Environmental cues promote microbial biofilm formation and physiological and genetic heterogeneity. In food production facilities, biofilms produced by pathogens are a major source for food contamination; however, the pathogenesis of biofilm-isolated sessile cells is not well understood. We investigated the pathogenesis of sessile Listeria monocytogenes (Lm) using cell culture and mouse models. Lm sessile cells express reduced levels of the lap, inlA, hly, prfA, and sigB and show reduced adhesion, invasion, translocation, and cytotoxicity in the cell culture model than the planktonic cells. Or…

Human hepatitis E virus (HEV) causes acute hepatitis in humans, predominantly by contamination of food and water. HEV, in particular genotype III, is currently considered to be an emerging pathogen in industrialized countries. Because of the low infectious dose, an efficient and rapid virus concentration method is required to detect low amounts of HEV in food and water samples for routine control. Because of the absence of a reliable cell culture method for the main enteric viruses most involved in the outbreaks, reverse transcription quantitative real time PCR (RT-qPCR) is now widely used for

The growing concern surrounding antimicrobial resistance (AMR) in human bacterial infections has prompted increased investigation into the role of the agri-food sector in AMR transmission and control. While contaminated food is a recognized route of transmission for AMR bacteria, the potential for AMR mechanisms to confer cross-protection and enhance bacterial tolerance to food-relevant preservation stressors such as heat, acidification, or antimicrobial compounds remains poorly understood. In this study, nine resistant variants (RVs) of Salmonella enterica subsp. enterica serovar Typhimurium

Molecular typing and virulence markers were used to evaluate the genetic profiles and virulence potential of 106 Yersinia enterocolitica strains. Of these strains, 71 were bio-serotype 4/O : 3, isolated from human and animal clinical material, and 35 were of biotype 1A or 2 and of diverse serotypes, isolated from food in Brazil between 1968 and 2000. Drug resistance was also investigated. All the strains were resistant to three or more drugs. The isolates showed a virulence-related phenotype in the aesculin, pyrazinamidase and salicin tests, except for the food isolates, only two of which were

Persistent organic pollutants (POPs) encompass an array of anthropogenic organic and elemental substances and their degradation and metabolic byproducts that have been found in the tissues of exposed animals, especially POPs categorized as organohalogen contaminants (OHCs). OHCs have been of concern in the circumpolar arctic for decades. For example, as a consequence of bioaccumulation and in some cases biomagnification of legacy (e.g., chlorinated PCBs, DDTs and CHLs) and emerging (e.g., brominated flame retardants (BFRs) and in particular polybrominated diphenyl ethers (PBDEs) and perfluorin

As modern agriculture faces the dual challenges of ensuring global food security and protecting ecological integrity, the limitations of traditional pesticides have become more evident. Persistent issues like soil contamination, water pollution, and toxicity to non-target organisms not only threaten the long-term health of agricultural ecosystems but also compromise human food safety. This makes the development of green pesticides a crucial priority. While conventional pesticides remain essential for pest and disease management, their overuse and improper application have caused serious ecolog

BACKGROUND/OBJECTIVES: Listeria monocytogenes is a major foodborne pathogen responsible for listeriosis, a serious illness with high morbidity and mortality, particularly in vulnerable populations. Its persistence in food processing environments and resistance to conventional preservation methods pose significant food safety challenges. Lactic acid bacteria (LAB) offer a promising natural alternative due to their antimicrobial properties, especially through the production of bacteriocins. This study investigates the competitive interactions between Lactococcus lactis and L. monocytogenes under

Noroviruses are the commonest cause of nonbacterial acute gastroenteritis worldwide. Food and water are considered as the main source of the food-borne infections in humans. Noroviruses outbreaks are frequently associated with semiclosed or closed institutions such as hospitals, homes for the elderly, schools. Transmission of noroviruses is usually person-to-person, although food and environmental or airborne contamination have all been implicated in transmission and are members of the Caliciviridae family. The genomic diversity noroviruses includes 5 genogroups (GI-GV). Diversity among norovi

ABSTRACT: Older adults are at higher risk of invasive listeriosis compared with the general population. Some foods are more likely than others to be contaminated with or to contain high levels of Listeria monocytogenes. The objectives of this study were to (i) determine dietary consumption patterns among older adults in the United States; (ii) evaluate sociodemographic and economic characteristics of older adults associated with each pattern; (iii) determine intake of foods associated with larger relative risk of listeriosis within these patterns; and (iv) rank these patterns based on risk. Antimicrobial resistance to cephalosporins is commonly mediated by extended-spectrum β-lactamases (ESBL) or plasmidic AmpC β-lactamases (pAmpC). In livestock blaCTX-M-1 is the most frequently detected ESBL-encoding gene. As transmission to consumers through contaminated food is often proposed, this study characterized ESBL/pAmpC-producing E. coli collected from food samples. Therefore, samples from food products of animal origin and vegetables were screened for phenotypically resistant E. coli by selective cultivation. The ESBL genotype was confirmed for 404 isolates with the majority of them

Tobramycin (TOB) is an aminoglycoside antibiotic widely used to treat chronic lung infections and other bacterial diseases. However, TOB residues may persist in food products derived from animals treated with antibiotics, posing a risk of promoting antibiotic resistance in consumers. This highlights the urgent need for sensitive and selective methods to detect TOB residues in food. In this study, both an electrochemical sensor based on a conductive molecularly imprinted polymer (MIP) and a voltammetric electronic tongue (VET) system were developed for the detection of TOB. The MIP sensor was f

Staphylococcal food poisoning is the result of consumption of food contaminated with staphylococcal enterotoxins (SEs) produced by Staphylococcus aureus. To date, 23 SEs and SE-like enterotoxins (SEls) have been described in the literature. They are divided into classical SEs (SEA-SEE) and new SE/SEls (SEG-SElX). Some have proved to be foodborne-inducible, but others remain unidentified. In May 2016, at an elderly group home in Osaka city, Japan, an outbreak from foodborne pathogens occurred among lunch party participants. Within 2h 30min to 4h 40min, 15 of 53 participants presented gastrointe
