A PfAgo-assisted artificial nucleic acid circuit for extraction-free and ultrasensitive detection of Staphylococcus aureus in dairy products.

Staphylococcus aureus is a major foodborne pathogen associated with dairy products; however, rapid and reliable detection remains challenging due to complex food matrices. Herein, we developed a one-step isothermal biosensing strategy based on an artificial nucleic acid circuit-assisted Argonaute system (PfAgo-ANCA) for rapid and sensitive detection of S. aureus. By targeting the species-specific nuc gene, the platform utilizes the high-temperature endonuclease activity of Pyrococcus furiosus Argonaute (PfAgo). The strategy integrates programmable PfAgo-mediated target recognition with downstr

Resistance to disinfection emerges in Salmonella Typhimurium following cyclic exposure to 3-(diethylamino)propylamine.

Cleaning and disinfection (C&D) of food-contact surfaces is an essential measure to prevent microbial contamination during food processing. These procedures commonly involve the use of biocides to reduce or eliminate foodborne pathogens such as Salmonella spp. Among the available biocides, amines such as 3-(diethylamino)propylamine (DEAPA) have gained attention for their broad-spectrum activity and high efficacy in the presence of organic matter. However, it remains unclear whether these biocides can exert selective pressure and promote resistance development, potentially affecting the effecti

Self-Reported Sanitation, Moisture Management, and Microbial Testing Practices Among Low-Moisture Food Safety Survey Respondents.

In low-moisture food (LMF) processing environments, sanitation and uncontrolled water events can introduce moisture that supports pathogen growth. However, commercial practices for sanitation, lot segregation, moisture management, and microbial monitoring remain poorly characterized. This study surveyed food safety and quality professionals with LMF production experience to describe these practices. A 56-question online survey distributed from October 2025 to January 2026 yielded 40 eligible responses. Sanitation break definitions varied, with 47% of respondents defining breaks by sanitation m

A Call for Dietary Sugar Restriction Policy in India in Light of Oral Health Concerns.

Rising sugar consumption in India, particularly from sugar-sweetened beverages (SSBs) and ultra-processed foods, has intensified the burden of oral and systemic diseases. Excessive intake of free sugars is strongly linked with dental caries, obesity, type 2 diabetes, and cardiovascular disease, contributing to escalating health and economic costs. Despite global guidelines advocating for reduced free sugar intake, India lacks a comprehensive national strategy to address this shared risk factor for oral and non-communicable diseases (NCDs). This article integrates international evidence and Ind

From biowastes to risks? Impact of biosolids treatment and dose on antibiotic resistance in agricultural soils - A mesocosm study.

Biosolids application to farmlands enhances soil fertility and promotes sustainable agriculture; yet it is vital to co-evaluate the interconnected risk of spreading antibiotic resistance throughout the agri-food sector. The impacts of sewage sludge treatments (dewatered, air-dried, limed, and thermally dried) and application rates (1-3%) on the abundance of antibiotic-resistant bacteria (ARB) and antibiotic resistance indices (ARI) in biosolids and biosolid-amended agricultural soils were tested. Thermal drying markedly reduced total heterotrophic and antibiotic-resistant bacterial abundance b

From social media exposure to disordered eating: mechanisms, risks and protective factors in children and adolescents.

Social media (SM) has emerged as an important environmental context associated with children's and adolescents' eating behaviors, body image and psychological well-being, fueled by the proliferation of visual and appearance-focused content. Trends such as "thinspiration" and "fitspiration" have been widely linked to the internalization of unrealistic body ideals and higher levels of body dissatisfaction, particularly among adolescent girls. Concurrently, exposure to digital marketing of high-fat, sugar and salt (HFSS) foods has been associated with less healthy nutritional preferences and diet

Chronic hyperprolactinemia is associated with enhanced high-fat diet binge eating in female mice.

Prolactin is fundamental for pregnancy and lactation, and also has numerous metabolic roles including the stimulation of appetite. Mice with chronic hyperprolactinemia display increased food intake, enhanced expression of orexigenic genes in hypothalamic brain centers, and also develop obesity. Here, we tested whether the consumption of a rewarding high-fat diet (HFD) is altered in a mouse model of chronic hyperprolactinemia: LacDrd2KO mice, which lack dopamine Drd2 receptors in lactotrophs, preventing dopamine inhibition of prolactin secretion. We exposed control and LacDrd2KO mice to a binge

Addressing bacteria with tannins chemistry: an innovative food inspired organic lauryl gallate-based coating to increase probiotics resistance.

