Microplastics in food production systems: Sources, exposure pathways, and gastrointestinal health effects.

Microplastics (MPs) and nanoplastics (NPs) have become ubiquitous contaminants in food production systems, raising increasing concerns regarding their potential effects on gastrointestinal and systemic health. This review summarizes current evidence on the occurrence, sources, and biological effects of MPs/NPs within food production chains and their implications for the human gut. Experimental in vitro studies demonstrate that MPs/NPs can induce oxidative stress, inflammation, genotoxicity, metabolic dysregulation, and epithelial barrier dysfunction, while in vivo animal studies show disruptio

Nanoformulation of essential oils, bio-polysaccharides (furcellaran, chitosan) and antimicrobial peptides (RW4, LL37) for application in the food industry - formation, stability and properties.

The food industry is actively seeking innovative approaches to enhance food quality and extend shelf life. To this end, we developed novel micro/nanoemulsion formulations that combine commercial essential oils (oregano, lemongrass, thyme, rosemary) with bio-polysaccharides (cationic chitosan and anionic furcellaran). These ingredients were chosen for their inherent antimicrobial properties, which are crucial for developing new preservation methods. The primary objective was to conduct a comprehensive physicochemical characterization of these novel nanoformulations, which integrate essential oi

Presence of Clostridioides difficile on spinach, carrots, cheese and milk in Turkey.

INTRODUCTION: The presence of Clostridioides difficile in water, soil, fertilizers, and animal feces suggests the potential existence of C. difficile in foods that come into contact with these sources or become contaminated through indirect means. MATERIAL & METHOD: A total of 431 samples, consisting of spinach and carrots and raw milk and cheese obtained from cows, goats, buffalo, and sheep, were examined for the presence of C. difficile. Isolates were identified by real-time PCR, ribotyped, and their toxin profiles were determined. Antibiotic susceptibility to vancomycin, clindamycin, and m

A comparison of different DNA extraction methods and molecular techniques for the detection and identification of foodborne pathogens.

Foodborne infections continue to plague Europe. Food safety monitoring is in crisis as the existing techniques for detecting pathogens do not keep up with the global rising of food production and consumption. Thus, the development of innovative techniques for detecting and identifying pathogenic bacteria has become critical. The aim of the present study was firstly to develop an innovative simple and low cost method of extracting bacterial DNA from contaminated food and water samples with Salmonella enteric(a) subsp. enteric(a) serovar Typhimurium and Listeria monocytogenes and its comparison

Evaluation of a modified method for the detection of Cryptosporidium oocysts on spinach leaves.

Despite the infection risk associated with the consumption of contaminated food, techniques for recovering and detecting Cryptosporidium oocysts from fruit and vegetables are generally inadequate due to the variable recovery efficiencies and high reagent costs, such as those presented by ISO 18744:2016 "Microbiology of the food chain -Detection and enumeration of Cryptosporidium and Giardia in fresh leafy green vegetables and berry fruits". Although an improved method for recovering these parasites from Iceberg lettuce, which reported increased recovery efficiency as well as lower costs, has b

Dietary Sources of Melamine Exposure among US Children and Adults in the National Health and Nutrition Examination Survey 2003-2004.

Melamine is a high-production-volume chemical and a kidney toxicant. Diet is a key source of melamine exposure, yet little is known about which foods in the US diet may be contaminated. This study evaluated the associations of foods and dietary patterns with melamine exposure using data from 478 US adults and children from the National Health and Nutrition Examination Survey 2003-2004. Melamine concentrations were measured in spot urine samples. Dietary recalls were used to collect dietary data from the day preceding urine collection. Melamine was detectable (>0.09 ng/mL) in 76.2% of the parti

Mechanisms of staphylococcal enterotoxin-induced emesis.

Pathogenic bacteria use various strategies to interact with the host organisms. Among them, toxin production constitutes an efficient way to alter specific functions of target cells. Various enterotoxins interact with the enteric nervous system, by stimulating afferent neurons or inducing neurotransmitter release from enterochromaffin cells which result either in vomiting, diarrhea, or in the intestinal inflammation process. Staphylococcus aureus produces a wide variety of toxins including staphylococcal enterotoxins (SEs) with demonstrated emetic activity; and staphylococcal enterotoxin-like

Determination of organophosphorous flame retardants in fish tissues by matrix solid-phase dispersion and gas chromatography.

Organophosphate esters (OPEs), utilized as flame retarding agents and/or plasticizers, are almost ubiquitous in environmental compartments, and biota and foods could be contaminated by bioaccumulation or during the treatment processes. A multiresidue method is proposed for the determination of 13 OPEs in fish tissues: analytes were simultaneously extracted and purified using the matrix solid phase dispersion technique and then determined by gas chromatography with nitrogen-phosphorus detection. The main parameters affecting extraction yield and selectivity, such as the type of dispersant mater

The effects of PCBs and dioxins on child health.

