Erythritol is a natural sugar alcohol found in some fruits and fermented foods, which is used as a dietary sweetener because it has few calories. Here, we describe a 36-year-old woman who experienced anaphylaxis upon ingestion of an erythritol-containing drink. She presented to the emergency department with dyspnea and angioedema after drinking a peach-containing diet beverage. Her blood pressure dropped to 70/40 mmHg and the symptoms improved after administration of an antihistamine, glucocorticoid, and epinephrine. After 10 days, she drank another peach-containing diet beverage and experienc…

We surveyed 910 athletes to assess behaviours towards self-selected food/ingredient avoidance to minimize gastrointestinal distress. Fifty-five percent eliminated at least 1 high fermentable oligosaccharides, disaccharides, monosaccharides, and polyols (FODMAP) food/category, with up to 82.6% reporting symptom improvement. In athletes indicating that high FODMAP foods trigger gastrointestinal symptoms, lactose (86.5%) was most frequently eliminated, followed by galactooligosaccharides (23.9%), fructose (23.0%), fructans (6.2%), and polyols (5.4%). Athletes avoid predominantly lactose and to a

Ruminant animals have evolved a large and complex set of stomachs which allow fermentation of fibrous food by symbiotic micro-organisms. These stomachs are well innervated and generate signals which are thought to be important in the control of voluntary food intake. Tension receptors in the muscular wall of the rumen and reticulum are slowly adapting and provide a measure of distension while epithelial receptors are rapidly adapting and provide information on the fibrousness of the digesta; they are involved in the control of stomach motility and voluntary food intake in order to prevent exce

BACKGROUND: Functional dyspepsia (FD) is a debilitating functional gastrointestinal disorder characterised by early satiety, post-prandial fullness or epigastric pain related to meals, which affects up to 20% of western populations. A high dietary fat intake has been linked to FD and duodenal eosinophilia has been noted in FD. We hypothesised that an allergen such as wheat is a risk factor for FD and that withdrawal will improve symptoms of FD. We aimed to investigate the relationship between food and functional dyspepsia.
METHODS: Sixteen out of 6451 studies identified in a database search o

The bioaccessibility of minerals during food digestion is essential in facilitating absorption and hence mineral bioavailability. Bioprocessing approaches have shown promising effects on Fe and Zn bioaccessibility in plant food matrices. In this study, lactic acid bacteria fermentation or enzymatic hydrolysis was performed on pea protein concentrates (PPCs) to investigate their effects on the bioaccessibility of fortified Fe and Zn salts. Simulated digestion studies revealed that enzymatic hydrolysis was more effective than fermentation. Phytase treatment significantly (P < 0.05) improved Fe3+

Vegetable milks are fast gaining attention on the global scale as the possible alternatives due to concerns associated with milk consumption. In particular, issues varying from allergenic constituents and lactose intolerance to social and religious beliefs among consumers have induced an increase in the market demand for vegetable milks. Their concomitant nutritional and bioactive components appraise them of the suitable profile for the food-based carriage and delivery of probiotics. More so, the presence of prebiotics in their natural configuration makes them serviceable for the assurance of

The human diet plays a pivotal role in health, yet many studies seeking to identify health-promoting foods rely on experimental designs that poorly reflect natural circumstances. The effects of dietary fibres on the microbiota are typically examined using pooled faecal material and isolated fibres, creating unrealistic environments. Additionally, little progress has been made in distinctly characterising the fermentation rates of dietary fibres. To evaluate the temporal dynamics of gut microbial composition and metabolite production, as well as to characterise the fermentation rates of dietary

Owing to their high nutritional value, functional proteins, and low environmental impact, legume proteins have emerged as sustainable alternatives to animal proteins. However, their broader utilization is constrained by antinutritional factors (ANFs), which can adversely affect protein digestibility, mineral bioavailability, and techno-functional features. Fermentation has appeared as a promising approach to overcoming these limitations. Through microbial and enzymatic activities, fermentation can reduce ANFs, modify protein structures, and promote proteolysis, generating peptides and free ami

