Soil Cd contamination to wheat raise wide concerns over food safety. It is essential to find the key factors affecting Cd accumulation in wheat and to establish a predictive model. The effects of pH, Zn, Ca, and DOM on the accumulation of Cd in wheat were investigated using hydroponic experiments. The results showed that Zn was the most important factor inhibiting Cd uptake in wheat. Models were developed to predict the Cd contents in wheat tissues based on the ion concentration. Meanwhile, the available Cd contents in soil were predicted using a geochemical multi-surface model (MSM) which is

1. There is huge emphasis in veterinary and agricultural science in understanding the basics of processes and exploiting them for benefits to the economy and human and animal welfare. It is always valuable to be able to step back from existing or favourite hypotheses and paradigms to look at an area of work or problem and see whether a different approach might be productive particularly by drawing parallels with other sometimes unrelated problems. 2. This approach has been used to explore (i) the use of live, attenuated Salmonella vaccines to generate a new form of competitive exclusion, (ii)

Mercury contamination is a growing concern for freshwater food webs in ecosystems without point sources of mercury. Methylmercury (MeHg) is of particular concern, as this is the form of mercury that crosses the blood-brain barrier and is neurotoxic to organisms. Wetlands and benthic sediments have high organic content and low oxygen availability. Anaerobic bacteria drive the metabolic function in these ecosystems and subsequently can methylate mercury. The bioavailability of MeHg is controlled by physicochemical characteristics such as pH, binding affinities, and dissolved organic matter (DOM)

Coronary artery disease (CAD) is an increasingly important medical and public health problem, and is the leading cause of mortality in Bangladesh. Like other South Asians, Bangladeshis are unduly prone to develop CAD, which is often premature in onset, follows a rapidly progressive course and angiographically more severe. The underlying pathophysiology is poorly understood. Genetic predisposition, high prevalence of metabolic syndrome and conventional risk factors play important role. Lifestyle related factors, including poor dietary habits, excess saturated and trans fat, high salt intake, an

Food packaging plays a crucial role in ensuring food safety; however, microbial contamination, particularly from biofilm-forming bacteria, remains a challenge. This study explores the use of sodium alginate-based films and coatings loaded with a bacteriophage cocktail targeting Escherichia coli and Pseudomonas fluorescens to mitigate biofilm formation in food packaging, with a focus on cheese products. The coatings were applied to parchment paper, polystyrene, and films prepared with sodium alginate loaded with bacteriophages, and assessed for their antimicrobial efficacy. Biofilm inhibition a

In low- and middle-income countries (LMICs), enteric infections pose a significant threat to children's health. However, understanding the specifics of when, where, and how young children in LMICs are exposed to enteric pathogens and the roles of animal reservoirs, environmental media, and human hosts play during exposure remains limited. This study systematically evaluates infants' exposure to E. coli through various pathways in the rural Haramaya woreda of Ethiopia. Between June 2021 and June 2022, we conducted over 1300 hours of structured behavioral observations on 79 infants when aged 4-8

BACKGROUND: Gastrointestinal diseases caused by Salmonella, Shigella, and intestinal parasites remain major public health problems in developing countries such as in East Africa. Food handlers with poor hygiene practices contribute significantly to the spread. This study aimed to determine the magnitude of Salmonella, Shigella, and intestinal parasites, identify associated factors, and determine the antibiotic susceptibility profiles of bacterial isolates among food handlers in Bahir Dar University students' cafeterias, Northwest Ethiopia.
METHODS: A facility-based cross-sectional study was c

BACKGROUND: Diarrhoeal disease remains a significant cause of morbidity and mortality among the under-fives in many low- and middle-income countries. Changes to food safety practices and feeding methods around the weaning period, alongside improved nutrition, may significantly reduce the risk of disease and improve development for infants. We describe a protocol for a cluster randomised trial to evaluate the effectiveness of a multi-faceted community-based educational intervention that aims to improve food safety and hygiene behaviours and enhance child nutrition.
METHODS: We describe a mixed

On 4th December 2020, a sudden outbreak, with neurological symptoms like seizures, loss of consciousness etc., was reported in a town from south India. By 3rd day about 400 people were involved. A multi disciplinary team from our institute visited the site to investigate the outbreak. Based on the case history and clinical examination of the patients, the team suspected a probable diagnosis of an acute pesticide, heavy metal and/or mycotoxin exposure for which, biological samples (blood, urine) were collected from those who reported the symptoms as well as from a few who did not report symptom

Ultra-processed food (UPF) exposure has increased markedly worldwide and is now a major contributor to total energy intake in many countries. Evidence from large prospective cohort studies suggests that higher UPF exposure is associated with adverse health outcomes, including overweight and obesity, type 2 diabetes, cardiovascular disease, selected cancers, depression, and increased all-cause mortality. Short-term experimental studies further indicate that diets rich in UPFs can promote excess energy intake and weight gain, supporting biological plausibility. Several mechanisms have been propo

Basic leucine zipper (BZIP) proteins constitute one of the largest and most diverse families of transcription factors and play a crucial role in OTA biosynthesis by regulating the expression of genes within the biosynthetic gene cluster. As a key regulatory protein, BZIP holds promise as an early biomarker for identifying OTA-producing fungi before toxin accumulation occurs, thereby helping to prevent contaminated products from entering the food supply chain. Despite its potential significance, there have been no comprehensive reports describing the development of BZIP-specific antibodies. Her

The human exposome, including dietary exposures such as pesticides, additives, and environmental contaminants, plays a critical role in shaping the gut microbiota (GM) and long-term health outcomes. While the Mediterranean Diet is known for its health-promoting effects, the role of food quality, specifically organic vs. conventional products, in modulating GM within this dietary pattern remains underexplored. The aim of this study was to evaluate (1) whether an Italian Mediterranean Organic Diet (IMOD) confers additional benefits compared to an Italian Mediterranean non-Organic Diet (IMnOD), a

High hydrostatic pressure processing (HPP) is an effective non-thermal treatment to remove pathogens from a variety of food and food products. It has been extensively examined using prokaryotic organisms but has had limited study on eukaryotic organisms. Treatment using HPP has been shown to be effective in inactivating nematode larvae in food and Ascaris suum eggs. Nothing is known on the efficacy of HPP on tapeworm cysts or eggs. Eggs of important zoonotic tapeworms including Echinococcus and Taenia spp. can potentially contaminate water and food intended for human consumption. The present s