BACKGROUND/EXPOSURE: Dioxins and PCBs are highly persistent and highly toxic environmental pollutants which at present are derived mainly from waste incineration and food contamination. They are widespread in nature and pollute human food, including breast milk so that basically all children in Europe are exposed to measurable levels. RESULTS/TOXICITY IN CHILDREN: The toxicity of dioxins and PCBs are well described both from animal studies and from a number of human epidemiological studies including several large cohort studies. Especially developmental exposure has been shown to affect endocr…

Health effects of fluoride pollution caused by coal burning.

Recently a huge amount of fluoride in coal has been released into indoor environments by the combustion of coal and fluoride pollution seems to be increasing in some rural areas in China. Combustion of coal and coal bricks is the primary source of gaseous and aerosol fluoride and these forms of fluoride can easily enter exposed food products and the human respiratory tract. Major human fluoride exposure was caused by consumption of fluoride contaminated food, such as corn, chilies and potatoes. For each diagnostic syndrome of dental fluorosis, a log-normal distribution was observed on the loga

Antibacterial mechanism and preservation effect of antimicrobial peptide T1 against Listeria monocytogenes in smoked salmon.

Persistent Listeria monocytogenes contamination in foods highlights the need for safe antimicrobial agents. In this study, fermentation products derived from soybean meal inoculated with Lactobacillus paracasei FX-6 were systematically investigated. A bioactive fraction, F3, was isolated and subjected to peptidomic analysis, which identified 220 peptide sequences. Molecular docking prioritized three candidate peptides, among which T1 (GLKPGLHGFHV) exhibited the strongest antibacterial activity. Preliminary mechanistic investigations suggested that T1 caused membrane damage and intracellular co

Case of scombroid syndrome mimicking an anaphylactic fish allergy.

BACKGROUND: Scombroid syndrome, a pseudo-allergic reaction caused by histamine-contaminated fish, is often mistaken for type I hypersensitivity reactions due to overlapping clinical presentations. Unlike IgE-mediated anaphylaxis, Scombroid syndrome results from histamine production by bacterial histidine decarboxylase in improperly preserved fish. It accounts for 5% of U.S. food poisoning cases and manifests within 30 min to two hours post-ingestion. CASE PRESENTATION: Symptoms include rash, pruritus, vomiting, and tongue swelling, as exemplified by a case of a 30-year-old woman misdiagnosed w

Nutrient regulation targeting macrophage-controlled intestinal mucosal healing: A promising strategy against intestinal mucositis induced by deoxynivalenol.

Deoxynivalenol (DON), one of the most severely polluting mycotoxins globally, contaminates agricultural products and food through environmental pathways, compromising intestinal barrier integrity and homeostasis in humans and animals. This disruption triggers intestinal mucositis and exacerbates inflammatory bowel disease (IBD) progression. Current therapies focusing on immunosuppression face limitations due to drug resistance, shifting research toward mucosal healing strategies for sustained remission. Macrophages, essential mediators of intestinal immunity, exhibit metabolic and phenotypic p

An ultrasensitive dual-mode aptasensor for patulin based on the upconversion particles and G-Quadruplex-hemin DNAzyme.

Patulin (PAT) is a mycotoxin-produced secondary metabolite that can contaminate foods, causing toxic effects on animal and human health. Therefore, for the first time, we have constructed a "turn-on" dual-mode aptamer sensor for PAT using oleic acid-coated upconversion nanomaterials (OA-UCNPs) and G-Quadruplex-hemin DNAzyme (G4-DNAzyme) as fluorescent and colorimetry probes. The sensor employs aptamers binding to PAT as recognition elements for specific molecule detection. Mxene-Au can be used as a biological inducer to assist OA-UCNPs in controlling fluorescence intensity. In addition, colori

The gut-to-brain axis for toxin-induced defensive responses.

After ingestion of toxin-contaminated food, the brain initiates a series of defensive responses (e.g., nausea, retching, and vomiting). How the brain detects ingested toxin and coordinates diverse defensive responses remains poorly understood. Here, we developed a mouse-based paradigm to study defensive responses induced by bacterial toxins. Using this paradigm, we identified a set of molecularly defined gut-to-brain and brain circuits that jointly mediate toxin-induced defensive responses. The gut-to-brain circuit consists of a subset of Htr3a+ vagal sensory neurons that transmit toxin-relate

Non-typhoidal human salmonellosis in Rio Grande do Sul, Brazil: A combined source attribution study of microbial subtyping and outbreak data.

Salmonella spp. remains the most significant foodborne pathogen in south Brazil, but its epidemiology tends to change over time. Using official and surrogate data, a microbial subtyping model attributed different Salmonella serovars to laying hens, pigs, broilers, and turkeys from 2005 to 2015 in Rio Grande do Sul (RS). Additional to the subtyping model, three sub-analyses of outbreak data attributed Salmonella spp. in humans to animal and non-animal food. Laying hens/eggs was the most important source of human salmonellosis in RS, with almost 40% (159 cases; 95% credibility interval, 43-247)
