[Monitoring nutrition and the quality of the food products in the social-hygiene monitoring system in the Russian Federation].

The results of monitoring of population dietary intake and quality of foods in Russia in last years are discussed. Main problems in dietary intake of population are high animal fat intake and slightly low level of high quality protein intake. Deficits of some vitamins, minerals and dietary fiber intake are also first priority problems in nutrition of population. Monitoring of food safety testify about high frequency of microbial contamination of food and raw food materials especially milk and diary food. These data are used at development of state politics in improving of dietary intake of pop

Beef and dressed chickens as sources of enterotoxigenic Staphylococcus aureus in Nairobi.

Staphylococcus aureus (S. aureus) isolates from beef carcasses, minced beef, and dressed chicken were assayed for production of enterotoxin A, B, C and D using reverse passive agglutination technique. The highest isolation rate was from chickens followed by minced beef. Chickens yielded the highest percentage of enterotoxigenic strains. Staphylococcal enterotoxin C (SEC) was the most frequently produced type from all the three sources while enterotoxin A ranked second and enterotoxin B third. These data show that chickens and minced beef are potential sources of food poisoning staphylococci in

Advances in Sensing Techniques and Deep Learning for Food Quality Detection: Opportunities, Challenges, and Perspectives from Image Recognition to Multimodal Data Fusion.

Food quality and safety inspection increasingly requires advanced solutions because conventional methods are challenged by the complexity of modern food systems. Effective inspection must address product quality, authenticity, and safety, together with process-related risks arising during production, storage, transportation, and distribution. However, existing analytical approaches and deep learning studies often focus on individual food attributes or sensing modalities, providing limited guidance for selecting appropriate models and sensing strategies for specific inspection objectives. This

Evaluating remote post-mortem inspection in bovines: Challenges, limitations, and future potential in assessing post-mortem outcomes in cattle offal.

In the European Union, effective meat inspection is crucial for safeguarding public health and animal welfare, particularly through post-mortem inspections, which act as the final barrier against zoonotic and animal diseases. This study explores the feasibility of using remote video transmission as a modern solution to enhance oversight in meat inspections. Furthermore, it aims to collect and analyze data from routine post-mortem veterinary inspections of bovine viscera, as there is still limited knowledge in this area. A comparative study involving the routine post-mortem inspection of bovine

[Endocarditis and meat inspection in slaughtering pigs. 1. Clinical, pathological and microbiological aspects].

The clinical, pathomorphological and microbiological findings during meat inspection in 599 pigs with endocarditis at slaughter were studied. Clinical signs were observed in 41 per cent of the pigs on ante-mortem inspection. Lameness was the most common sign. However, this symptom is not very specific of endocarditis. This is also true of various other symptoms. Only dyspnoea and drowsiness were indicative of endocarditis to some extent, but occurred only sporadically. Extracardial lesions were observed in 66 per cent of the pigs with endocarditis on post-mortem inspection. Metastatic processe

Incidence of Cysticercus ovis in sheep and lambs at Albany, Western Australia.

A record was made of the prevalence of Cysticercus ovis in sheep and lambs killed at Albany, Waroona and Geraldton from 1970 until 1973. Detailed dissection of 292 carcases which had passed routine inspection revealed C. ovis in 60 (20.5%). A record of all C. ovis cysts found during routine boning of 102,262 carcases which passed normal inspection showed 10.4 cysts per 100 carcases, and in 6,863 carcases rejected for export because of the presence of C. ovis an average of 24.0 cysts per 100 carcases. An attempt was made to relate the incidence of carcases infected with C. ovis in a line of she

Validation studies of the latex agglutination test for the detection of Trichinella larvae in meat products.

Human trichinellosis is a foodborne disease caused by ingestion of meat infected with Trichinella muscle larvae. To control Trichinella spp. infection in the European Union, all slaughtered pigs from holdings that are not officially recognized as applying controlled housing conditions and other animals susceptible to Trichinella infection and intended for human consumption should be examined by one of the approved digestion methods described in Regulation (EU) No. 2015/1375. In the past, Trichinella outbreaks due to the consumption of cured wild boar or pork products have been described in sev

Parasitic lesions of bovine liver attributed to capillaria species.

Among meat inspectors in Hokkaido, Japan, the term "bovine parasitic hepatitis" (BPH) has long been used to refer to a hepatic disorder characterized by multiple small yellowish lesions. However, the aetiology is unknown. By means of detailed histopathological examination, fragments of parasitic worms resembling Capillaria were detected in nine (2.25%) of 400 livers showing BPH lesions. Histologically, the degenerative lesions showed eosinophilic papillary endothelial hyperplasia of the interlobular veins and eosinophilic membranous structures in the eosinophilic granulomatous areas of inflamm

Occurrence and antimicrobial resistance profile of Listeria monocytogenes isolated from chilled processed meat products in the Metropolitan Region of Recife, Brazil.

The presence of Listeria monocytogenes in food represents a major challenge to food safety, especially in ready-to-eat products stored under refrigeration. This risk is associated with the ability of the pathogen to survive and multiply during prolonged refrigerated storage, making these foods potential sources of infection and a relevant public health concern. In this context, the aim of this study was to investigate the presence of Listeria monocytogenes in chilled processed meat products sold in bulk in the Metropolitan Region of Recife, PE, Brazil, as well as to evaluate the antimicrobial

[Experiences of a veterinary meat inspector. II].

A number of unusual or repeat inspections are described. These inspections took place in relation to investigations for the presence of agents that slow bacterial growth (New Netherlands Kidney Test), condemnation of the animal/carcass for more than one reason, investigations to detect the presence of hormones and beta-antagonists, severe abscesses in the spleen, absence of the entire carcass, special emergency slaughter, deep cuts in the kidney, and botulism. Emphasis is placed on the importance of veterinary meat inspectors being closely involved in the rejection or condemnation of animals f

A European survey on post-mortem inspection of finishing pigs: Total condemnation criteria to declare meat unfit for human consumption.

Meat inspection (MI) is essential to verify compliance with legal requirements related to human and animal health and animal welfare protections. Judgement criteria applied during MI, resulting in condemnation data of importance, among other things, for livestock producers and for benchmarking reasons. However, although the Meat Inspection Regulation sets out judgement criteria, most are generic, favouring flexibility, but also subjectivity. To address the degree of variation on total condemnation (TC) criteria applied during post-mortem inspection (PMI) of finishing pigs, an online survey was

The association between meat inspection codes, footpad lesions and thinning of broiler flocks in the Danish broiler production.

The foundation of the condemnation practices in Post-Mortem Inspection (PMI) of poultry should be based on up-to-date scientific evidence about the cause of infection and hence whether the lesions observed are of food safety, animal health or welfare concerns. This study aimed to investigate the association between meat inspection codes, footpad lesions, and thinning of flocks in Danish broiler production. The data set was based on the delivery of chicken flocks to one of the two larger chicken slaughterhouses in Denmark, representing 71 farms, 174 houses, and 4,068 flocks over three years fro