Fermentation has shown to be an effective technique in bioactive peptides release. That is why in this study antihypertensive, antithrombotic, and antioxidant activity was evaluated during amaranth proteins fermentation with Lactobacillus casei Shirota and Streptococcus thermophilus 54102 in mono and combined culture. During fermentation an increase of free amine groups was observed, and no statistical differences among monocultures were shown, getting higher concentration in combined culture. This was related to antihypertensive and antioxidant activities, where the highest values were also f

Titanium-based coagulation enables efficient wastewater purification and sludge recovery, yet the fate of antibiotic resistance genes (ARGs) and metal resistance genes (MRGs) during downstream sludge valorization remains insufficiently understood. Here, we investigated how food waste-derived substrates affected fermentation performance and ARGs/MRGs profiles during 7-day acidogenic co-fermentation of Ti-flocculated sludge. Substrate composition resulted in distinct fermentation characteristics and resistome responses. Compared with refractory fiber-rich substrates, readily hydrolysable starch

Galago moholi is a small nocturnal primate, which has a specialised diet of Acacia exudate and insects. Both exudate and insect exoskeletons contain beta-linked polysaccharides that can be used as an energy source by mammals via microbial fermentation. The morphology of the gastro-intestinal tract of G. moholi suggests that the complex, elongate caecum, proximal colon and ansa coli are most likely to be the fermentation compartment. The results of a digesta marker study showed that there was selective retention of the fluid phase of the digesta, a pattern commonly seen in small caecum-fermenti

Idesia polycarpa Maxim cake meal (IPMM) is an abundant oil processing by-product that is frequently discarded. In this study, five polysaccharide fractions (IPMPs) were obtained using ultrasound assisted three phase partitioning (UTPP), alkali, citric acid, chelating agent, and enzymatic extraction, and were systematically compared in terms of physicochemical characteristics, rheological behavior, and in vitro fermentation properties. The extraction method markedly affected the composition and functionality of IPMPs. Several conventionally extracted fractions showed glucose-dominant neutral po

BACKGROUND: Soybean isoflavones mainly exist as isoflavone glycosides with poor bioaccessibility, which limits their functional application. Bioprocessing is commonly used as an effective strategy to enhance the nutritional quality of plant-based foods. However, previous studies have largely focused on the physicochemical changes of isoflavones during fermentation, while the modulatory effects of isoflavones on gut microbiota remain insufficiently explored. To address this research gap, the present work further investigated the influence of isoflavones by solid-state fermentation (SSF) with Rh

Listeria monocytogenes may persist in food production environments and cause listeriosis. In Norway, a product of concern is the traditional and popular fermented fish product "rakfisk", which is made from freshwater salmonid fish by mild-salting and brine maturation at low temperatures for several months. It is eaten without any heat treatment, and L. monocytogenes, therefore, poses a potential hazard. We investigated the effect of salt and temperature on the growth of L. monocytogenes in rakfisk during the 91 days of maturation. The amounts of organic acids produced during fermentation were

Based on the huge blank of thickened fluid staple food for people with dysphagia, multiple in vitro simulations were utilized to develop the thickened fermented rice milk. Here, the effect of amylase content, hydrolysis time and thickener content were considered. The rheological study and Cambridge throat evaluation revealed that hydrolysis could significantly reduce the viscosity and yield stress of fermented rice milk, accompanied by the decreased swallowing residue. The addition of thickeners increased the viscosity and cohesion of the fermented rice milk due to the entanglement network for

Jerusalem artichoke juice is valued for its nutritional content and health benefits. Spontaneous fermentation enhances its flavor, quality, and functional components through microbial metabolic activities. This study used high-throughput sequencing to analyze microbial community changes, and LC-MS and GC-MS to detect secondary metabolites and flavor compounds during fermentation. During natural fermentation, beneficial bacteria like Lactobacillus and Pediococcus increased, promoting lactic acid production and inhibiting harmful bacteria, while environmental bacteria decreased. Similarly, fungi