Functional foods and various applications based on beneficial effect provided by probiotics have gained increasing attention due to the well-established link with human health. Probiotics are pivotally involved in regulating the intestinal microbiota, influencing various physiological processes that impact the overall well-being of hosts. However, ensuring probiotics survival and, after delivery, keeping a residual biological activity remains one of the most major challenges. To address this issue, various encapsulation strategies have been developed to protect probiotics. In this study, we in

Vegetable-inspired biomimetic surfaces for preventing Escherichia coli binding in the food industry.

Pathogen contamination of food contact surfaces poses serious public health and economic risks. Bacterial binding to these surfaces enhances microbial resistance to cleaning and disinfection, thus requiring novel antifouling strategies. This study explored a biomimetic approach to surface engineering by replicating the microtopographies of four plant leaves - Tenderheart (TH), Cauliflower (CF), White Cabbage (WC) and Leek (L) - onto wax and silicone substrates, aiming to reduce Escherichia coli binding. The biomimetic surfaces were fabricated using a moulding technique and characterized for to

INTRODUCTION: Staphylococcus aureus is a major opportunistic pathogen associated with dairy production systems, where it contributes to intramammary infections and may enter the food chain through contaminated milk. The increasing prevalence of antimicrobial-resistant strains underscores the need for alternative biocontrol strategies. Here, we report the isolation and comprehensive characterization of a novel lytic bacteriophage, vB_SauP-INT105, obtained from wastewater in Extremadura, Spain. METHODS AND RESULTS: Plaque morphology revealed a distinctive three-zone halo pattern suggestive of p

Pyrrole-modified gold nanoparticle structure for dual UV-vis and smartphone-based colorimetric detection of hexavalent chromium in food and environmental samples.

As a potent, human-carcinogenic toxin, hexavalent chromium, Cr(vi), causes aggressive cancers and severe organ failure. It poses a major environmental threat due to its mobility in water and easy cellular penetration. Therefore, sensitive detection methods are essential for monitoring and managing Cr(vi) levels in food, soil, water, and cosmetics. Herein, a gold nanoparticles-pyrrole (AuNPs@pyrrole) based novel colorimetric sensing platform is developed for the rapid quantification of Cr(vi). The mechanism of the developed sensor is driven by the bridging effect of Cr(vi) ions. By binding to t

Enhanced thermophilic anaerobic co-digestion of food waste with bioplastics by applied electrical voltage input.

The increasing adoption of bioplastics (BP), particularly polylactic acid (PLA), in food packaging has led to a growing presence of BP in food waste (FW), raising new challenges for anaerobic digestion (AD) systems. However, BPs exhibit low biodegradability, and since they are co-collected with FW, pretreatment is often impractical. In addition, their inclusion adds an unavoidable increase in organic loading rate (OLR) in AD. To address these challenges, promoting direct interspecies electron transfer (DIET) could offer a promising solution by maintaining process stability under high OLR and e

Nicotinamide Ameliorates Deoxynivalenol-Induced Injury in Renal Cells via Inhibiting PARP1 Hyperactivation and Restoring NAD+ Homeostasis.

Deoxynivalenol (DON) is a globally prevalent mycotoxin that threatens food and feed safety via severe multi-organ toxicity. Previous studies indicate that DON induces cellular energy metabolism dysregulation by triggering oxidative stress and impairing mitochondrial function. During this process, nicotinamide adenine dinucleotide (NAD+), a central coenzyme in cellular energy metabolism, frequently exhibits significantly decreased intracellular levels or even complete depletion. However, the molecular mechanisms underlying the disruption of NAD+ homeostasis by DON exposure, as well as the devel

Gut-targeted curcumin delivery with controlled release via sustainable emulsions co-stabilized by yeast protein isolate and citrus peel pectin.

Microbial and plant-derived biopolymers have gained increasing attention as sustainable emulsifiers for food-grade delivery systems; however, individual materials often suffer from intrinsic limitations in stability or functionality. This study aimed to develop a gut-targeted emulsion system using yeast protein isolate (YPI), a fermentation-derived microbial protein, and citrus peel pectin (CPP), a fruit-processing byproduct, as complementary co-emulsifiers for curcumin delivery. Oil-in-water emulsions with varying YPI:CPP ratios were prepared and evaluated for their physicochemical stability
