chees

U.S. Food and Drug Administration survey of methyl mercury in canned tuna.

Methyl mercury was determined by the U.S. Food and Drug Administration (FDA) in 220 samples of canned tuna collected in 1991. Samples were chosen to represent different styles, colors, and packs as available. Emphasis was placed on water-packed tuna, small can size, and the highest-volume brand names. The average methyl mercury (expressed as Hg) found for the 220 samples was 0.17 ppm; the range was < 0.10-0.75 ppm. Statistically, a significantly higher level of methyl mercury was found in solid white and chunk white tuna than was found in chunk light and chunk tuna. Methyl mercury level was no
